Apricot Pork Red Pepper

I decided to make some boneless pork chops tonite and I winged the preparation and it turned out amazing so I thought I'd share and document the recipe before I forget.

I used about a tsp of chix boullion and a 1/2 cup of water, 2 tbl of butter, a pinch of rosemary and brought it to a boil. I added a can of apricot nectar and a 1/2 cup of apricot preserves and a 1/2 tsp of red pepper. A 1/2 tsp of salt and a generous turn of fresh pepper. I reduced it by half and in the interim seared 4 pork chops to 80% then when the sauce was finished I poured it on the chops and let them come to finish and served them with steamed Jasmine rice and fresh sliced tomatoes with fresh basil and balsamic.

I felt very chef-y tonite this was no recipe just me :)
