ham recipes needed

Hi,

I just bought a really big ham (really good sale) and I'm wondering if anyone has any tired and true freezer recipes or we'll be eating baked ham for a week.

It's good stirred into macaroni and cheese with a few sauteed onions and such - then bake. We also freeze small packages of thickly sliced for dinner or breakfast, and thinly sliced for sandwiches at a later date. Just put in ziplocks and remove ALL the air.

My favorite has to be a Potato, Onion & Ham au Gratin, but without cheese. Saute 4 large (yes,4) thinly sliced onions in butter. Thinly slice 6-8 peeled potatos. Put 1/2 the thinly slice potatos in a shallow dish that has been sprayed with pam - cover the bottom like a crust. Layer 1/2 the onions on top; then thinly sliced, or diced, ham; sprinkle with salt and pepper (to taste) and sprinkle with a very small amount of nutmeg; top with the rest of the sauteed onions. Top with the remaining potatos (I make sure I have enough to totally cover, like another crust). Making sure you wet all the potato surfaces, pour 1 1/2 cups heavy cream over the top and sprinkle with more salt and pepper. Bake uncovered at 375 for approximately 1 1/2 hours basting occasionally with an additional 1/2 c. or so of cream (You'll use no more than 2 cups total). It will be done when the potatos start turing a golden brown.

Quite simple when using a processor or vegie slicer to do all the cutting and really very good. Careful not to over do the nutmeg and really the onions are not overpowering. My daughter HATES onions and likes this dish. I've also been known to put spinach in the middle with the onions - just thaw and squeeze all the moisture out.) I think I cut the recipe out years ago from a Williams Sonoma cookbook advertisement.

I always buy a big ham when it's on sale, cut it into smaller meal size portions for about two meals worth and freeze in ziplock. I thaw and bake as is or include in casseroles later. I've never tried to actually pre-make anything.

One of my favorite recipes is what I call scalloped ham and potatoes. I don't have set amounts. The only ingrediants are sliced potatoes, cubed ham or small pieces of sliced ham, and 1 or 2 cans of cream of mushroom soup. I slice enough potatoes to fill a 9"x13" cake pan about half way and then I add the ham (probably about a pound worth, but you can add more or less.) Stir together with the potatoes and one or two cans of the soup (just use enough soup to coat the potatoes). The soup can be thinned with a small amount of water if desired. Cover and bake in a regular oven or microwave until the potatoes are done. If the soup is too runny, bake it longer. Stir one or two times while baking. For seasoning, you can add a little pepper if desired. Ham and the cream of mushroom soup usually contain a lot of salt so I don't add any extra.

I've cooked ham exactly once but can say everyone, including me, raved. This recipe is not from the internet, but rather from the world wide web: City Ham Recipe courtesy Alton Brown 1 city style (brined) ham, hock end 1/4 cup brown mustard 2 cups dark brown sugar 1-ounce bourbon (poured into a spritz bottle) 2 cups crushed ginger snap cookies Heat oven to 250 degrees F. Remove ham from bag, rinse and drain thoroughly. Place ham, cut side down, in a roasting pan. Using a small paring knife or clean utility knife set to the smallest blade setting, score the ham from bottom to top, spiraling clockwise as you cut. (If you're using a paring knife, be careful to only cut through the skin and first few layers of fat). Rotate the ham after each cut so that the scores are no more than 2-inches across. Once you've made it all the way around, move the knife to the other hand and repeat, spiraling counter clockwise. The aim is to create a diamond pattern all over the ham. (Don't worry too much about precision here.) Tent the ham with heavy duty foil, insert a thermometer, and cook for 3 to 4 hours or until the internal temperature at the deepest part of the meat registers 130 degrees F. Remove and use tongs to pull away the diamonds of skin and any sheets of fat that come off with them. Heat oven to 350 degrees F. Dab dry with paper towels, then brush on a liberal coat of mustard, using either a basting brush or a clean paint brush (clean as in never-touched paint). Sprinkle on brown sugar, packing loosely as you go until the ham is coated. Spritz this layer lightly with bourbon, then loosely pack on as much of the crushed cookies as you can. Insert the thermometer (don't use the old hole) and return to the oven (uncovered). Cook until interior temperature reaches 140 degrees F, approximately 1 hour. A canned ham is precooked.......in truth you don't need to cook it at all. Years ago there was a supplier who always gave my DH a canned ham for Christmas. The ham is surrounded with a gelatin-ized juice, which makes it very un appetizing, so the first one I glazed with brown sugar and mustard and baked it until it was nicely browned.....and the ham was dry and over cooked....good for not much more than grinding up and making ham salad of. Then I learned to just warm it enough so the gelatin melts off, and any seasoning would come on the sandwich. So your answer is....don't "cook" it....just put into a 350 oven for about 30 minutes. If you insist on a glaze....mix brown sugar and dijon mustard half and half and spread over the top....after the gelatin has melted off....and cook for another 20 to 30 minutes.

Sub the Corned Beef for Ham. ***************************** Here is a recipe for Lou's - Pasta e Fagioli ( I've been spelling it wrong!) 1 lb. Great Northern Beans (soaked overnight & drained) 3 quarts of water Or use your canned Northern Beans or, Chick Peas ( Ceci ) 3 Garlic Cloves (chopped small) 3/4 Cup of Tomatoes, diced small 1/3 cup of shredded Carrots 2 Whole Cloves 1/2 pound of cubed Ham or more ,to taste 3/4 cup of Onion chopped small 3 Bay Leaves 1/3 cup of Instant Mashed Potatoes ( or more if needed ) 3 tablespoons of Chicken Flavored Soup Base or 2 cups of Chicken Broth. 3 cups( or more) of cooked Elbow Macaroni or # 9 Spaghetti Salt and Pepper to taste, when beans are almost done. Cooking: Put 3 Quarts of water in a pot, large enough to hold 2 more quarts. Add the beans and start cooking them. Add all the ingredients , except the Ham and Mashed Potatoes. Cook the Beans till they are almost done & add the Ham. When the Beans are cooked soft, add the Inst. Mashed Potatoes, and more if needed to thicken slightly. Add the cooked drained Spaghetti or Elbow macaroni. Add more water if and when needed. You can sprinkle some Parmesan cheese if you like , when serving. Makes about 8 servings, maybe more. Fresh ham is simply pork roast. It's the uncured and unsmoked butt/rear leg portion of a pig, so it can be cooked like any pork roast can be cooked. You could grill it, bake it, smoke it, whatever you like. I usually put mine in a pan, sprinkle with salt and pepper, add a handful of fresh herbs on the top. I like to slice an onion and use it as a "rack" to keep the pork up out of the juices, and some carrots are good here too, as are apples. Add about a cup of apple cider or broth or water, cover with foil, cook until done, I'd say maybe 2 and a half hours at 350F. If you like you can uncover during the last half hour, crank the heat up to 400F or so or make it crisper, that's especially good when there is still skin on the ham. I serve ours with mashed potatoes or twice baked potatoes, butternut squash and sautéed apples, a very yummy autumn/winter meal. It's also good as a cider brined roast, I use this recipe, which came from Epicurious and Cooking light, they're extremely similar, minus the potatoes in Epicurious' version. Cider Brined Pork Roast 1 cup (packed) light brown sugar 1 cup kosher salt plus more 8 bay leaves, divided 3 tablespoons coriander seeds, divided 1 teaspoon black peppercorns plus more freshly ground 1 quart unfiltered apple cider 1 8-bone pork loin roast (about 5 pounds), chine bone removed, rib bones frenched, tied with kitchen twine 6 Yukon Gold potatoes (about 2 pounds), unpeeled, quartered 4 medium red and/or yellow onions, halved, stem ends intact 5 tablespoons olive oil, divided Bring brown sugar, 1 cup salt, 2 bay leaves, 1 tablespoon coriander seeds, 1 teaspoon peppercorns, and 2 cups water to a boil in a medium saucepan. Reduce heat and simmer, stirring occasionally, until sugar and salt dissolve, about 4 minutes. Transfer brine to a large bowl and add cider and 2 cups ice. Let cool. Place pork and brine in a large (2-gallon) resealable plastic bag. Seal bag and chill at least 8 hours. Remove pork from brine and pat dry with paper towels. Let sit at room temperature 1 hour. Toss potatoes and onions with 4 tablespoons oil in a large roasting pan or on a large rimmed baking sheet; season with salt and pepper and set aside. Transfer pork to roasting pan and nestle in among vegetables. Tuck remaining 6 bay leaves under kitchen twine over top of pork. Wrap bone tips with foil to prevent burning and roast, turning vegetables halfway through, until an instant-read thermometer inserted in the center of pork registers 140°F, 60–75 minutes. I like to grind some and freeze and then pull out whatever amount I want to make ham salad. My family loves it for lunch sandwiches.

I like to make this with ham:

Myrna's Vermacelli

8 oz box vermacelli
1 cup minute rice
1/2 cup butter or margarine
2 cans french onion soup
cubed left over ham (1 pound or more to taste and appetites)
1-2 bunches of green onions - sliced (green part too)

Melt butter or margarine in a large fry pan ( I use my electric frypan - A non stick wok works too) Break vermacelli into 2-3 inch lengths and brown in butter with the rice until golden (like rice-a-roni). Stir often and watch it because it will burn.

Add the soup, 2 cans of water and the ham. Cover and cook over low heat until the noodles are tender and the water is absorbed - about 10 minutes or so. Just before serving stir in the sliced onions.

This makes a bunch and is a huge favorite at our house.
