Challenge! Create a recipe using up a vegetable gift basket

Some lovely people send us a gift for the Jewish holiday Sukkot every year: a big vegetable basket. It is more fun than a fruit basket.

Of course, the day I received it, I had just bought a whole lot of vegetables. Always happens.

So your challenge is to come up with a recipe that uses (preferably mostly uses up) the largest number of the items that were in the basket. Please keep in mind that we keep kosher, which means I can't use any recipes including pork or shellfish or that use both meat (including chicken, but not fish or eggs -- don't ask) and dairy (milk, cream, real butter, or cheese). But others may not care, so I won't put any limits on the challenge.

Okay, here are the vegetables in the basket:

1 bunch celery

1 bag baby carrots

1 green cabbage

1 head lettuce

1 bunch broccoli

1 head cauliflower

1 yam

1 red bell pepper

1 green bell pepper

1 red pepper that looks like a sort of largish chili pepper (one year it was habaneros! I hope everyone who got that basket knew what they were before eating)

1 bag radishes (extra points for using these -- unless it's tossed salad)

1 box mushrooms
