Here's an old recipe I've made and liked. You can use other varieties of onions.

GLAZED BERMUDAS

6 Bermuda onions, peeled
2 Tbs. butter or margarine, melted
ü cup honey
ý tsp. paprika
ý tsp. salt
ü tsp. pepper
3 Tbs. water

Halve onions and put cut side up in large casserole with cover. Combine remaining ingredients; pour over onions. Cover and bake in moderate oven (350 degrees) for 1 ý hours, or until cooked, basting with sauce.

Here is bbstx's recipe for baked onions that we just adore.

Baked Onions

For each medium onion,
1 TBS butter
1TBS Worcestershire sauce
1 TBS soy sauce
Tony Cachere's season salt to taste

Peel onion and cut off the top, leaving root end on to keep intact. Vertically slice the onion in to 8 wedges but not all the way thought. Place into an oven or grill proof pan

Pour the sauces over the onions and lay a pat of butter on top. Sprinkle with the season salt.

Cover and bake for 1 hour at 350 degrees. Serve with the juices for dipping the meat in.

We just take good sized red onions slice them horizontally, about 1/2 inch thick and grill them. Really good and the griller gets to take care of them.

Roasted Parmesan-Creamed Onions

Talk about succulent! The yellow onions are pretty pungent when you slice them, but surrender their kick when they are roasted and become sweet and tender. When they reach this point, the cream sauce is poured over them, they are topped with shaved cheese, and then the whole thing is returned to the oven for a slow melt. I like to cook these in a wood oven to get some smoke on them, which makes them even better-if that's possible. Great with chicken, lamb, beef-you name it! I also like it served as a first course.
Serves 4

4 medium yellow onions
1/4 cup extra virgin olive oil
Kosher salt and freshly ground black pepper
1 cup heavy cream
1/4 cup dry white wine
Minced garlic (my addition)
2 ounces Parmigiano-Reggiano cheese, shaved (about 2 tablespoons)

1 Preheat the oven to 350ðF.
2 slices the onions into 1/4-inch-thick rings and lay them in a shallow baking pan, such as a sheet pan or jelly roll pan. Drizzle with the olive oil and season to taste with salt and pepper. Roast for 15 to 18 minutes, or until lightly browned.
3 Meanwhile, in a medium saucepan, bring the cream and wine (and garlic) to a simmer over medium-high heat. As soon as the liquid starts to bubble around the edges, remove from the heat.
4 Spoon about a tablespoon of the cream mixture over each onion slice. Cover with aluminum foil, return to the oven, and cook for about 25 minutes. Increase the oven temperature to 450ðF.
5 Remove the foil and top the onions with the shaved cheese. Return the pan to the oven and cook for 4 to 5 minutes, or until the edges caramelize. Serve hot.

Thanks all, we did bbstx's recipe and loved it. And yes, next time I'll microwave them a bit. Makes sense since onions take along time to cook.

AnnT's recipe looks amazing, and will be on my list of to-do's, but that's a Special Occasion recipe. (Defined by "anything with heavy cream' and needing company.)

I like baked onions a lot, I don't know why I don't make them more often.

I usually peel, then cut off the top, and "cross hatch" them about 3/4 of the way down. Wrap in foil leaving the top open and drizzle with balsamic vinegar, top with a pat of butter and bake or grill. Very yummy.

I like to marinate/grill THICK slabs of sweet onions. I peel and then stick 2 tooth picks in... BEFORE slicing, and cut into 3-4 thick slices... depending on size of onion. Marinate along with whatever protien is going on grill. Like them a bit charred and they become a side dish. Any left-over might get chopped up and added to something like potato salad... for a little difference.

This thread made me want baked onions so last night I put 2 in a dish and micowaved 4 minutes, then drizzled with olive oil, s&p , poured balsamic inside the onion and baked 20 mins. Lovely and so easy. Thanks!

How about creamed onions? I remember eating them once decades ago and they were really good. Does anyone make them?

I like to make stuffed onions as a side dish for fish.

I make creamed onions as a Thanksgiving side (or did back when there were a lot of people for dinner). Everyone loves them. and comment that "Why doesn't anyone fix these anymore?"

I use Julia's recipe.
