2 very ripe bananas

Hi all - I have two very ripe bananas. Any ideas what to do with them besides toss them? (And I am so baking impaired that I do not even have a good banana bread recipe). Any help would be greatly appreciated - because I hate to see food go to waste.

Put them in the freezer and worry about it later.

Use them to make a couple of banana daiquiris. My hubby made some recently using the overripe bananas that I have growing in my banana grove. They were very good.

As cyrus_gardner mentioned, you can really pick them at any time, although I let mine get to about the size you mentioned. Like most other vegetables, if you pick them early and often, the plant will produce more and for a longer period. You can leave them on the bush for a bit longer and they will turn pink or red. This does not change the taste, while some claim doing this makes them sweeter. I can not really tell a difference myself. Here is a link that might be useful: How To Pick Banana Peppers

Banana pancakes (slice them into the pancakes as they're poured into the pan) are one of our favs. If the bananas get too ripe too fast, since I only make pancakes on the weekends, I put them in the refrig to 'hold' them. I altered this banana bread recipe and we really like it: Banana Pecan Bread with Yoghurt 1 stick softened butter 1 cup sugar or equivalent Splenda 2 large eggs 1-3/4 cup all purpose flour 1 tsp baking soda 1/4 tsp salt 1-1/2 mashed very ripe bananas (about 4 small or 3 medium) 1 cup (8 oz) vanilla yoghurt, any kind 1 tsp vanilla 3/4 cup chopped pecans Note: you can mash bananas in your stand mixer, then put them aside in another bowl as you continue with the recipe. You donÂt have to start with a clean mixer blade, just start creaming the butter and sugar. 1. Preheat oven to 350Â°. Butter (or use the Pam Baking Spray) a 9x5x3" loaf pan. 2. Cream butter and sugar until pale and fluffy. Beat in eggs, one at a time. 3. Whisk together flour, baking soda and salt. On slow speed, add half the flour. 4. Add the banana pulp, yoghurt, and vanilla; beat on lowest speed until almost mixed. 5. Add remaining flour; mix on slow speed till combined. Stir in nuts by hand. 6. Pour batter in pan. Bake approx 1 hr and 10 minutes, or until tester comes out clean. 7. Remove from pan, invert on rack and cool completely.

Ripe Banana Loaves (using a cake mix) Grease pans with pan grease or grease with solid shortening and dust with flour. Two 9 inch loaves. Baking time is 40 to 45 minutes. 1 package (18.25 ounce cake mix, plain yellow) 1/2 cup light brown sugar 2 very ripe bananas, peeled and mashed (about a cup) 3/4 cup buttermilk 1/2 cup oil (canola, safflower, corn, soybean or sunflower) 3 large eggs 1 teaspoon cinnamon Preheat oven to 350 degrees. Place rack in center of oven. Place all ingredients in a mixing bowl and blend on low for 1 minute. Scrape down the sides and mix for 2 minutes on medium speed. Scraping down the sides of the bowl if needed again. The batter should look well blended and the bananas well pureed. Divide the batter between the two pans that have been prepared. Place in the oven, side by side and bake until they are golden brown and a toothpick stuck in the center comes out clean. When done remove from oven and place on wire racks to cool for 20 minutes. Run a dinner knife around the edges and invert onto cooling racks. Lay them on their sides until cool at least 30 minutes. Wrap in aluminum foil and keep for one week at room temperature or in the freezer for up to 6 months. Thaw on the counter overnight when ready to use from the freezer. Sue

yep, mash them up, put in the freezer until you get the third one, then you can make banana bread :)

Tracy, here's the banana bread recipe I use. I don't care for bananas but my girls swear it is the best ever, LOL. I sometimes add mini chocolate chips to it.

BANANA BREAD

Â½ cup shortening
1 cup sugar
2 eggs
1 cup mashed bananas
3 tbls. Sour cream
1 tbls lemon juice
2 cups flour
1 Â½ tsp baking powder
1 tsp salt
Â½ tsp baking soda
1 cup chopped pecans

Cream shortening and sugar. Beat in eggs, bananas, sour cream and lemon juice. Add flour, baking powder, baking soda and salt, stirring just until dry ingredients are moistened. Fold in nuts. Pour into a greased and floured loaf pan, bake at 350 for 50-60 minutes. Cool in pan 10 minutes, remove and finish cooling on rack.

Makes 1 loaf

Although I dislike bananas even I'll eat this cake, it's a Rose Levy Birnbaum recipe posted by a member here and it's very good. Truthfully, though, I don't sift the flour and I don't add in batches, I dump everything into the mixer and let it go!

Banana Cake (Rose Levy BerenbaumÂs Cordon Rose Cake)

(good as layer cake, elegant, delicate texture)
mix together:
sifted cake flour 2 cups (200 g)
sugar 3/4 c + 2 Tbs (170g)
baking soda 1 tsp
baking powder 3/4 tsp
salt 1/2 tsp
puree together:
2 large ripe bananas 1 c (227 g)
sour cream 2 Tbs or up to 1/2 c (30 g to 121 g)
2 large eggs 2 (100 g)
grated lemon zest 2 tsp
(I left this out since I don't like the flavor of lemon with banana)
vanilla 1-1/2 tsp
soften:
Butter 10 Tbs (5 oz) (142 g)
Add butter and half of pureed mixture to dry ingredients in stand mixer and mix at medium with paddle for 1-1/2 minutes. Scrape bowl and add rest of banana mixture in two batches, mixing 20 seconds after each addition. Pour into 9"x2" round pan (I just lined the bottom with parchment, no spray or butter) and bake at 350 F for 30 to 40 minutes. Cool for 10 minutes in pan and then turn out onto rack to cool completely.
Hint: Use smallest amount of sour cream and 3 bananas for more pronounced banana flavor

Cream Cheese Icing
Cream cheese, softened 8 oz.
Butter, softened 5 TBS (2.5 oz)
Sour cream 1 Tbs
Vanilla extract 1/2 tsp.
Rum 1 Tbs
Powdered sugar 1 1/4 C (5 oz)
Process (yeah, the food processor) or beat cream cheese, butter, sour cream, and vanilla until smooth. Add powdered sugar and pulse until smooth. Makes enough to frost the top of a 9x13 sheet cake.

I always peel over-ripe bananas, break into smaller chunks and freeze in a ziploc bag. I love frozen bananas in my morning smoothies. Frozen bananas not only sweeten the smoothie but also give very nice body to it.

My recipe for banana walnut oat muffins takes just two bananas... And they're really healthy, with only 2 Tbs of oil in them, and lots of whole grain oats. Here it is!

Banana Oat Walnut Muffins (makes 12)
3/4 cup buttermilk
3/4 cup mashed ripe banana (about two large bananas)
1 egg
2 Tbs canola oil
1 tsp vanilla
1/2 cup sugar
1/2 cup quick oats
1&1/2 cups all purpose flour
2 Tbs chopped toasted walnuts
1 tsp baking powder
1 tsp baking soda
1/4 tsp cinnamon
1/4 tsp salt
Preheat oven to 375. Mix first six ingredients (buttermilk through sugar) together in a large bowl. Mix all other dry ingredients together in a small bowl, then add to the wet ingredients and mix until combined. Portion into muffin cups (I used muffin cup liners, otherwise grease the pan) so that cups are about 3/4 full... Bake 18-20 minutes, until browned on top and and a toothpick stuck in one comes out clean!

fearlessem - Thanks for the recipe. I have it saved for the next batch of ripe bananas.

annie - I made the banana cake, it was good. I did not make the icing (which I think probably 'makes' the cake) because my husband doesn't care for cream cheese icing and then I would feel compelled to eat it all so as to not go to waste :)
Without the icing, it's kind of like a mild banana bread minus the nuts. Thanks again for the recipe.

Cut them in half lengthwise, peel and bake with brown sugar and a bit of butter. Serve with yogurt or sour cream.

Tracy, Ashley says she thinks that cake would be good with chocolate frosting.

I probably like it because it IS a very mild cake and I don't care much for bananas, LOL.
