Annie-Am thinking about making your salsa and the recipe/sidebar is gone! How dare they!

Can you tell me if the post on the harvest forum, dated 2012 and posted by Maina NJ is the most current/accurate rendition?

Google Annie's Salsa or check the Harvest Forum. I've never made it, but have enjoyed some courtesy of Annie. it's delicious!

Annie's Salsa Recipe

Ã¢ÂÂ¢ 8 cups tomatoes, peeled, chopped and drained
Ã¢ÂÂ¢ 2-1/2 cups onion, chopped
Ã¢ÂÂ¢ 1-1/2 cups green pepper, chopped
Ã¢ÂÂ¢ 3 - 5 jalapenos, chopped
Ã¢ÂÂ¢ 6 cloves garlic
Ã¢ÂÂ¢ 2 teaspoons cumin
Ã¢ÂÂ¢ 2 teaspoons ground black pepper
Ã¢ÂÂ¢ 1/8 cup canning salt
Ã¢ÂÂ¢ 1/4 cup fresh cilantro, chopped
Ã¢ÂÂ¢ 1/3 cup sugar
Ã¢ÂÂ¢ 1 cup 5% apple cider vinegar
Ã¢ÂÂ¢ 2 cups (16 oz.) tomato sauce
Ã¢ÂÂ¢ 2 cups (16 oz.) tomato paste
Mix all ingredients, bring to a boil and boil for 10 minutes. Pour into hot pint jars leaving 1/2" headspace, seal and process in a boiling water canning bath for 15 minutes. Adjust for your altitude.
Makes about 6-7 pints.

Thank you! Beautiful horse, BTW, he's got better hair than I do, LOL. I've been having some problems logging in this morning, I thought Gardenweb had fixed that, but apparently not. So far today I've been carrying old paint cans up from the basement, the County is having their "hazardous waste" clean up on Saturday. I've made coffee, returned some pop cans, weeded the herb garden. Elery is in Jackson picking up some more of his clothes and garage stuff. Yes indeed, the party is going wild here in White Cloud. (grin) We'll have a cookout on Saturday, here at my house. Dave's birthday was the 22nd. Elery and I had an anniversary on the 10th, Ashley's anniversary was the 17th, Elery's son Chris had a birthday on the 24th and Ashley's birthday is June 6. We're having one big cookout and then they're going to help me uncover the pool. We do know how to celebrate here... LindaC, I was less concerned by what was in that shell than by what was on it. Commercial eggs have been cleaned, but free range eggs have not. The risk is slight, but if those chickens are laying eggs all over the place, not just in nests in their safe (and hopefully clean) coop, then there could be e coli from the deer, plus numerous other things. I'd be far more careful cleaning them than I would eating them. bcskye, I got the Buckeyes from a place called "Backyard Chickens". They were the only place I could find heritage breeds that would let me get an assortment instead of requiring that I buy a larger number of the same variety. They are mailed to me the day they hatch, and my mortality rates are very low, I lost 2 out of 24, one Salmon Faverolle (which are notoriously fragile) and one Silver Laced Wyandott. They are a bit more expensive than going to Tractor Supply or somewhere similar but I got to choose the breeds and the time I received them. The white "frankenchickens" that I sometimes grow for meat, those I just get locally during "Chick Days" at the local co-op. Annie

Sally, I'd just do the rinse(s) in fresh water and soak(s) tonight, most recipes call for several rinses and soaks, so however many times the recipe calls for, then finish up in the morning. The pickles are going to be brittle, so handle them carefully. This is probably too late, I'm sorry I didn't see it before, I was canning pickles! The secret to even chopping in a processor is small batches...for a bag of cranberries it would take at least 4 "batches". Another thing I have discovered is a slicing disc can do amazing things. Try "slicing" the cranberries....I'll bet you will get close to chopped texture. Remembering a friend who wanted to use the FP for shredding lettuce for tacos....so she used the shredding disc and got, as you would expect, mush. After that she never again used the processor. I explained she should have used a slicing disc but, she said I wanted shredded not sliced!

Thanks, Peppi, for posting that. I think there's still a link at "Harvest", but they replaced the one over here with a link to the Harvest Forum.

I just made a double batch, so I'm done for the year.

Lizbeth, you can leave the sugar out if you want, it depends on the sweetness of the tomatoes and many like it better without any sugar at all. My girls, of course, liked it sweet. You may also leave out the cilantro, some people hate it.
