Pancake Day.....Shrove Tuesday.....Mardi Gras

Okay, so tomorrow is Pancake Day and we will be having pancakes (of course) for dinner. What do you serve with pancakes when having them as an evening meal? Any and all ideas welcome.

We celebrate Mardi Gras but not with pancakes. . .wonder where that tradition comes from (?). We just "eat fat" because Ash Wednesday is a major fast day.

Pancakes I like with bacon, sausage or ham. I just might have to celebrate Shrove Tuesday! I like iced tea with every thing!

Howdie everyone!! So far this morning I have made blueberry pancakes with real maple syrup. I also bought a box of Paczkis-bavarian creme-yum!! For supper its going to be a pot of jambalya with sausage and shrimp. I have some bananas to make some bananas foster but I haven't made it in years plus since we don't drink I have no liquor in the house...prob just make a caramel pan sauce and warm the bananas in the sauce and drizzle over some ice cream. In past years I would order a king cake from Gambinos...they always arrived beautifully!! As for lent I volunteered to run the company used book drive with the proceeds going to MDA. On a personal note I don't drink, smoke or swear so I guess I will just try to get to the gym more often and to cut out all junk foods which somehow creeped back into my diet LOL!! Tomorrow I will get up early and get ashes on my forehead but they will no doubt be gone by noon so I may have to go back for more-good thing it doesn't matter what church you go to, they are all open all day for ashes!! It is a day of Fasting and Abstinance...which means only one meal and no meats. This rule only applies to healthy adults. I will probably make a tuna casserole and salad. Cheers! Susie

Just got back from DW's little 1840s little episcopal church where I was supposed to flip pancakes for their Shrove Tuesday, Mardi Gras pancake supper (hi writersblock). I was supposed to cover the second hour shift but most guests had already been served so I mainly just got to eat pancakes and sausage (and drink sweet tea since we're down in the south.)

Y'all have saved my life. I couldn't think of what to make my dad for lunch tomorrow (they're coming to visit). Sol's gumbo it is! Seafood Gumbo 2 medium onions, finely chopped (about 2 cups) 1 medium green bell pepper, chopped (about 1½ cups) 2 small stalks of celery, trimmed and chopped (1 cup) 2 tablespoons chopped garlic 1 teaspoon salt, or more to taste (add additional salt only toward end of cooking) 1 tablespoon ground black pepper ½ teaspoon cayenne pepper* 1 tablespoon dried thyme, or 2 tablespoons fresh thyme 1½ teaspoons dried oregano, or 1 tablespoon fresh 2 tablespoons fresh basil ¾ cup canola oil 1 cup AP flour, or more if needed 5 to 6 cups homemade fish stock, but chicken stock will do** 1 pound andouille (or other spicy sausage), sliced 1 pound crabmeat 2 pounds shrimp or crawfish Cooked rice In a Dutch oven, brown the andouille sausage, or meat of your choosing. Remove the sausage from the Dutch oven, and set aside. To make the roux, heat the canola oil in the same Dutch oven over medium-high heat. When oil is hot, add the flour. Whisk constantly, until roux reaches a dark brown color, resembling chocolate buttercream. The whole process will take about 20 minutes. When the roux is dark and thick, add the vegetables and spices. Stir for a few more minutes to soften vegetables. Stir the fish (or chicken) stock into the roux and vegetable mixture. Bring to a simmer. Add the sausage, and simmer with the pot mostly covered for about 1 hour. Gently stir in the crabmeat, and shrimp (or crawfish) during the last 3-5 minutes of cooking. *You can substitute Kielbasa for the spicy Andouille sausage. If using the former, you might want to increase the cayenne pepper. But taste first, before adding more heat

As children, we learned my great-aunt's method for making blintzes from our mother. The pancake is lots of eggs, flour until it's too thick to move, milk until it's batterish, a little sugar and salt. The filling requires making the cheese because you can't buy fresh hoop cheese anymore, though it used to be the most common cheese, and other cheeses have the wrong moisture content and flavor. Luckily, it's not hard to make if you have an immersion circulator to hold the temperature. The pancake, however, is a method, not a recipe. You mix until the batter falls off the eggbeater just so. They're cooked in a small skillet or crêpe pan. First you oil the pan and heat it well, and pour the excess oil into the batter. Then you pour the batter into the pan and pour the excess back. This gives you a pancake with a tail, about twice as thick as a crêpe. The tail, from the pouring back, the part that goes up the side of the pan, is a real help in rolling the blintz. Commercial ones nowadays are often presented long and open--it's labor saving, but not normal. Add a dollop of filling (doesn't have to be traditional cheese) to the tail, roll over, fold in the sides, and finish rolling. Very much like a burrito or egg roll, but proportion about 2:3. Feed the fails to the kids. :) Very eggy. Slightly sweet, but not as sweet as regular pancakes. Not health food. Often eating for the June-ish holiday, Shavuot ("weeks"). I've had (shared) plenty of Dutch babies at brunches, but have only made Sleevendog's. It came out great, but I didn't really have the right pan. I should try it again now that I have a better pan. They're not as eggy as blintz pancakes, but very good. :) No one has mentioned clafoutis. Is that too far from "pancake"?

According to Wikipedia: "In the United Kingdom and many other countries, the day is often known as Pancake Day. Making and eating such foods was considered a last feast with ingredients such as sugar, fat and eggs, whose consumption was traditionally restricted during the ritual fasting associated with Lent."

Interesting! I'm from a German-American Catholic family and have never associated Fat Tuesday with pancakes, though now I'll have to have some tomorrow! I like mine with just butter (hate syrup!) BTW, I've always liked the old words shrove/shriven, too--meaning to confess sins and receive absolution.

Growing up we looked forward to Pancake Day because Mom would put coins in our pancakes. She'd make them in the shape of our initials too.

I usually make pancakes for supper on Pancake Day but probably won't tomorrow since Joe is going out to supper with a business colleague and I won't make them just for me. I don't serve anything with them, just syrup. I suppose a fruit salad or sausages would go with them.

When I felt fancy with the kids at home, I would heat up a can of blueberry or cherry pie filling, decorate the pancakes with lots of pie filling and dollops of whipped cream sweetened with sugar and vanilla extract, and dig in with them. These days, I prefer pancakes made from scratch. They are in every general recipe book.

Thanks everyone! We usually had sausage with ours, some protein to make it a meal, but one of my boys is not fond of sausage so I was looking for something else. I think I might give the ham a try.

I sometimes have peameal bacon with mine. Sometimes I will slice a banana to serve on the side. Most of the time I make my pancakes with lots of frozen blueberries so nothing extra is needed.

We usually go to a church hall for pancakes on Shrove Tuesday. We also refer to this day as "Paczki Day" You only get these fat filled jelly or custard filled delights once a year.

We used to celebrate Fat Tuesday. We made pancakes because we wanted to use up the eggs, sugar and butter. During Lent we didn't eat any rich food. I think IHOP has free pancakes tomorrow.
