Someone gave one of those to me one year. I stared at it for a while then tried to cut it up. It was like carving a stone. I threw it away. Maybe I could have baked it like a butternut but I wasn't that ambitious. I really don't know what one does with those.

Slice it in quarters lengthwise, remove the seeds from down the middle, then grate it and make squash patties:

8 medium yellow squash, shredded
1 onion, shredded
1 1/2 tablespoons salt
1 cup all-purpose flour
1/2 cup cornmeal
1 egg, lightly beaten
1 cup shredded Cheddar cheese
ground black pepper to taste
1 tablespoon vegetable oil
opt. a dash of Old Bay seasonings is good

Directions:
1.Place the squash and onion in a colander, sprinkle with salt, and drain about 30 minutes, until no longer moist.
2.In a bowl, mix the squash and onion, flour, cornmeal, egg, and cheese. Season with pepper.
3.Heat the oil in a skillet over medium heat. Drop squash mixture by heaping tablespoonfuls into the skillet, and cook 3 minutes on each side, or until golden brown.

If it is zucchini squash, grate and make zucchini banana bread or muffins.

I treat them the same as I do an overgrown zucchini.
I make sausage 'boats'. Slice them lenghwise,
scoop out the insides, (you may have to microwave
them a bit), then sautee the scoopings with onion
and sauseech, and some cubed up bread, then stuff
it all back in the hollowed out 'boat' and bake.
I'll admit that the skin can get woody on the bigger ones,
but that is a good thing, as it won't fall apart on
you. One is ideal for two people. I placae them
on my plate and eat right out of the 'boat'. Yum.
