Annie-Am thinking about making your salsa and the recipe/sidebar is gone! How dare they!

Can you tell me if the post on the harvest forum, dated 2012 and posted by Maina NJ is the most current/accurate rendition?

Google Annie's Salsa or check the Harvest Forum. I've never made it, but have enjoyed some courtesy of Annie. it's delicious!

Annie's Salsa Recipe

Ã¢ÂÂ¢ 8 cups tomatoes, peeled, chopped and drained
Ã¢ÂÂ¢ 2-1/2 cups onion, chopped
Ã¢ÂÂ¢ 1-1/2 cups green pepper, chopped
Ã¢ÂÂ¢ 3 - 5 jalapenos, chopped
Ã¢ÂÂ¢ 6 cloves garlic
Ã¢ÂÂ¢ 2 teaspoons cumin
Ã¢ÂÂ¢ 2 teaspoons ground black pepper
Ã¢ÂÂ¢ 1/8 cup canning salt
Ã¢ÂÂ¢ 1/4 cup fresh cilantro, chopped
Ã¢ÂÂ¢ 1/3 cup sugar
Ã¢ÂÂ¢ 1 cup 5% apple cider vinegar
Ã¢ÂÂ¢ 2 cups (16 oz.) tomato sauce
Ã¢ÂÂ¢ 2 cups (16 oz.) tomato paste
Mix all ingredients, bring to a boil and boil for 10 minutes. Pour into hot pint jars leaving 1/2" headspace, seal and process in a boiling water canning bath for 15 minutes. Adjust for your altitude.
Makes about 6-7 pints.

olychick, that's kind of confusing, I know. It's actually a recipe I got from Carol/Readinglady, and it's definitely worth the trouble. Measure the fruit and add a cup to the cooking pot. Add a cup of sugar, stir to dissolve, then add more fruit, stir, add more sugar, stir, keep alternating until it's all in the pot. That way the sugar will dissolve and not clump up or stay grainy. Sister lives in a townhouse... mini-backyard that doesn't get a lot of sun. BUT she has a great friend nearby with a BIG back yard. She lets my sister plant a garden, do all the dirty work and they share the results. One summer, had zukes up to their knees!! My sister shredded/grated a bunch, then measured out and froze in amounts just right for a loaf of zuke bread... in zip bags and stored flat. When she decided to bakes, would just put shredded zukes in a container of room temp water... for maybe 20-25 minutes... and it was ready to go.

Barb, the only problem with mixing vegetables is that some cook longer than others. Softer vegetables, like zucchini and eggplant cook faster, but they'll be far overdone before radishes, turnips, carrots, etc, I like cabbage roasted but don't cut it too thin, a wedge roasts nicely and shreds turn charred quickly. Do expect everything on the sheet to taste vaguely like cabbage if you stir them all together, though. So, if you are going to add the turnips and radishes to softer vegetables, cook them a bit first. If you are going to do a mix of harder veggies, like turnips, radishes, rutabaga, carrots, potatoes, etc., then don't cook them first, just oil and season them and roast away! Annie

Sorry I'm so late, sooz, I was weeding the strawberries and moving baby chicks to their new/bigger home. Then I planted 100 asparagus crowns. It's spring you know. (grin) I've topped the brownies with chocolate chips, but not in an effort to keep them from sticking to the wrapping. Maybe the M&M's would work, if you put them on thickly enough, but I've not tried it and I'm not optimistic, as the ganache gets pretty soft and sticky at room temperature. I've also frozen brownies by themselves, but never frosted. I've also frozen the frosting for later use, so I'm only guessing that those components would be fine, although I think the ganache might separate or even bloom. I've used a 9x13, but I'm happier with a 9 inch pan, just because I like my brownies thick. The thinner brownies in the 9x13 can get especially crunchy in the corners, if they are overbaked at all. By the time you add the peanut butter layer and the frosting/ganache layer, it makes a reasonable sized brownie in the 9x13, but I still prefer the texture of the thicker brownie baked in a smaller pan. It must be in the air, I made a gluten free banana/chocolate brownies with peanut butter frosting today, as Amanda was here with Dave and the kids for dinner. They were pretty good, even gluten free! Thanks, Peppi, for posting that. I think there's still a link at "Harvest", but they replaced the one over here with a link to the Harvest Forum.

I just made a double batch, so I'm done for the year.

Lizbeth, you can leave the sugar out if you want, it depends on the sweetness of the tomatoes and many like it better without any sugar at all. My girls, of course, liked it sweet. You may also leave out the cilantro, some people hate it.
