Help me find my own recipe!

Okay, leave it to me to do something like this...lol

I lost one of my favorite recipes. It's for a lemon cookie and I know I've posted it here in the past. I made it as part of a christmas cookie exchange, one of the first ones we did, maybe 4-5 years ago. I can't remember who I exchanged with when I made it. I think Annie, or maybe Alexa?

Oh boy, I'm getting old...or blinded by love ;)

Can anybody help?

Found it! LOL

Here's what I posted in 2006, if anybody else is interested. Not sure why it didn't come up in the first search

Lori's Lemon Coolers
1/2 cup powdered sugar
1/3 cup sugar
1/3 cup shortening
1 egg
1/2 teaspoon vanilla
1/8 teaspoon salt
1 1/2 cups cake flour
1 1/2 teaspoons baking powder
1 tablespoon water

1 cup powdered sugar
1/2 teaspoon unsweetened lemonade mix

Directions:

-Preheat oven to 325 degrees.
-Cream together sugars, shortening, egg, vanilla, and salt in a large bowl.
-Add the flour and baking powder. Add 1 tablespoon of water and continue mixing until dough forms a ball.
-Roll dough into 3/4-inch balls and flatten slightly onto a lightly greased cookie sheet.
-Bake for 15 to 18 minutes or until cookies are light brown.
-As cookies bake, combine 1 cup powdered sugar with the lemonade drink mix in a large plastic bag and shake thoroughly to mix.
-When the cookies are removed from the oven and while they are still hot, add four or five at a time to the bag and mix until the cookies are well coated. Repeat with the remaining cookies.
(Makes about 4 dozen cookies)

NOTES:
*This recipe doubles easily - in fact I don't ever remember NOT doubling it!

*I use Crystal Lite Lemonade Mix.

*For an even more lemony flavor, sub some or all of the tablespoon of water for lemon juice. I used water in the cookies I sent out.

There are very few things that offer an approved choice of either type of processing. Basically it's peaches and some tomato products off the top of my head. Some food products can never be BWB and many can never be or never should be PC because of the damage done to the product. That is one reason for the across the board recommendation to stick with approved recipes, to not modify recipes, and especially to not modify the form of recommended processing. So it isn't an issue or choice that comes up all that often. But the chemistry behind it is confusing at times. Often it the addition of one ingredient such as sugar or dry herbs rather than fresh or one action such as pre-cooking that makes one recipe safe while another isn't. And some times it is just a matter of taste. With the peaches they offer both options because both have been tested and because some prefer them BWB and some prefer them PC. Personally we like the PC ones. Try both and see which you prefer. But many times it is just because there has been to scientific testing done on a certain food or recipe. In those cases, all we can do is use one that is approved. When the new, revised guidelines come out later this year (hopefully) there will likely be more changes to deal with. There are other legit sources besides NCHFP - Ball Blue Book, Ball Complete Book, Ellie Topp's book, among many discussed here. But never use "old family" or make-up-as-you-go-along or one of the how to preserve food in Alaska lady sites or ones from old cook and canning books without first having them vetted by those in the know. Here you go. Posted by Chase - Recipe Exchange Here are two recipes I use. I can mine but it may be frozen or just made up for a meal. Divide the recipe as required. Plain Italian Tomato Sauce 24 cups smooshed tomatoes whirred smoothish * 2 cups finely minced celery 2 cups finely minced onion 1 1/2 cups finely minced carrot (use just one for a bit less sweet I use 1 1/2) 12 TBSP bottles lemon juice 2 TBSP coarse salt Note: For one batch I sub hot peppers for some of the carrot and celery, just so I have a piquante sauce as well. Herbed Tomato Sauce 24 cups smooshed tomatoes whirred smoothish * 4 - 5 cups chopped herbs of your choice 12 TBSP bottled lemon juice 2 TBSP coarse salt. I use Basil, oregano and parsley but you can use only one or two or three and you don't need to use equal amounts, in other words you can go 2/3 basil 1/3 parsley. For all of them bring to a rolling boil and then lower heat to a high simmer , you want to see some action but not a full boil. After coming to the boil a foam will form, skim it off. Place your jars in the dishwasher , when the jars are done so is the sauce. I generally cook about an hour , you can go longer. I don't like to cook less than an hour 'cause I want some thickening to take place while canning so it doesn't need to much cook time when I use it. Fill jars as normal. HWB for 30 minutes. * I break the tomatoes with my hands and then use a hand blender to smooth some more. You could use a food processor. I do not seed my tomatoes but you could. Other Notes: You can vary the amounts of each of veggie (celery, onion and carrots) as long as the end result does not exceed 5 1/2 cups of veggies to 24 cups of tomatoes. Some commented that they would cut down the carrots (too sweet) and increase the onions by that same amount.

This is how I make mine,except for the pimientos and I don't always add peas.This is from the Campbells Soup site. Tuna Noodle Casserole 1 can (10 3/4 ounces) Campbell'sÂ® Condensed Cream of Mushroom Soup (Regular or 98% Fat Free) 1/2 cup milk 2 tablespoons chopped pimientos (optional) 1 cup frozen peas 2 cans (about 6 ounces each) tuna, drained 2 cups medium egg noodles, cooked and drained 2 tablespoons dry bread crumbs 1 tablespoon butter, melted Stir the soup, milk, pimientos, peas, tuna and noodles in a 1 1/2-quart casserole. Stir the bread crumbs and butter in a small bowl. Bake the tuna mixture at 400Â°F. for 20 minutes or until hot and bubbling. Stir the tuna mixture. Sprinkle with the bread crumb mixture. Wow thank you for all the responses and delicious sounding recipes. Carla you found the exact one I was looking for but think Glenda and the others are probably right in suggesting the truffle presentation as easier to transport. Alisande thank you for asking. My daughter finished two months in rehab on Friday night. She will be staying at a transitional living home beginning Tuesday. Right now she is at her sister's home and will spend tomorrow night with me. Tuesday I will drive her to Pa where she will be staying 90 days (I hope). She is still a big fragile but looks so good-clear skin and eyes and just got a haircut and looks like her old self other than a major weight loss. I am just praying that she can continue doing well but I understand how difficult it will be for her. Again thank you for asking. Back to the Cake! You guys are too funny!

So, yes, I'm getting married. September 4! We just decided that today. We're doing a small ceremony, just us and the kids, plus a few others, about 30 people total. Dinner after. Maybe a couple of days on Nantucket. We'll have a real honeymoon in the spring.

Then when the house is ready to move in, we'll have a big bash! Probably October 23. :)
