Xpost - Undermount sink questions

We're building a new master bath. The granite counter will be 8 ft long and have 2 sinks in it. I want to get under mount sinks, however, I'm wondering what happens if a sink gets cracked or chipped? Can the sinks made of china be repaired without having to pull them out? I'm concerned because my DH is not the most careful soul. Within a month of installation, he damaged (chipped) our new granite in the kitchen. Two weeks after the floor was finished, he dropped a hammer and dented the wood, and within 2 weeks of setting up our brand new wood bed, he dropped a big shelving unit on it that left a sizable mark on the foot board. Frustrating to say the least. It's clear that I need to be sure before the install that if he breaks the sink we can get it fixed without damaging the granite. As ugly as it may be, I'm almost thinking a self rimming sink may be a better choice? Any thoughts or suggestions?
