But I have a bunch of yummy stuff!

Since I was the lucky winner of the apple corer/peeler/slicer machine from Tracey, I have been searching and agonizing over what recipe to use for my apple jam/preserves stuff.

Finally I decided "Just DO it, Linda!" and I bought a bunch of Mackintosh and a smaller amount of Cortland apples.

The Cortland are really quite sweet but with a wonderful flavor, while the Macs are tart and crisp and acedic!

So I took the best ( I hoped) of all the apple Jam recipes you all had posted....at least I hoped it was the best....and made my stuff....and I think I done really good!..For a beginner! LOL!

I peeled and sliced 12 cups apples, about 3/4 macs and 1/4 cortland. As I put them into the pan, I drizzled them with lemon juice to keep them from getting too brown.

Then I added 6 cups sugar, one small cinnamon stick ( because that's all I had!) and about a teaspoon of Penzy's Vietnamese cinnamon.

Then I took the peelings and the core ( because of the color and pectin therein) and covered with water and boiled for about 30 minutes, strained the juice and added to the apples.

I cooked the apples and sugar and the stuff from boiling the peels until the sugar melted and the juices ran and added about 2/3 cup maple syrup...it was very sweet and didn't want to make it a lot sweeter.

Cooked it to gel stage ( about 20 to 30 minutes...I was amazed at how fast that happened!) and poured into sterile jars.

It made 11 jars, plus a few spoonsfull for the cook!

If I were to do it again I would skip the maple syrup and use 1/2 brown sugar.....and be sure I had a few more cinnamon sticks.

Now what kind of bread will make the best toast for this jam?
