I don't like the taste of dark meat poultry, so I usually substitute breasts for dark meat in chicken recipes. But the last time that I tried boneless skinless breasts in the crockpot they ended up being overcooked; there was a lot of liquid in the curry recipe, so they weren't technically 'dry,' but the texture was not tender and it was quite disappointing. The crockpot that I used tends to run 'hot' so they overcooked really fast (about 2 hours on high). In contrast, I've used that crockpot to make the exact same curry recipe with bone-in chicken breasts, pre-browned on the stove, and those breasts were very tender although I cooked them longer than 2 hours. So if you are using boneless/skinless breasts I'd recommend that you keep a close eye on them to make sure you take them out before they're overcooked.

I also do pulled pork in the crockpot when the weather is too cold or I don't have time to fuss with the smoker. I use this recipe from Food Network, I used to just cook the pork with a can of root beer, some onions, salt and pepper, the girls loved it. Elery likes it spicier, so I use this now. Spicy Pulled Crockpot Pork 3 tablespoons light brown sugar 2 teaspoons hot paprika 1 teaspoon mustard powder 1/2 teaspoon ground cumin Kosher salt and freshly ground pepper 1 3-to-4-pound boneless pork shoulder, trimmed of excess fat 2 teaspoons vegetable oil 1/2 cup apple cider vinegar, plus more to taste 3 tablespoons tomato paste 6 potato buns Barbecue sauce and prepared coleslaw, for serving Directions Combine 1 tablespoon brown sugar, the paprika, mustard powder, cumin, 2 teaspoons salt and 1/2 teaspoon pepper in a small bowl. Rub the spice mixture all over the pork. Heat the vegetable oil in a large skillet; add the pork and cook, turning, until browned on all sides, 5 minutes. Remove the pork and transfer to a plate; whisk 3/4 cup water into the drippings in the skillet. Transfer the liquid to a 5-to-6-quart slow cooker. Add the vinegar, tomato paste, the remaining 2 tablespoons brown sugar and 2 cups water to the slow cooker and whisk to combine. Add the pork, cover and cook on low, 8 hours. Remove the pork and transfer to a cutting board. Strain the liquid into a saucepan, bring to a boil and cook until reduced by half, about 10 minutes. Season with salt. Roughly chop the pork and mix in a bowl with 1 cup of the reduced cooking liquid, and salt and vinegar to taste. Serve on buns with barbecue sauce and coleslaw. Have fun! Annie

Then may I suggest a Dutch Oven? Brown the meat in a little bit of fat...oil, bacon grease whatever. Brown slowly so all sides are nice and browned. add a chopped onion a clove or so of crushed garlic, about 1 1/2 cups liquid...either beef broth wine, beer veggie broth or a mixture of some of the above and scrape up the browned bits in the pan, cover and place in a 225 oven for 3 or 4 hours, depending on the size of the piuece of meat, add your potatoes after about 1 1/2 hours....and I like to add carrots too at that time. Thicken the gravy with a slurry of a little more broth/wine and flour and serve with the meat. Much better than cooking it to mush in a crock pot. Linda C

I bet a smoker would make it perfect. I don't have one though, and I'm not trying to win any contests tonight just feed hungry mouths! And most recipes I found online said to use a dutch oven & said nothing about a rack. I just got this new pot & wanted to try it out. I ended up searing it, pouring some apple cider vinegar and 1/2 a beer over it, choosing "convection roast" on 275, and now its def sitting in all its fat slowly roasting away. I guess itll be fatty but it does smell good! Next time I'll do a rack on a sheet pan. So you don't cover it when you do that? My real question that I need to explore is what the difference is between all those settings on my Bosch oven... topic for another thread or someday finding the time & desire to sit down with the oven manual... thanks!
