That recipe has gotten so many good reviews, I've been meaning to try it for years. I keep putting it off for a "special occasion" because of all the butter, but I suppose if Mom's birthday isn't special occasion enough then what is?

Maybe Grandma can help with the bread for dipping...

Rice is a good side if you want more than bread, and a side salad would be perfect. But if you don't care for lettuce salads, here are a couple of "different" salad ideas that may work well.

Tequilaberry's Salad

Dressing:
1 cup Hellmann's Mayonnaise (not Miracle Whip!)
1/4 cup sugar
1/4 cup milk
1 pound bacon-cooked until crisp and crumbled

Salad Base:
2 pounds bagged Dole Salad Mix
1/2 head of cauliflower, cut in small pieces
11/2 cup shredded Parmesan cheese
Mix dressing ingredients until they are the consistency of heavy cream.
If needed, add extra milk or sugar to taste.
Toss together the Salad ingredients and pour the dressing on. Toss until
well coated.

Red Radish Salad

2 teaspoons sugar
1 lemon, juiced
1/2 cup sour cream
8 red radishes, thinly sliced
2 Delicious apples, quartered cored and thinly sliced
1/2 European seedless cucumber, thinly sliced
2 tablespoons chopped fresh dill
Salt and black pepper

Combine sugar, lemon juice, and sour cream in a medium bowl with a fork. Add radishes, apple, and cucumber.
Turn vegetables and fruit in dressing to coat. Season with dill, salt, and pepper, toss again; serve.

Roasted Corn, Black Bean and Mango Salad
Source: Cooking Light

1 tablespoon vegetable oil
2 garlic cloves, minced
3 cups fresh corn kernels (about 6 ears)
2 cups diced peeled ripe mango (about 2 pounds)
1 cup chopped red onion
1 cup chopped red bell pepper
1/3 cup fresh lime juice
3 tablespoons chopped fresh cilantro
1/2 teaspoon salt
1/2 teaspoon ground cumin
1 drained canned chipotle chile in adobo sauce, chopped
2 (15-ounce) cans black beans, rinsed and drained
8 cups gourmet salad greens
Heat oil in a large nonstick skillet over medium-high heat. Add garlic; cook 30 seconds. Stir in corn; cook 8 minutes or until browned, stirring occasionally. Place corn mixture in a large bowl. Add mango and remaining ingredients except greens; stir well. Arrange 1 cup greens on each of 8 plates. Spoon 1 cup corn mixture over greens.

Jicama Salad Recipe
From Simply Recipes blog

1 large jicama (about 1 1/2 pounds), peeled, then julienned or cubed (easiest to work with if you cut the jicama in half first)
1/2 red bell pepper, finely diced
1/2 yellow bell pepper, finely diced
1/2 green bell pepper, finely diced
1/2 cup chopped red onion
1/2 a large cucumber, seeded, chopped
1 navel orange, peel cut away, sliced crosswise, then each round quartered
1/2 cup chopped fresh cilantro
1/3 cup lime juice
Pinch of cayenne
Pinch of paprika
Salt
Optional
1/2 avocado chopped
2 Tbsp olive oil

METHOD

1 Toss together the jicama, bell peppers, red onion, cucumber, orange, and cilantro in a large serving bowl. Pour lime juice over all. Sprinkle with a pinch of cayenne and paprika. Season generously with salt.
2 Let sit a half an hour before serving.
Serves 4.

White Corn Salad

2c frozen shoepeg white corn (I use regular yellow corn)
3/4c chopped roma tomato
1/2 c chopped cucumber
2T chopped green bell pepper
3T white wine vinegar
1-1/2 tsp olive oil
1 tsp Dijon mustard
¼ tsp salt
1/8 tsp ground black pepper
1 clove garlic, minced

Combine vegetables in bowl, toss. Combine remaining ingredients in a jar and shake vigorously. Pour over corn mixture and toss well.
Serves 4

Yeah Grandma I was going to suggest "Shrimp stuffed sole" but then I wondered, "Who is paying for all this??" ;)

Yeah, L, that would be me. My function is to have keys and money, LOL.

And, to throw a wrench into the works, Amanda has just been diagnosed though blood work as being celiac. She did not have the biopsy, but the doc says that with all her digestive issues and the blood work, he's sure. He also told her that celiac and lactose intolerance often go together, which I did not know.

So all the years of "it's diverticulitis", "it's IBS", "you're lactose intolerant" "you have gastric reflux", regular emergency room visits, the string of specialists comes to this. I do have an aunt who is celiac and there is a genetic component. Amanda says she's not surprised, if she can inherit a bad gene or condition, she's got it, LOL.

So, maybe cheesecake for dessert? Maybe polenta to go with the shrimp, I know the Princess has not made that yet.

Careful Annie, corn (especially yellow) can be cross reactive with a gluten sensitivity. I'm sensitive to other grains as well.
Poor Amanda, I feel her pain, especially at the moment. With our huge heat wave I indulged with a frozen yogurt and am now paying the price.
Tell Amanda that grass fed dairy products (more expensive, but available more widely lately) can be less problematic than traditional dairy.
