Thinly Sliced Chuck

Our local grocery store often features Beef para Carne Asada, which is essentially thinly sliced Chuck. I often trim the fat off and use it to make beef jerky, which works quite well. I also, of course, make Carne Asada with it. But it is such a good deal sometimes, beef at between $1.50-$1.80 per pound, that I'd like to use it for other things as well. The slices are not paper thin, of course, more like 1/4" slices.

What would you folks do with this?
