Mmmmmm! Chilled Raspberry Soup! (recipe & photo)

This is perfect for the hot and humid weather we are having! I used the recipe on allrecipes as a starting point, but substituted raspberries for the original recipe featuring strawberries and made a few other changes too, according to what I had in the kitchen. The recipe below is how I made it.

Raspberry Soup

2 cups frozen raspberries--they were kinda melty and gooped together, so I measured them at the 2 C mark on my blender

2 C low fat milk

1/2 cup cream

1/2 cup non-fat sour cream

1 T superfine sugar

Puree strawberries, milk, cream and sour cream in a blender until smooth. Add sugar and blend about 30 more seconds. Chill 8 hours or overnight in refrigerator before serving.

Top with a dollop of sour cream.

(I forgot to top it with cinnamon and/or freshly grated nutmeg)

Oh so yummy!!
