Monkey Princess Goes Mexican

Brother and I spent the night at grandma's house last night so we made Mexican. On the menu was Tacos, Potato Nachos, and Nancy's Creamed Corn.

This is the beginning of the potato nachos I used grandma's fancy potato cutter (LOL).

This is what the potato nachos looked like in the end.

This is the tomato butter that grandma and I experimented on. We put it in the crock pot over night but it caramelized. It was a fail. So we need to feed it to the pigs. We made a crisp but grandma is going to post pictures.It has a surprise ingredient. I just finished roasting coffee.

Dinner looks very yummy! Too bad about the tomato butter, those yellow tomatoes look so pretty going in! I have tomato-envy!

Boncrow, I live in east Texas. My CPM is on a small arbor. It gets full morning sun, mid-day sun and my horse barn provides shade from the evening sun from 2-3pm onwards. Right now, it is covered in buds, a few have bloomed. This was a plant from Hortico several years ago. I had it potted up for awhile, it didn't look that great but planted it. I have kept it well watered and fertilized with horse compost and it just covers my little arbor. When in bloom, I have no doubt it will look like the photo in David Austin's catalog, tho not as big. It bloomed well last year but I cant recall how much it bloomed after its spring flush. I have been very pleased with it and can recommend it. Another climber that is doing really well that I love to brag on is Tess of the d'Ubervilles. It is in the same bed, but is on a fan trellis up against the horse barn, so gets shade sooner than CPM. Right now, it is just dripping with those luscious magenta red blooms, so healthy! I would definitely get CPM - my suggestion would be to plant where it gets sun until the hot afternoon blast. This bed seems to be just perfect for Austins. Princess Anne, a new bush year before last, is just covered with beautiful pink blooms. My Austins generally come into their own the 2nd year. Wollerton Hall, planted in all day sun, is just gorgeous right now, as are all the rest I got a few years ago. Very pleased with them! Will try to get some photos. Judith

Sleevendog, I think she's decided that the dough was still a bit wet from the soaking, and so made the paper soggy, and when they hit the hot oven they stuck. I don't know, but I do think we would be better off just using a greased baking sheet. I told her that's why people try recipes first, so if something unexpected happens, you figure it out and fix it. Sometimes it takes more than once. She was fine with that, and happy to make more pretzels, and her brother enthusiastically agreed, as his job is eating them! We'll be trying gluten free soon, I think, since her mother is celiac and we're working on adapting favorite recipes. Dcarch, who is that second girl, she does resemble the Princess (or perhaps the Princess resembles her). Cathy, I think she's pretty amazing too, but she doesn't smile enough. She has one crooked front tooth and will need braces and she's starting to be self conscious about it. It's the age, I guess. party-music, when we're baking for "home", we don't really care if the results are pretty as long as they taste good, so it was still fine. It's just an excuse to bake some more, but I like it better when they come out perfect for her. I'm usually more disappointed than she is, she just sets about figuring out why it happened and how to keep it from happening again. Lars, pumpernickel pretzels sound really good, we'll have to try them too, thanks for the idea. It's way more fun baking with someone than baking by yourself, although somehow I always get the clean up duty. Hmmm..... Annie

Ellen, I'm just finishing up the estate anda final account, I signed her up for Medicaid when she went into the nursing home and now the state wants $9,000 or "they'll sue the estate". OK, the estate has $104.62, LOL, let 'em have it! LindaC, the jellyfish weren't on the beach, they were in the water. Bud did find ONE on the sand after Amanda and Makayla got stung, but I didn't see any. Yes, she's grown up way too fast, plus she's 5'8", far taller than me, taller than her Mother and obviously taller than my Mother who is 4'8" (almost). I haven't talked to the girls this morning, but they are both good girls, good students, involved in school activities, and neither have boyfriends so they just went together. They go to different schools and it was Makayla's Snowcoming, so she even made a "promposal" to KayLynn, something connected with Gray's Anatomy that I didn't understand but the girls thought it was hysterical, LOL. Dcarch, I'll help you find your walker, as soon as I find my glasses. Oddly enough, I need my glasses to FIND my glasses. (sigh) Colleen, she still has the little kangaroo you sent her and Bud has the blue blanket. FOAS, just wait, your turn is coming. BTW, I hope your DW is doing well, she's in my prayers daily. Jasdip, you are thinking of Maci, and she's a force to be reckoned with. I can't even imagine her as a teenager. She was at my house a couple of days ago, Madi helped me bake bread and Maci protected their new shelter/rescue dog from my bad fat cat: Madonna, it seems like not very long ago when you joined here, and I think I first "met" you on Harvest. Caramalized tomatos sound delicious. Put them on a pizza.

Well, my apprentice has gone home, and I'm just finished canning 20 quarts of sauerkraut.

L2C46, the tomato butter was past caramelized and definitely into the "scorched" range. It was definitely pig food.

L, I do feel badly about all those 5 quarts of Great White tomatoes, and about the 12 hours or so of work that got wasted. I have about 3 or 4 bushels of tomatoes still in the garden, if it doesn't frot tonight, and I'm going to have to pick them and take them to a food pantry or the senior center, I'm all done canning tomatoes.

The dinner was very good, and the creamed corn fit in because it had a chopped jalapeno in it. Very yummy, so thanks, Nancy, and a good use of some of the last of the season's short ears of corn.

We did make crisp. Zucchini crisp, actually, and it tastes like apples. MP took it home with strict instructions to her brother that he was not to "divulge the secret ingredient", LOL. She's going to make her parents guess what's in it. (grin)

We made peanut butter and chocolate crepes and breakfast pudding this morning, along with some bacon, I have pictures of that too, I'll post later.

So I'm having a cup of Brazilian Fazenda Aurea, while the Princess' Costa Rican is off-gassing on the counter next to the sauerkraut. My house smells....interesting, like coffee roasting and sauerkraut.

What a fun night. I think potato nachos will be on the menu at my house this week, thanks for the idea.

I have to tell all of you who are overrun with tomatoes, that I am really envious. As is typical for me, my garden is just now finally getting some full size tomatoes ripened enough to be really good, and in a few more weeks they will be rotting as our rains start.

Next year I am going to remove my rose garden and convert the whole space over to food. I get a lot more enjoyment from ripe home grown tomatoes than from roses.

John, I only wish you were closer, I'd gladly give you free rein over all the tomatoes left!

The nachos were really good, BTW, roasted potato slices with some fajita seasoning and a Mexican cheese blend.

You had me at Mexican Mikayla. Love it and yup, those potato nachos are a wonderful idea. I'm going for them soon.

So sorry Annie about all those gorgeous white tomatoes. I know how you love them. The organic farm stand near me grows quite a few mortgage lifter varieties. I'll see next year if they have the pink!
