My Cornmeal Biscuits with Green Onions

I made these biscuits today. **However** they were far too moist, and I had to add more flour just so I could knead them a bit. I'll cut back on the milk next time. They didn't "get up" much, but DH devoured them.

The flavour is really good, I guess it just needs tweaking.


If any of you make it, please post how yours were and how you made it.

1 1/4 cups flour

1/2 cup whole wheat flour

1/4 cup cornmeal

1 tbsp baking powder

1 tsp sugar

salt and pinch cayenne pepper

1/2 cup cold unsalted butter, cubed

1 cup milk

1/2 cup shredded Monterey Jack cheese

1/4 cup finely sliced green onions

In large bowl whisk flours, cornmeal, baking powder, sugar, salt and cayenne pepper. Using a pastry blender, cut in butter until crumbly.

Pour all but 1 tbsp milk over top, sprinkle with cheese and onions. Stir with fork to form soft ragged dough.

Turn onto floured surface. With lightly floured hands, knead gently until dough comes together. Pat or roll out to 1/2" thickness.

Using 2 1/4" floured cutter, cut out rounds, using all of the scraps. Place on parchment-lined or flour-dusted baking sheet. Brush tops with remaining milk.

Bake in 400 degree oven until golden, 18-20 minutes. Cool on rack.
