about that spaghetti squash

We ate both, some last night, and the rest tonight.

My daughter is vegan, and thus we adjusted all your ideas... and came up with:

Cooked it cut in half, cut side down in microwave. Just could not see turning the oven on... while the temps are so hot, and the AC is trying to keep it cool.

Scraped it out, and drizzled with grape seed oil and browned sliced garlic.

Seasoned with salt and pepper. It was delish. Even the vegan doggies ate it. :)

Then the rest, we cooked like this:

sliced garlic, diced tomatoes and cut up basil leaves

Browned the garlic in grape seed oil, added tomatoes, and basil leaves

seasoned with salt and pepper

poured the rest of the spaghetti squash over it, put on lid, and heated all through.

It was yummier than the day before. :)

should have taken pictures....

Doggies again got squash, but before it was seasoned.

Thanks you everyone for the ideas and recipes. I will try some of the others, when vegan daughter is not eating with us.
