Help, All This Chicken!!!!

I told my dh to get some chicken out for tomorrow and we would cook some on the grill. I didn't tell him to get it all out. Now I have a whole cut up fryer out plus a pack of wings and a pack of thighs. I can't cook all of it on the grill, it's just going to be the two of us and maybe my dd. Help, I don't want it to go to waste. Thanks Deb

So let's make this another question now....

What would you all have done if you had all this chicken?

it's okay Ruthie I still could use a few suggestions, I put all of it in the fridge overnight and now I'm looking at it and still am baffled!!! I know we will cook some on the grill tonight, but I'm thinking of putting some in my crockpot and making soup or something. Keep the suggestions coming. Thanks Deb

Hi Everyone who posted... Thanks for the help... She seems to still be doing just fine. I still have her in a box on the kitchen table... she doesnt mind... but my wife sure does.... I figure one more day until my days off when I can make a little makeshift area next to the pen where she can be isolated until the wound heals... her appetite and all is still fantastic... I talked to a friend locally who told me that just about anything you would use on a human cut would work. I used hydrogeine peroxide and some bactine spray.... and will nurse her along until it no longer has a bullseye on it for the other chicks to peck!!! Thanks a lot... Oh by the way... I also ordered some of that rooster booster just to have in case something like this happens again....

Took your survey! :) To add to it--we keep our mixed flock of chickens as pets who happen to give eggs, and also they are great as little garbage disposals for table & garden scraps--which in turn gives us better eggs and chicken poop for the garden, which they also get a chance to 'till' at the end of the growing season. :) While ours are for entertainment/pets/eggs, when I was growing up we also had some for meat, which we killed & processed ourselves. Plucking chickens isn't high on my list of 'fun things to do' but I'm glad I know how--and home-grown meat tastes awesome and is far and away better for you. I admire people who raise their own animals for table. Our daughter is now 12 and has been around chickens her whole life, her observing and participating in the life cycle (we hatch chicks every year and do our annual 'Chickam' webcast of the hatch & next 8 weeks of life 24/7 which has been VERY popular) has really helped her understand and better mesh with the world around her. As a side benefit it's also helped her with science projects and simplified 'Facts of Life' talks! Yay, roosters! :) Velvet ~:>

There are some excellent extension publications and sites online dealing with processing home meat chickens. Seriously think about NOT biting off more than you can chew at any session and particularly at your first session. I have never done more than five at once even with help. I prefer plucking to skinning as well, but the kill/scald/gut/pluck/pinfeather process is time consuming. If you kill out more than four or five, you may end up slaughtering animals and wasting them. Learning to gut them out the very first time is tedious and you need to be careful so as not to contaminate your food with their fecal contents. You certainly don't want to kill more than you have freezer space for. It's NOT a fun process in any sense of the word. It isn't enjoyable watching them in their death throes. Humanely slaughtering involves a technique I can't do well, and I have my son do it. You would be surprized how an axe can bounce off feathers. I had to have my husband finish off a kill once, and for pity's sake he is a butcher and he grew up in the family slaughterhouse and I caught him apologising to the poor rooster for our clumsiness. I incubate my own chicks, so get a 50 percent male outcome. ONe has to make a committment to how they'll handle the rooster situations. No, don't process the bantams. Many people love them for pets. Just find them a good home. I don't slaughter much anymore, but sell the full sized roosters as well. I like to know I have meat chickens up there, but it really is a major committment to take it seriously.

I would cook as much as I could on the grill and load the rest in the oven or the crock pot or even just boil it. It will be good to use in many casseroles and that sort of thing. It's nice to have precooked meat in the freezer to use on the spur of the moment.

Marinade the wings, cook them and them put them in the freezer as hot wings.
Cook thighs & rest of the chicken you cannot eat in the oven. After it's baked place in freezer bag. When used, place in crock pot with favorite BBQ sauce. It comes out so good!

Thighs cooked in the crockpot or boiled make wonderful chicken enchilada casseroles. Make the sauce with lowfat cream of chicken soup, shredded chicken, peppers and onions. Add other spices to make it as authentic as you dare. Layer on tortillas and bake. In the last 15 minutes or so, layer on cheese. Serve with sour cream and a side of rice and beans.

Boil it all up and divide it for several recipes. you could make a chicken and dressing casserole and freeze it before cooking( I use the disposable aluminum foil pans), you could also make a mexican chicken casserole,and freeze before cooking. A chicken and rice casserole, etc.....the list goes on and on. We eat alot of chicken at our house. Lots of casseroles. I usually boil up all my chicken that will not be used for grilling and make up the dishes before hand..... Freeze, and taa-daa..... no cooking on those nights that I am pressed for time due to ball games,practices, cheerleading, etc.......

Mexican casserole:

3 cups of chicken cubed
1 can of creeam of mushroom soup
1 can cream of chicken soup
1 can rotel
6 - 8 american cheese slices
4 - 6 pepperjack cheese slices
1 bag of chips (Dorito's or jsut nahco cheese tortilla chips)

Layer chips on bottom of casserole dish
Mix: chicken, soups, and rotel
pour in pan, layer cheese on top and then add more chips to cover soup mix. cover with aluminum foil and bake for 20 - 30 minutes then remove foil abd bake another 5 minutes or until chips are browned. If I am going to freeze this, I usually Do not add the chips and cheese until ready to cook. I just layer soup mix in bottom of pan and cover with foil and freeze..
