The Princess helps make wedding salsa

We're still working on those little fancy jars of salsa, so The Princess, Bruvver and her Mom have been helping me.

We turned these:

into this:

The Princess just loves chopping vegetables with the food processor:

Bruvver helped by going outside and finding this on the garage door, LOL, he was very excited!

Yup, that's one big bug, here we call them walking sticks and I don't see many any more. Maybe because they are so well hidden, LOL

The remaining jars will be filled with apple butter, so that's our next project, but at least I have LOTS of help. (grin)

Yes, that bug is 6 inches long. Now you see why Bruvver was so excited, LOL. It's been a hot summer, I guess the bugs are growing as fast as the gardens!

We're working hard, we need 150 jars for wedding favors and it's coming right along. Good thing I have such good help, isn't it?

so...you were a little concerned about getting answers in conflict...so you come to the nexus of consensus...yeah, that's gonna end well. size under conditions...this includes prevailing winds in winter, which also gets to the use of anti desicants. If you are in a situation that would lend itself to a wind tunnel, such use might be beneficial. That should get the agitators going. In general, rate of growth and ultimate size are going to vary depending upon time frame, soil and weather conditions, fertility, care...so any answer is subject to more legal disclaimers than a heart transplant. The Princess is likely to get taller than the Prince, and in such a short space, might look funny. Speed? I doubt they'd ever grow a foot a year, maybe average half that over time, maybe a bit more. Ultimate size no trimming? Perhaps 10-12, perhaps closer to 15. Then again, maybe 8-10. It all depends... Male female ratio...think of it a harem...one male goes a long way...like one to eight to ten to twenty. Spacing...the faster you want them to fill in, the closer you put them. These guys are going to be slightly taller than wide, but you were generally right. They'll grow in all directions, kinda like Uncle Phil at Thanksgiving dinner. I'd be hard pressed to suggest putting them closer than 6', probably closer to 8. But that's me. Feel free to ...need a good word here...one that implies conflict and lack of agreement...should we say dissent? now for the real kicker, and my view is going to be different than some here. 6' plants to start? in blue holly? You can find them? If you have the budget, go for it. Most folks that frequent these forums have a set of priorities that is different, but that's them. If you want size (I assume for privacy) and can afford it, go for it. Everyone has their own priorities and finds the reason to support their view. But that's what makes the nursery business an exciting dynamic place. Some people want large, some people want small and infinite variety. Both can be satisfied. Just think how boring things would be if this were not the case. But really...you can find 6' blue holly? I guess I'd want to know more. 6' is typically a size for arbs, spruce, or American holly. a more typical size for blues is 5g 18" or 7g 24".

AS, there is no "science" behind that particular ingredient, it's simply a matter of trial and error to get the texture my family likes. The juice and goo inside the tomato is much more liquid than the sauce is. I could cook it down for a long time and eventually get a similar texture, but then it tastes more "cooked", if that makes sense. I found that draining the watery portion of the juice and getting rid of some of the "goo" and seeds made the texture better for me. I don't like a lot of seeds in the salsa, so I remove some of them, that makes it more palatable for me, other people might not even notice. I do want the salsa thick enough to stay on a chip, so I add the sauce and I don't have to boil it for hours to make it thicker. Annie

Zabby, The whole cloves (Spice World) peeled garlic that I buy in 3 lb containers aren't packed in anything. The minced garlic (I don't buy anymore) is packed in olive oil. Garlic remains the only thing that I have been unable to ferment by itself. Really convinced me just how good its anti-bacterial qualities are. Salsa...... Subbing chopped parsley leaves for the cilanto really helped for me. Yesterday batch #1 4 cups tomatoes 4 cups peaches 1 1/2 cups sweet onion 1 1/2 cups green bell pepper 1 Biker Billy jalapeÃ±o 2 Bhut Jolokia peppers (very hot) 7 garlic cloves 2 tsp cumin seeds 2 tsp fresh ground black pepper 1/8 cup canning salt 1/8 cup parsley 1/2 cup cider vinegar 1/2 cup lemon juice 15 oz can tomato sauce 12 oz can tomato paste BWB for 15 min = 6 pints Batch #2 8 cups tomatoes 4 cups peaches 2 1/4 cups green bell pepper 2 tbs manzano pepper powder (hot) 10 garlic cloves 3 1/4 cups sweet onions 1 tbs cumin seeds 1 tbs fresh ground black pepper 3/16 cup canning salt 3 tbs parsley 1/2 cup cider vinegar 1 cup lemon juice 15 oz can tomato sauce 12 oz can tomato paste BWB for 15 min = 7 pints and aprox 2 for the fridge to be frozen today. I forgot the tomatillos and will just chop them into the 2 or so pints that I'm going to freeze. Or I might pressure process them. The peach skin didn't seem to hurt a thing. The peaches were a bit hard, but I liked the flavor and they sure diced nicely in my new onion dicer. Which way do you prefer your salsa? BWB or pressure canned? Thanks springschel! :) We prefer to pressure can our salsa. Several reasons. First because we have several pressure canners and usually have one of them going at the time needed so it is convenience and we also prefer the resulting texture, not to mention the added safety aspects wife and I prefer. But it is just a matter of personal taste mostly. Good for you! getting the PC. It opens a whole new world of canning. Next thing you know you'll have more than 1 of them going at the same time just like us. ;) growinidaho - several have posted in the past that they eat so much of it while making it per the recipe that little is left over for canning. ;) We always make sure there is at least 1/2 a jar extra left in the pot for fresh eating. It never makes it to the jar though. You can make it with all frozen ingredients but you might want to drain it a bit more as the thawed veggies will be soupier. Dave

We had originally planned 250 but decided to just make some favors with candy, because the kids aren't going to want canned goods!

LOL, Teresa, Bruvver is my grandson, and is "the Bruvver" of The Princess, also known as The Monkey Princess.

They are the children of my oldest daughter, Amanda, who is also the daughter getting married in October. Their real names are David and Makayla, but they will always be The princess and Bruvver (or Bud) to me.

My beloved WonderWeiner was my dachshund. He was put down due to lymphoma right after I got divorced. My heart was broken over the dog! Shortly after that I met Elery and although I never wanted another dog I now have Ashley's Sheltie, Cooper. He's a good dog and since her current boyfriend is allergic to dogs it looks like Cooper will be with me for quite a while!

Ashley is my youngest daughter, just graduated from college and passed her radiology Boards, so she's looking for a real job, so I can get her off my payroll and onto someone else's.

I'm with Bruvver. I just love walking sticks and praying mantis. I also think the Princess is just precious. Why no picture of Bruvver?

You're braver than I am and proving it by canning all those goodies for wedding favors.

Annie I am loving those canning jars, where did you find them, they are awesome. I made 23 pints of your awesome salsa the last 2 days, and have shared your famous recipe with 3 other canners. I told them that is the best salsa recipe from the bestest canner I know;)

You know the old saying "if you want something done, ask a busy person". Well, you personify that.

The little canning jars are precious. I didn't know you could can in something like that.

I just made 19 pints of your salsa and opened one this morning to go with my eggs. I am still loving it.

The princess is adorable.

Wow Annie. That looks great. Is it the Habenero Gold? And please tell me more about the jars you are using? Are they regular canning jars? Will they keep as long as the others?

I haven't been around much so congratulations from me to you and all your family on the upcoming nuptials. I hope the newlywed couple has many, many years of love and laughter ahead.

Annie, Your Monkey Princess is beautiful. I would like to see a picture of Bruvver. I'm asuming he got that name because his sister couldn't pronounce "Brother" correctly when she was younger?

The jars of salsa look wonderful. So are you giving a gift to every guest? Wow. My son is getting married September 18, when is Amanda's wedding? Lord I didn't offer to make salsa for their wedding favors. You are really something Annie.

Yes congratulations on the up coming wedding!

The Princess is beautiful.

And you are a work horse-my DD is getting married in Oct. 2011 and I would be hard pressed to make that many favors in that amount of time!

When I saw those canning jars in front with the green lids I got very excited!....I have been gifted a case of those jars, but there weren't any instructions with them.

Do you process them just like you would a regular canning jar that has a lid and ring? I still have lots of habaneros and would love to be able to use those jars for jelly and salsa to give for gifts.

Thanks for any advice you can give me.

For all of those who love the jars, I got them at a place in Seattle called Specialty Bottle, Readinglady found them for me and I bought them online. they come with that gold "lug" lid and you can with them just like with regular rings and flats, but they are not reusable. The jars can be reused but you have to buy more of the special lids, the regular canning lids do not fit. that company has a lot of very nice shapes and all different sizes, these are only 4 ounce jars so they are going pretty quickly.

Ilana, that's just salsa, the rest will be apple butter. All adults will get a jar of their choice and the kids get little bags of candy.

Karen, that is exactly how "Bruvver" got his nickname. She used to call him "Bruvver Man", LOL

Annie, I'm always amazed and impressed by what you get done.

I always love the pictures of the kids. Bruvver is so cute with that rolling pin. I can't believe he is old enough for school already.

Annie, Bruvver is cool and cute as can be. I love his shirt!

You are amazing with all that you do. I'm learning so much from all of the CF folks. I only wish I could accomplish more baking and cooking then I do. I think I'm not real organized and sometimes don't have the ingredients on hand that I need. I live too far away from a decent grocery store so I wait until I need more things and then I've lost the interest in a particular recipe. Oh my. Help me CFer's! LOL

Just look at the Monkey Princess! She is having a blast making salsa! So sweet! Bruver is growing like a bad weed. LOL!

Congrats to Amanda and David! I would fly all the way up there if I knew I was getting a jar of that salsa! So be prepared! Everyone that has been invited will surely show up for the wedding!
