canning vs. freezing?

I have a question for you experienced canners out there. I have frozen peaches a few years ago but have not canned peaches. Which would yield a better product - freezing or canning? Please pardon my ignorance here...and thanks for your help - I have a tree thats almost ready!

Peaches is one product that is good both canned and frozen. Frozen is best IMHO because they have a fresher taste.

Hi There are sooo many factors involved it's difficult to predict. Obviously at 32 water turns solid which causes plant cells to break. The further below that the more solid the water becomes resulting in even more damage. Temperate plants react by drawing liquids into the protected root system. Which stops crystals from forming. The most adapted by far are of course fir trees they can remain green by adaption of the leaves to shed crystals of ice. Deciduous trees merely go dormant Tropical plants can't do this because they have no need to do so?? Though note tropical plants that occur at high altitude. it's winter every night lol. Though they can tolerate low temps can't tolerate seasonal change nor high temps. For the gardener all you need to know is the tolerance of the particular plant. Covering to protect from frost certainly helps down to 32 below that there is resulting cell damage. So like temperate plants they draw as much water as possible into the roots at around 27 it is no longer possible so the extremities are sacrificed to protect the roots. if the ground freezes it can no longer do that. the entire plant will die. You can add heat to your covering but this means the plant will continue to respire which means the roots are not protected. May or may not mean even more damage. The water trick is obvious in that it keeps temps ABOVE crystalization unless the temps fall below around 25 which means ice will form resuting in more damage. So it's all up to ma nature and how mean she wants to get?? lol I wouldn't get too far into the mechanics of it anyway There's only so much you can do?? gary

Hey Mike! I'm sorry, I'm stumped on this one, but I just wanted to say hello and let you know that no one's ignoring your excellent question--probably no one who's read it knows the answer yet. But I should thank you because I'm moving into my new (new to me, but a 1979 home) manufactured home in January, and that's something I plum forgot to ask the sellers--how the pipes are wrapped for winter! I'm considering a tankless hot water heater down the line, waaay down the line, but pipes have to be wrapped no matter what. I hope someone here will be able to answer your question!

I agree with Dawn and Amy above, but would like to say one more thing. As Dawn told you, start simple with things you can do in a boiling water bath and that may be all you ever want to do. I have a pressure canner, but rarely use it. I did over 200 jars last year and never took the pressure canner out of the box. We like pickles, jams and jellies, butters, and especially salsa. It doesn't break my heart to open a can of tomatoes or tomato sauce to use in a recipe, but I like my salsa better than any I can buy, so that is what I use my tomatoes for after we have eaten all of the fresh ones we can handle. Last year I washed, and froze a few whole tomatoes in gallon ziplocks. A couple of weeks ago, I needed the freezer space and most of those tomatoes became homemade tomato soup, also better than what I can buy. I find that condiments, or those little extra things add to a meal. When I look at the cost of those 'special' things, they always seem to be expensive in the grocery store. Compare the cost of salsa to a can of tomatoes for instance, and decide which things will be best to spend your time doing and using you home grown produce for. My point is this: A lot of people have invested in a pressure canner that rarely (or never) gets used. Save your money for now and just do the things you can do without a pressure canner, or find a friend that has one and do a batch or two with her to make sure that is what you want to do.

I agree that the taste is fresher. That said, I always can mine to reserve the freezer space for meats, berries, breads, etc that aren't good/can't be canned.
And.........I can grab a jar of peaches and take it to work. Breakfast to go!

I just got a bushel of Red Haven peaches today. Some I'll make peach butter with, other's I'll make into peach preserves and the rest will be a few desserts and canned. I never have enough freezer space and I like opening a jar when the mood strikes.

I do some of both. I like the fresh flavor of the frozen and the kids eat the half frozen ones like popsicles. But then the canned ones still taste better than the ones that are commercially canned so to save room and for convenience I do can some. Last time I canned them I used honey for the light syrup, they really have a good flavor and you can taste just a hint of honey, okay for the girls but won't work for the baby. I also made a bunch of peaches into babyfood for the baby to come in November.

I prefer frozen peaches also, they just taste fresher to me.

Thanks for all the input - I think I may do both this year because I too need to conserve space in the freezer - hubby is an avid hunter and you never know what he's going to put in there! Nancy - I've never tried peach butter - is this a recipe you can share? Sounds great...

I LOVE canned pickled peaches, but I can't get Freestone peaches that are the best to pickle.
