Bobby Flay's Throwdown

I don't watch this much, but he had a segment last night that looked great. Not his, but the women he challenged.

The challenge was for Arepas. I had never heard of them, but most of our ethnic food is Mexican or Asian here. The ladies had a pork filling that they used with fried plantains, black beans and cojita cheese. Does anyone have any idea what type of filling they would use? Assuming you saw it of course, or is there a "traditional" shredded pork dish, from Columbia or Venezuela? It started with a trinity, and some spices, cooked down and then they added the shredded pork, that had been slow roasted in the oven. I know this is a wild shot, but their restraunt was so busy and everyone seems so knowledgable I thought it might be a common filling, you could recognize. Thanks if you have a clue of what I am rambling about and can help. When I google it, it is just the "bread" that comes up.
