I've got the nite to myself....hubby is playing with his band in a bar.

WEST INDIES SALAD: love this stuff
1 medium onion, chopped fine
1 lb fresh lump crabmeat
4 ounces vegetable oil
3 ounces cider vinegar
4 ounces ice water (as cold as you can get it)
salt and pepper

Instructions

Follow these instructions to the letter!
Spread half of onion over bottom of large bowl.
Cover with separated crab lumps.
Add the remaining onion.
Salt and pepper.
Pour oil, vinegar and ice water over all.
Cover and marinate 2-12 hours.
Toss lightly before serving.
Serve as a"salad" on a bed of lettuce or on crackers as an appetizer.

Plus beignets to dip in strawberry and warm chocolate sauce

Baked fish, creamed corn, cottage cheese and tomato, iced tea. We had strawberries and some cantaloupe but neither of us wanted any.

Salmon baked in the oven, rice and veggies. Not sure what veggies. My husband is cooking while I sit on my butt and talk to you all........

Bebet, here's the recipe. Only I put the brown sugar/ketchup on top rather than the bottom.

BROWN SUGAR MEATLOAF (Jimmy, my BIL)

1/2 cup packed brown sugar
1/2 cup ketchup
1 1/2 pounds lean ground beef
3/4 cup milk
2 eggs
1 1/2 teaspoons salt
1/2 tsp garlic powder
1 tsp worchestershire
1/4 teaspoon ground black pepper
1 small onion, chopped
1/4 teaspoon ground ginger
3/4 cup finely crushed saltine cracker crumbs

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 5x9 inch loaf pan. Press the brown sugar in the bottom of the prepared loaf pan and spread the ketchup over the sugar.
In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf. Place on top of the ketchup. Bake in preheated oven for 1 hour or until juices are clear.

It makes good sandwiches.

I have salmon in the freezer. How did you cook yours? I love salmon. I have coho, if that makes a difference.
