sweet corn???

I'm planning on freezing some sweet corn whole (corn on the cob). I know you "blanch" before freezing. But..the research I have done says to put the corn into boiling water for 10 to 11 minutes (depending on the size of the ear). Well, to me that isn't blanching..that would "cook" it....I thought blanching was getting something hot in a hurry and then cooling it down in ice water. Anyone here try freezing corn on the cob?

You need enough time in the boiling water for heat penetration to destroy the enzymes. Your times are correct and just be sure to count the time from when the water comes back to a boil, not when the corn goes into the water.

Be sure to chill the cobs of corn as soon as they are out of the boiling water (chilled water with ice or blue ice - refreezable plastic "ice" - in it) to prevent the corn from tasting more like the cob than corn.

Only certain varieties of sweet corn will have their flavor affected by a nearby field corn planting. These are the ones labeled "super-sweet," "sugar-enhanced," etc. That's why some of the advice above is incorrect -- though it would be true for "ordinary" vegetables (and non-enhanced varieties of sweet corn, for that matter). You could try timing your planting to avoid cross-pollination, but I wouldn't rely on starting indoors; direct-sown corn catches up quickly to transplanted. Or simply plant a variety of sweet corn that doesn't become starchy if cross-pollinated. Some people prefer these; their disadvantage is that the corn must be eaten very quickly after harvest, while the enhanced varieties can keep their sugar for days. Indian Corn is NOT sweet corn for eating fresh, it's for grinding into corn meal. You can make "elote" (boiled green field corn), but it doesn't taste much like sweet corn. I don't bother with corn because it's too much work and space for the amount of food you get.

Actually it depends on the variety of corn, some of the newer sweet corn will hold it's sweetness for a few days, providing it is cooled. Out on the counter is not the place. When you remove the husk, you will loose moisture, the husk helps to keep that moisture in. Same thing with the shanks, which most grocery stores never see. The older varieties of corn, you needed the water boiling before you picked for the perfect corn taste.

im not sure i would waste such a small space.. and such a minimal potential crop ... imo.. you could get a lot more food out of other smaller potential crops ... anyway ... if you insist ... just jam them in there.. and see what happens ... one of the reasons you see so many roadside corn stands in season .. is because you need hundreds of acres to get enough to sell .... and not many peeps invest in planting such in there small suburban backyards ... ken

Many people just toss the ears with the husk on in a freezer bag and freeze. They say that's closest to garden fresh and doesn't have the over cooked taste of corn that has been cooked for 10 minutes. And it sure is easy!
I have never done it but have eaten it when other people have frozen it that way. I wouldb't be keeping it for more than 7 or 8 months though....not that it would hurt you but the enzymes that you haven't destroyed by boiling it might cause a loss of quality.

I did the ten minute thing...I'll say this...they look good lol

I know about the "husk" freezing thing and I don't think I would ever do that...takes up way too much space for one thing..and all the researching I did on this says that this is the absolutely worst way to freeze corn. I'm not going to even try it...

4 minutes is plenty for kernels, 7-11 for ears, depending on the size.
