I have made these before. Maybe not the healthiest, but they are good. Store in refrigerator. I reheat them in foil.

Breakfast Cookies

1/2 pound bacon
1/2 cup butter
3/4 cup sugar
1 egg
1 cup of flour
1/4 teaspoon baking soda
2 cups of multi-grain flakes or corn flakes
1/2 cup raisins
Preheat oven to 350 degrees. Cook bacon until very crisp, drain well and break into 1/2 inch pieces. Beat together butter and sugar till light and fluffy. Beat in egg. Combine flour and baking soda; stir into butter mixture. Stir in bacon, mult-grain flakes and raisins.

Drop by rounded teaspoonfuls onto ungreased cookie sheet. Space 2 inches apart. Bake for 15-18 minutes. Remove to rack to cool--about 2 minutes, then remove from rack.

Banana Oat Breakfast Cookies
1 large banana, mashed (1/2 cup)
1/2 cup chunky peanut butter
1/2 cup honey
1 t. vanilla
1 cup rolled oats
1/2 cup whole wheat flour
1/4 cup nonfat dry milk
2 t. ground cinnamon
1/4 t. baking soda
1 cup dried raisins or craisins
Preheat oven to 350 degrees. Lightly coat two cookie sheets with cooking spray, set aside.
In a large bowl, stir together banana, peanut butter, honey, and vanilla. In a small bowl, combine oats, flour, milk powder, cinnamon, and baking soda, Stir the oat mixture into the banana mixture until combined. Stir in raisins or craisins.
Using a 1/4 cup measure, drop mounds of dough 3 inches apart on the prepared cookie sheets. With a thin spatula dipped in water, flatten and spread each mound of dough to about 1/2 inch thick.
Bake, one sheet at a time, for 14-16 minutes or until browned. Transfer to wire racks to cool completely.
Freeze if the cookies will not be eaten within three days.
Deanna's notes: I quadrupled it and ended up with 29 huge cookies. They came out about 4-4 1/2 inches across and about 3/4" high! Yum!!! I used a big plastic cup dipped in water to flatten them.

Thanks for taking the time to post -- unfortunately I can't use anything with peanut butter, or any type of nuts due to my son's allergies. Any other suggestions?

Try this recipe and leave out the nuts. Can you add anything else instead?

Ingredients
Makes about 25-30 bars

65g low fat margarine
160ml runny acacia blossom (or similar) honey
50g brown sugar
130g wholemeal flour
200g rolled oats
100g sunflower seeds
160g chopped dried apricots, dates and raisins mixed
50g chopped nuts (walnuts/pecans)
25g sesame seeds
Recipe
In a small saucepan melt the margarine over a low heat. Add the honey and sugar, stir and bring to the boil. Simmer for five minutes then remove from the heat and let it cool slightly.

In a large bowl combine the rolled oats, flour, sunflower seeds, dried fruit, nuts and sesame seeds. Gradually stir in the sugar mixture and firmly press into a greased baking dish about 25cm x 18cm. Bake at 350F/180C/Gas Mk 4 for 25 minutes or until golden.

Leave to cool and cut into bars.

I have been experimenting with baked oatmeal. You can add and subtract whatever you like. It cooks up kind of like a cake.

Baked Oatmeal

Not crockpot, but have you tried baked oatmeal? It is freakin GOOD!! It is not mushy at all, more like a cake texture.

INGREDIENTS:
1/2 cup applesauce (or veggie oil)
3/4 cup sweetner of your choice (sugar, Splenda, whatever)
2 eggs
1 cup milk
1/2 teaspoon salt
1 tablespoon baking powder
3 cups regular oats
1/2 cup raisins
1-2 tablespoons brown sugar (I personally use the brown sugar splenda)
1/2 teaspoon ground cinnamon

DIRECTIONS:
Beat together applesauce and sweetner of choice. Mix in eggs, milk, salt, baking powder, oatmeal. Beat well then stir in raisins. Pour into a lightly grease pie pan. Sprinkle with brown sugar and cinnamon. Refrigerate overnight.
The next morning, preheat oven to 350 degrees F (175 degrees C).
Bake in preheated oven until firm, about 35 minutes. Serve hot.

I made some last night and used 1/2 cup brown sugar and some chocolate chips instead of raisins. I also added in 2 tablespoons each of wheat germ and ground flax. You could also use diced apples and more cinnamon or pumpkin pie spice instead of the raisins.
Maybe your son would like something like this. It makes a big pan and you can eat it cold or warm.

I did not wait overnight. It stays together better as it cools.

1/4 cup butter, softened
1 cup packed brown sugar
1 egg
2 Tbsp. ground flaxseed
2 Tbsp. honey
2 cups old-fashioned oats
1 cup all-purpose flour
1 tsp. ground cinnamon
1/2 tsp. baking soda
1/2 cup raisins

In a large bowl, beat butter and brown sugar until crumbly, about 2 minutes. Add egg; beat well. Stir in flax and honey. In a small bowl, combine the oats, flour, cinnamon and baking soda; stir into creamed mixture just until blended. Gently stir in raisins.

Press into a 11 in. x 7 in. baking dish coated with cooking spray. Bake at 350 for 14-18 mintues or until set and edges are lightly browned. Cool on a wire rack. Cut into bars.
