sweet corn???

I'm planning on freezing some sweet corn whole (corn on the cob). I know you "blanch" before freezing. But..the research I have done says to put the corn into boiling water for 10 to 11 minutes (depending on the size of the ear). Well, to me that isn't blanching..that would "cook" it....I thought blanching was getting something hot in a hurry and then cooling it down in ice water. Anyone here try freezing corn on the cob?

You need enough time in the boiling water for heat penetration to destroy the enzymes. Your times are correct and just be sure to count the time from when the water comes back to a boil, not when the corn goes into the water.

Be sure to chill the cobs of corn as soon as they are out of the boiling water (chilled water with ice or blue ice - refreezable plastic "ice" - in it) to prevent the corn from tasting more like the cob than corn.

I've just begun reading that book. I never got a chance to start earlier in the year but finally broke down and made time a week or so ago. (I usually save most of my reading for late fall/winter when I'm not up to my eyeballs in chores.) I'm only a third of the way through the book but am love, love, loving it! If only I could keep my eyes open longer while reading in bed, I'd be further along. I can't wait to read her take on flour corn. Thanks for the link to her site. I didn't realize she had one (or I did and forgot). So, George, have you experimented any with flour corns yet? I'd love to hear your take on it. I remember you mentioning wanting to try parching. Merit is a real antique among hybrids ( Asgrow released it in 1961). Asgrow, Peto, and Royal Sluis were acquired by Monsanto and combined into Seminis in the 90's. Most Asgrow intros have been discontinued. Most of the big seed developers are chemical companies and they have been merging for the last couple decades. Monsanto is currently being considered by Bayer for a buyout. whichever way that goes, Seminis has been concentrating on the commercial market and discontinuing varieties that are no longer competitive. They don't appear to have a single Su in thier current line up. Sometimes a variety that is popular with home gardeners will be picked up by a minor company wwhich caters to home gardeners.

im not sure i would waste such a small space.. and such a minimal potential crop ... imo.. you could get a lot more food out of other smaller potential crops ... anyway ... if you insist ... just jam them in there.. and see what happens ... one of the reasons you see so many roadside corn stands in season .. is because you need hundreds of acres to get enough to sell .... and not many peeps invest in planting such in there small suburban backyards ... ken

Jimmy, My neighbor and I tried "gotta have it" and we didn't like it, no one did. It was very sweet but a weird sweet and can only describe it to dumping a few packs of artificial sugar on the cob and reminded me Saccharin, and it didn't taste much like corn. I've been eating Nirvana all winter long, it was the only corn I ever had worth blanching and cutting off the kernels to freeze, and still so good. Here's a couple of evaluation studies with Nirvana included and both gave Nirvana the highest score for taste and tenderness. Supersweet Sweet Corn Cultivar Evaluation for Northern Indiana, 2015 conducted by Purdue University. 2016 Northern Organic Vegetable Improvement Collaborative which included researchers and educators from Oregon State University, University of Wisconsin-‐Madison, Cornell University, Washington State University, Organic Seed Alliance, and the USDA. I'm up to growing other cultivars from these studies including Miria 301BC mentioned, including some from Purdue's other yearly evaluation reports they do one each year. Here's a few from Purdue. Purdue 2017 Purdue 2019 This year Solstice sweet corn received a 5 on flavor and don't believe I've seen any 5's, so next year I'll try Solstice but keep my Nirvana too!

Many people just toss the ears with the husk on in a freezer bag and freeze. They say that's closest to garden fresh and doesn't have the over cooked taste of corn that has been cooked for 10 minutes. And it sure is easy!
I have never done it but have eaten it when other people have frozen it that way. I wouldb't be keeping it for more than 7 or 8 months though....not that it would hurt you but the enzymes that you haven't destroyed by boiling it might cause a loss of quality.

I did the ten minute thing...I'll say this...they look good lol

I know about the "husk" freezing thing and I don't think I would ever do that...takes up way too much space for one thing..and all the researching I did on this says that this is the absolutely worst way to freeze corn. I'm not going to even try it...

4 minutes is plenty for kernels, 7-11 for ears, depending on the size.
