Half size cheesecake pan--anyone know how large?

BF loves cheesecake but neigher he nor I can eat that much of it so we can't eat a whole 10 inch size one fast enough. I'd like to make cheesecake a little more often so I'm wondering if I get a half size pan if I can just halve the recipes I find? Is a 5 inch diameter cheesecake pan big enough for a half recipe? Does it really matter? If I make it in a little larger pan, will it just be flatter? Could I possibly bake it in muffin tins? If so, what about how long to bake it? I love the idea of making some in muffin tins and then freezing for later.

A 5" pan is only 25% of the area/volume of a 10" pan. A 10" pan has an area of 78.54, while that 5" pan is 19,63.

Yes, I knew the math didn't add up, that's why I was asking. I'm wondering if I can just use a pie tin or cake tin? I hate to go out and buy something if its not necessary.

I usually bake my cheesecake in a bain marie but I guess you don't absolutely have to, particularly if it is a small one, right?

Lou we're off on a tangent here but my absolute to go to recipe for chocolate ice cream is from Cafe Pasqual's in Santa Fe. The cookbook is by Katherine Kagel but the recipe below is from epicurious. It's so good I make it anually for a friend as his birthday gift - his request. It's Mexican Chocolate Ice cream and it has pequins in it (YUMMMMM!!) I have a Cuisinart Ice Cream maker so not sure how it would work with the KA Here you go * 9 ounces fine-quality bittersweet chocolate * 2 ounces unsweetened chocolate, chopped * 2 cups heavy cream * 1 cup milk * 6 large egg yolks * 1/3 cup firmly packed dark brown sugar * 2 teaspoons cinnamon * 2 tablespoons Kahlú * 1/2 teaspoons crumbled pequín chilies* (wear rubber gloves) * 1/2 cup blanched whole almonds, toasted, cooled, and chopped * *available at some specialty stores Preparation In a metal bowl set over a pan of barely simmering water melt 6 ounces of the bittersweet chocolate, chopped, and the unsweetened chocolate, stirring until the mixture is smooth, and remove the bowl from the heat. In a heavy saucepan combine the cream and the milk and bring the mixture just to a boil. In a bowl whisk together the egg yolks and the brown sugar, add the cream mixture in a stream, whisking, and pour the mixture back into the pan. Cook the custard over moderately low heat, stirring, until it registers 170°F. on a candy thermometer, strain it through a fine sieve set over another bowl, and whisk in the melted chocolate, the cinnamon, and the Kahlúa. Let the mixture cool completely and freeze it in an ice-cream freezer according to the manufacturer's instructions, adding the remaining 3 ounces bittersweet chocolate, chopped fine, the crumbled chilies, and the almonds during the last few minutes of freezing time. Let me know if you need pequins. I can put some in the mail for you, that is if you can mail hazardous material ;-) I love Ghiardelli's bittersweet so always use that and Whole Foods has bulk unsweetened chocolate. It's made by one of the big companies but the name escapes me right now.

Topo, I've looked over the link, I think I would try your original recipe w/o the lemon, use the pomegranate liqueur for the flavoring, with the option of the Pomegranate Sauce, it would make a great presentation. I will try that way when I next make it. Totally agree w/you about sharing recipes, can you image if recipes weren't shared, porridge might still be the staple in our daily menus. I know for a fact that someone gave her that tart recipe; I just dont know who. In fact, while out w/friends one evening this topic came up and there was a women in the group knew exactly what I was talking about, she had the recipe but someone stole her personal cookbook with that recipe in it, maybe it was MY COUSIN!!! "You can check the torture newsgroups for techniques" LOL !! I have 3 recipes I want to work with; one w/a small amount of ricotta, another w/a small amount of amaretti cookies crushed in the batter, and the other escapes me right now. Each different, so I will try my hand at breaking down each recipe into 3rds as each recipe makes approx 40 tarts & I basically just want samples. Who knows may end up with something far better. Lucy

I finally found a pillow I like -- at Costco! I don't recall the price, but think it was about $30 for two. (Since it was Costco I knew I could return it.) I'm a back/side sleeper. I've had it for three months. The package says "Charisma Luxury Down Alternative Pillow Two Pack" and "Jumbo 20in X 28in". I think the secret is that it has a gusset edge, so I can 'fluff' it up to give enough support. It's machine washable, although I haven't washed mine yet. The fiberfill is Comforel(TM) Silkysoft(TM). Hah! Now that I'm looking at the tag on the pillow I see it says it is 18" X 26" X 2" -- not exactly what the package advertised, eh? The covering is made in China, but the pillow is filled and finished in USA. Manufacturer is Hollander Home Fashions of Boca Raton, FL. Anyway...I really like it!

Have you ever cooked half a turkey? And how to cut it in half?

I've been roasting halves for the past 8 or so yrs, I wouldn't go back to roasting an intact bird The faster cook time is also a plus I like to do the backbone removal on a half sheet tray I usually roast both halves and freeze the other well wrapped in plastic and foil This recipe inspired me to try this method - BTW - I used a combo of dried herbs as I had them on hand https://www.housebeautiful.com/lifestyle/recipes-cookbooks/recipes/a684/tyler-florence-turkey-recipe/

Lpink,

Cheesecake freezes very well. Use your regular sized pan. Cut the cheesecake into slices. Place a small piece of parchment paper between the slices. Freeze. When you want a piece, remove a slice or two from freezer and allow to come to room temperature (the way cheesecake should always be eaten!). No need for more pans. I've always got 2-3 different types in the freezer because there's only two of us also.

Another good idea is to make them in mini muffin cups. My mother used to do that with a vanilla wafer as the crust and pour the cheese mixture on top. For decoration she'd add a glazed cherry or berry mixture. They were very pretty and just about bite sized. This looks like the recipe.

I don't know what your cheesecake recipe is, but I can make a "small" cheesecake in a regular cake tin. It's not as tall as the 2 1/2 pounds of cream cheese cake I make in a 9 inch pan (I never use the 10 inch pan) but it's a cheese cake and tastes like one.
I have a nest of spring form pans...a 10 inch a 9 inch and an 8 inch....mostly I use the 8 inch pan....because it fits nicely on my favorite tall cake server. Also Cheese cake freezes very well....and a couple of slices of cheese cake in the freezer is like money in the bank.

Cheese cake in a cake pan....works best on a pan with a removable bottom.

Crust...I butter the pan very very well...soft butter spread on thickly. Then I place 1/4 cup of ground nuts...I like almonds or pecans, mixed with 1/4 tsp cinnamon....and sprinkle in the pan, tilting the pan so the nuts stick to the butter.

Cake
2 8 oz packages of cream cheese at room temp.
2/3 cup sugar
2 eggs
2 tsps flour
1 tsp vanilla

pour the cake into the "crust" and bake at 375 until the center jiggles only very slightly, about 45 to 50 minutes. Turn off the oven and leave the door ajar and let it sit for 30 minutes. Cool before chilling.
