Amazing pumpkin recipe

This is actually two recipes. The first one is the original recipe, and the second is a spin off of the first one that involves using punpkin (in honor of Halloween approaching) instead of cocoa as the primary ingredient. This recipe is a lot of fun for kids, as they love making little sandwich cookies using the cookies and filling.

Alright, here's a link to the first one: "whoopie pies". This is the original recipe. I also included a second filling recipe with this one. There are actually two types of filling that you can use. The first one just makes a simple vanilla filling. The second one make a peanut butter filling (for all you peanut butter lovers) (just copy and paste if the link doesn't work):

This is the recipe for the peanut butter filling:

2 T. butter

1/2 cup creamy peanut butter

3-1/2 cups confectioners' sugar

1/2 cup milk

Mix the butter and peanut butter together and blend well. Add the confectioners' sugar and milk. Mix with an electric mixer at medium speed, then beat at high speed until light and fluffy.

Now, for the second one "pumpkin whoopie pies". With this one I included two recipes. The first one makes the cookies a little bit larger, but not as thick, and the second one makes them a bit thicker.
