OK so that is a LAME title. Better than ÂGyrating with GyrosÂ, I would have been banned or warned. Even though it makes sense since gyros rotate on a spit. ThatÂs enough for now, ya think?
My kid loves Daphne's Cafe, a chain. He loves the 'gyros' meat. So do I. I sure do get my salt fix. Of course I want to make it at home.
I donÂt have a vertical roaster so I canÂt make it that way. I do have a horizontal roaster but IÂm afraid of the Âloaf dropping off or disintegrating. Yes, IÂm frightened of meat. Have fun with that.
Here is what I did tonight  I loved it  but I want to hear what others do. AnnT linked three recipes to me but of course being the obedient CFer I read through them, and picked what I thought would work for me.
Into the food processor I tossed:
2 onions
5 cloves garlic
Lots of salt, some pepper
Turkish oregano
Cracked rosemary
Fresh dill
Fresh mint
1 lb. ground lamb
.5 lb. ground beef
I divided the meat into two batches for the processor and then combined them since that would have been too much for my Kitchenaid. I was striving for a Âpaste consistency since I believe that is what gyros are made of. I am truly clueless. I should have called Olympia, my Greek friend.
I flattened the whole mess onto a ReynoldÂs Release foil sheet and tossed it onto my very hot BBQ grill. I flipped it over a few times, and the step I deemed most important was to poke holes into the mound to release the juices and Âdry it out. Off the grill, I further flattened it under a couple of nested pyrex pans (like five). After it cooled a bit, I sliced the Âloaf and served it with pita, cucumbers and tomatoes. The slices held up well and didn't crumble.
Looking at the pictures in DaphneÂs website I think I will lightly Âgrill the slices next time to crisp them.
So kids
(1) How does my seasoning look for ÂgyrosÂ? I think I overdid it, but in general I under season and IÂm trying to fix that.
(2) How does my technique look? What do you do instead?
Have fun! TIA!
