Advice on corn casserole..

I have four ears of leftover cooked sweet corn. Since I'm doing pork country ribs in the oven for dinner tonight I thought a corn casserole would go nice. Should I just eyeball it and mix in eggs, cracker crumbs, milk and seasonings?

Nancy I have no idea about corn casseroles....but recently there was a thread on corn fritters that sounded interesting.

I know all about corn casserole, but I use canned corn! LOL!
Let;s see....a can of corn is 14 oz,,,that's 1 cup and 3/4....so if the corn you cut off the cob equals that you are good.
Then add some chopped green onion a couple of eggs, 2 cups of milk or cream some cracker crumbs ( I like saltines) about 2/3 cup and another 2/4 cup grated swiss cheese a very little salt and lots of black pepper.
Mix pour into 8 by 8 buttered dish, top with crumbs or paprika dot with butter if you wish and bake until firm.

Linda in Tennessee, I think I'm the only person in the world that likes cornbread all ways. I like it with sugar or without, with yellow cornmeal or white, with or without corn kernels, bacon, jalapenos, cheese, whatever. (grin) Oh, and I like that casserole too, cookie. Your breakfast cornbread sounds like my Grandma, she used to make cornmeal mush (down home polenta, LOL), slice it the next morning and fry it. It's the only way I'd eat it, fried and with maple syrup. As for the tex-mex thing, I make a batch of Jiffy corn bread, fry and crumble some bacon and add that to the batter with a drained 4 oz. can of chopped green chilies or a small chopped jalapeno, a handful of grated cheese, bake as usual. It's a nice change, and you could probably add a bit of chili powder or cumin, but I don't. Annie

Here are two of my recipes for you to check out. Someone is bound to hit the right one sooner or later...hopefully before Thanksgiving! CORN CASSEROLE #1 1 can niblet corn, undrained 1 can creamed corn 1 cup shredded cheddar cheese 1 cup sour cream Â¨Ã¶ cup butter plus 1 tbsp. 2 eggs, lightly beaten 1 box Jiffy corn muffin mix In a medium sized bowl, mix corn & cheese together Melt the butter; mix with the sour cream and eggs Add to the corn mixture and blend well. Pour into a greased casserole dish. Bake at 350Â¢Âª for 1 Â¨Ã¹ hrs. Or: CORN CASSEROLE #2 1 can niblet corn 1 can creamed corn 4 eggs, beaten 1/4 cup milk 1 tsp. sugar Salt Pepper Town House or Ritz crackers, crushed 2 tbs. butter Mix together first seven ingredients. Top with crushed crackers and dot with butter. Bake at 350Â¡Ã for ? (Uh oh...don't know why I left out the time. Knowing me...I probably made it up and never got around to adding the baking time! This is recipe that I have saved to prepare. Corn and macaroni casserole 1 (15.25 ounce) can whole kernel corn, with liquid 1 (14.75 ounce) can cream style corn 1 cup small uncooked seashell pasta 1/2 cup butter, cut into pieces 1 cup cubed processed cheese DIRECTIONS Preheat oven to 350 degrees F (175 degrees C). Agree any local feed and farm or garden center can sell you good corn fertilizers. There are many made especially for growing corn since its needs are somewhat unique. Timing of applications is also crucial with corn as it is fed at seperate times as it reaches specific growth stages. Your Montana State Ag Extension Service website has lots of information available on growing corn in Montana and gardening in general and your local county extension office probably does too so be sure to check out all those resources. Sharon, I love corn fritters too! Unfortunately I'm canning so the stove is pretty well tied up.

Linda, yup, I usually use canned corn also and I love the Jiffy mix type of casserole. I was just thinking of something simple, like you outlined. I love it when I can just shove dinner all in the oven.

Thanks I'm going to play around... can't mess up too much. At least I'll use up something in the frige.
