2 very ripe bananas

Hi all - I have two very ripe bananas. Any ideas what to do with them besides toss them? (And I am so baking impaired that I do not even have a good banana bread recipe). Any help would be greatly appreciated - because I hate to see food go to waste.

Put them in the freezer and worry about it later.

Use them to make a couple of banana daiquiris. My hubby made some recently using the overripe bananas that I have growing in my banana grove. They were very good.

barnmom - What a darn shame! It's like when hubby comes home for lunch after I've had a morning of baking something that ends up in the trash. I tell him all he gets is the smell - which is VERY low-cal, low-fat ;-). -Grainlady Some hints for using a toaster oven for baking... 1. Don't try and use a large 9x5-inch loaf pan in a toaster oven for quick breads. That's just too much bulk for a small oven to handle. Try a recipe that uses a 7-1/2 x 3-1/2 x 2-inch pan, or smaller, works much better. 2. Make sure you preheat the oven, just like you would a large oven. CHERRY-BANANA LOAF (source: Better Homes and Gardens TOASTER OVEN Cook Book) 1/3 c. sugar 3 T. shortening 1 egg 3/4 c. all-purpose flour 1/2 t. baking soda dash salt 1/3 c. mashed banana 1/4 c. drained maraschino cherries, quartered 3 T. chopped walnuts In small mixer bowl cream together the sugar and shortening till well blended. Add egg; beat well. Stir together all-purpose flour, baking soda, and salt. Combine the mashed banana and milk. Add the flour mixture to the creamed mixture alternately with the banana mixture, mixing well after each addition. Stir in the quartered maraschino cherries and chopped walnuts. Turn the batter into 3 well-greased 4-1/2x2-1/2x1-1/2 inch loaf pans. Bake in a 350Â°F oven for 20-25 minutes or till bread tests done. Remove loaves from oven; let bread cool in pans for 10 minutes. Remove loaves from pans and cool completely on a wire rack. Makes 3 loaves.

Husband's Delight 24 ounces tomato sauce 1/2 cup sour cream 1 cup cottage cheese 8 ounces cream cheese 1 medium onion, chopped fine 1 cup grated Cheddar cheese 1 1/2 pounds ground beef 1/4 cup bell pepper , chopped 2 cloves garlic, chopped 1 (8 ounce) package wide noodles, cooked as directed 1 tablespoon granulated sugar Brown ground beef, bell peppers, and garlic together and drain. Cook noodles as directed then drain. Add noodles, sugar, and tomato sauce to ground beef. Stir. Combine sour cream, cottage cheese, cream cheese and onion. Put into a 3-quart casserole dish a layer of noodles and meat, then a layer of cheese mixture; add the remaining meat and noodle mixture. Add grated cheese. Patti43, I think you can buy the tenderloins already breaded at a small grocery here in town. I have not bought them but Cheryl, our oldest has. I usually just make my own. I don't know of a good place around that you can buy them all hot and ready to eat. They are really good if you can find a place that makes them right. I like them with mayo, lettuce and tomato. How do you like yours? Yes, I copied your recipe for picnic cake. I have a recipe for a zucchini picnic cake I hope to make soon also. I always love a good recipe. I imagine the most of this cake I made today will go over to Amber and Mike's :) Sue

When you have 3 very ripe bananas you can make banana bread!

yep, mash them up, put in the freezer until you get the third one, then you can make banana bread :)

Tracy, here's the banana bread recipe I use. I don't care for bananas but my girls swear it is the best ever, LOL. I sometimes add mini chocolate chips to it.

BANANA BREAD

Â½ cup shortening
1 cup sugar
2 eggs
1 cup mashed bananas
3 tbls. Sour cream
1 tbls lemon juice
2 cups flour
1 Â½ tsp baking powder
1 tsp salt
Â½ tsp baking soda
1 cup chopped pecans

Cream shortening and sugar. Beat in eggs, bananas, sour cream and lemon juice. Add flour, baking powder, baking soda and salt, stirring just until dry ingredients are moistened. Fold in nuts. Pour into a greased and floured loaf pan, bake at 350 for 50-60 minutes. Cool in pan 10 minutes, remove and finish cooling on rack.

Makes 1 loaf

Although I dislike bananas even I'll eat this cake, it's a Rose Levy Birnbaum recipe posted by a member here and it's very good. Truthfully, though, I don't sift the flour and I don't add in batches, I dump everything into the mixer and let it go!

Banana Cake (Rose Levy BerenbaumÂs Cordon Rose Cake)

(good as layer cake, elegant, delicate texture)
mix together:
sifted cake flour 2 cups (200 g)
sugar 3/4 c + 2 Tbs (170g)
baking soda 1 tsp
baking powder 3/4 tsp
salt 1/2 tsp
puree together:
2 large ripe bananas 1 c (227 g)
sour cream 2 Tbs or up to 1/2 c (30 g to 121 g)
2 large eggs 2 (100 g)
grated lemon zest 2 tsp
(I left this out since I don't like the flavor of lemon with banana)
vanilla 1-1/2 tsp
soften:
Butter 10 Tbs (5 oz) (142 g)
Add butter and half of pureed mixture to dry ingredients in stand mixer and mix at medium with paddle for 1-1/2 minutes. Scrape bowl and add rest of banana mixture in two batches, mixing 20 seconds after each addition. Pour into 9"x2" round pan (I just lined the bottom with parchment, no spray or butter) and bake at 350 F for 30 to 40 minutes. Cool for 10 minutes in pan and then turn out onto rack to cool completely.
Hint: Use smallest amount of sour cream and 3 bananas for more pronounced banana flavor

Cream Cheese Icing
Cream cheese, softened 8 oz.
Butter, softened 5 TBS (2.5 oz)
Sour cream 1 Tbs
Vanilla extract 1/2 tsp.
Rum 1 Tbs
Powdered sugar 1 1/4 C (5 oz)
Process (yeah, the food processor) or beat cream cheese, butter, sour cream, and vanilla until smooth. Add powdered sugar and pulse until smooth. Makes enough to frost the top of a 9x13 sheet cake.

I always peel over-ripe bananas, break into smaller chunks and freeze in a ziploc bag. I love frozen bananas in my morning smoothies. Frozen bananas not only sweeten the smoothie but also give very nice body to it.

My recipe for banana walnut oat muffins takes just two bananas... And they're really healthy, with only 2 Tbs of oil in them, and lots of whole grain oats. Here it is!

Banana Oat Walnut Muffins (makes 12)
3/4 cup buttermilk
3/4 cup mashed ripe banana (about two large bananas)
1 egg
2 Tbs canola oil
1 tsp vanilla
1/2 cup sugar
1/2 cup quick oats
1&1/2 cups all purpose flour
2 Tbs chopped toasted walnuts
1 tsp baking powder
1 tsp baking soda
1/4 tsp cinnamon
1/4 tsp salt
Preheat oven to 375. Mix first six ingredients (buttermilk through sugar) together in a large bowl. Mix all other dry ingredients together in a small bowl, then add to the wet ingredients and mix until combined. Portion into muffin cups (I used muffin cup liners, otherwise grease the pan) so that cups are about 3/4 full... Bake 18-20 minutes, until browned on top and and a toothpick stuck in one comes out clean!

fearlessem - Thanks for the recipe. I have it saved for the next batch of ripe bananas.

annie - I made the banana cake, it was good. I did not make the icing (which I think probably 'makes' the cake) because my husband doesn't care for cream cheese icing and then I would feel compelled to eat it all so as to not go to waste :)
Without the icing, it's kind of like a mild banana bread minus the nuts. Thanks again for the recipe.

Cut them in half lengthwise, peel and bake with brown sugar and a bit of butter. Serve with yogurt or sour cream.

Tracy, Ashley says she thinks that cake would be good with chocolate frosting.

I probably like it because it IS a very mild cake and I don't care much for bananas, LOL.
