This was my German Grandmother's recipe. We still love it.

SAUER KRAUT SALAD

1 #2 Can Sour Kraut
2 Cups White Sugar
1 Cup Chopped Celery
1 Cup White Vinegar
1 Cup Chopped Green Pepper
1 Cup Chopped Onion
1 Chopped Red Pepper

Drain Kraut, rinse well and set aside to drain again. Add the Onion, Peppers, and Celery and stir to mix.

Combine Sugar and Vinegar and bring to a boil, stirring to dissolve sugar. Remove from heat and set aside to cool completely.

Pour Vinegar Mixture over Sour Kraut and stir well. Cover tightly and place in refrigerator overnight for flavors to come out.

If you want TOTALLY easy, make a willted spinach salad. Marzetti's makes a Bacon Spinach Salad dressing. You could, just serve the dressing over the spinach or greens if it was beastly hot. OR you could heat the dressing and wilt the greens.

Just a thought as you are looking for easy. This dressing is in many stores here in Minnesota. They also make a honey balsamic to which you could add bacon.

German potato salad....someone posted a yummy one on the bacon thread...
And somewhere I have a recipe for a bar cookie with an apple filling....sort of a kuchen...cream cheese, apple with a crust and crumbs on top.
Anyone recognize it?I have looked and can't find it....and hate to lose it!

I lived in German town (East 86th St.) in NYC for a few years. I enjoyed their Apfelstrudel and Topfenstrudel.

I don't have recipes for them. I am sure it wouldn't be difficult to Google.

I don't know if Red cabbage would work for a salad. Everyone except me seems to love it. I don't have a recipe. Sure someone here does if you want to use it. Seems it would at least be easy.

At beverlyal's suggestion I Googled German Red Cabbage salad. Here is a link to one that can be made ahead - and even frozen. I am offering this as yet another suggestion, but I have not made it myself.

I call that sweet and sour red cabbage.
How about this one....very similar but it's served cold, like a salad....but I think I might add about one more tablespoon of vinegar.

Thanks! It just might be Skeip's saurekraut salad. It looks easy, and will fit ok with my prep and storage space. I'll still consider other ideas!

I'll second Steve's salad. My German GF makes a similar one but mixes half sauerkraut and half pickled red cabbage (also rinsed and drained).

Apfelstrudel is a bit of work to make, and it is somewhat difficult to roll up, if you are making it for the first time. I buy mine at an Austrian strudel house in Culver City, but I've also made it.

My German grandmother made German Chocolate Cake, which was a chocolate layer cake with a sort of caramel like icing and filling with pecans and coconut. I linked to a recipe below that looks similar to what she made. This cake travels well, and she frequently brought it to family gatherings in the park. It's good for a picnic.

The only salad of hers I remember was potato salad, and I don't have her recipe for that either :(, but I'm sure you can find one, if that is what you want to take. We were never that big on cabbage, except for sauerkraut.
