Last Weekend's Baking

I've been slow to get this up, but I went into a baking frenzy last weekend!

Clockwise from top left:

Zucchini Bread - 3 large & 3 small loaves

Snickerdoodles (from 1/2 a bucket of fundraiser dough in the freezer)

Plum Coffeecake

Plum muffins (light color)

Chocolate Mint muffins and loaf.

I bake in the wee hours. Getting ready to bake a cake in a bit. Having a Halloween party on Thursday. I always freeze my cake before for easier icing. I'll probably bake something else too. So nice to have a large oven. Maybe a bundt cake or muffins. Mini rant: Of course if it's a warm day the icing will be difficult anyway thanks to stupid California legislatures who banned trans fats in the shortening. So I have to work with unstable trans fat free shortening and my cake will taste less like the usual. All the traditional "buttercream" decorators are tearing their hair out around these parts. I can't buy my base until the last minute since it is not heat stable and my house has no ac. Planning to try a new recipe but it includes butter so still won't help with the issue of weeping and crusting. Thanks nanny state. Maybe I should just do cookies. My black marketed silver dragees just got here. :-D Seriously. No one would ship them, out of fear. I finally found a source but her supply is almost gone. LOL I went and snagged the last 2 bags. Hoping to cross state lines soon to get my shortening before it's banned in all fifty states. ;-)

I've had the urge for an Apple Crostata, and Empires and Cortlands are my favourite apples. Boy I wish I lived closer to you Alsisande, your apples look wonderful. I'm in apple country, but they're still pricey. I'm going to have to bite the bullet and get some regardless. Nicole, I always put molasses in my bran muffins. It also calls for buttermilk, and I combine yogurt and milk to make buttermilk. It works perfectly, as we always have yogurt in the frig. I didn't do any baking this weekend, I made bread last weekend and we still have some. But I have chicken thighs that were marinated in lemon juice, garlic and lemon zest. They're in the oven over rice, baking now.

I just put a turkey in the over and I am making a brownie since the oven is on. I wanted to take the chill out of the air here. Friday night I made Tiger Meat, For those of you who don't know what it is It is raw hamburger like ground chuck. I add green pepper, raw egg, onion and salt and pepper. It is really good. We eat it on saltine crackers. I got the meat from my brother who had the cow butchered. No I am not scared of getting salmonella. I would not just use any hamburger for it though. Some butcher shops sell the meat especially for this.

That's a shame about the cake, especially with 12 eggs :-/ I made this one last week to take into work, and it was very popular. Almost no effort to mix up and came out nice and moist. You don't even need a mixer. I'll be making another one this week for Friday- I bake a birthday cake for each staff member, whatever is their favourite, and this week it's a carrot cake. The staff member who generously supplies me with eggs from her chickens is allergic to carrots and had mentioned that she wasn't fast enough to get to the "yummy" lemon cake and only managed to snaffle one piece, I'll make another lemon cake and take her a large piece to have instead of the birthday cake. https://thecafesucrefarine.com/french-grandmothers-lemon-yogurt-cake/ My notes- I put the rind of three smallish lemons in as that's what I juiced, and I hate waste ;-) I baked mine in a large loaf pan and it came out fine Because it was a deeper cake from being in a loaf pan, I poked holes all over it with a skewer before brushing on the glaze

I have tried to avoid turning on the oven this week, this is our last day (I hope) in the high 80's and 90's ... yech !

Those look delicious, never tried a plum muffin.

Your baked goods look fantastic! I'm not a baker but plum coffeecake sounds heavenly to me, I'd love the recipe, please. I love plums!

My MIL used to make plum kuchen - kind of a cookie crust but softer, plums on top with just a little thin custardy cream - not too much. Oh man, was it great.

Here's the recipe Woodie. My notes:

Layer half the batter, then half the plums and topping. Repeat with other half to make a "ribbon" of fruit through the middle. It was a lot of cake.......then the fruit and topping. It makes a pretty full pan....put foil or a cookie sheet under it. (don't ask)

I made mine with toasted walnuts....Yum!

Plum Coffeecake

Â You found this recipe on 1st Traveler's Choice Internet Cookbook. (www.virtualcities.com)

1/2 cup white sugar
1/2 cup canola oil
2 eggs
1 cup whole milk
3 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon salt

6 to 8 plums, pitted and sliced
1 cup brown sugar, packed
6 Tablespoons all-purpose flour
1-1/2 teaspoons cinnamon
6 Tablespoons butter
1 cup chopped walnuts

In mixing bowl, cream white sugar, oil, and eggs until fluffy.
Stir in milk.

Sift together the flour, salt, and baking powder.
Beat into other mixture.

Spread batter in greased and floured 9 x 14-inch glass pan.
Top with rows of plum slices.

Combine remaining ingredients and mix until crumbly.
Sprinkle crumbs over plums.

Bake at 350 degrees approximately 1 hour or until tested done.
Cut into squares and serve warm.

I've been trying to post all morning that there wouldn't be any raiding of the freezer....

You have to come VISIT and have coffee!
D _ _ N Gardenweb keeps giving the the "message Rejected" thing. Whatever!!
We'll see if this one makes it!

Come on over and we'll EMPTY the freezer!

The blue Italian type plums, Michelle. Purple with that blue "frost" on the outside until you polish them! Golden flesh on the inside. Yummy!
