Annie's jam pot and other jamming ??

Lpinkmountain says that Annie has a cool jam pot that makes jam more quickly. What kind of pot does that? I assume one wants it wide to allow plenty of area for evaporation but not too wide because I've noticed that the boiling jam tends to spit if it isn't deep enough in the pot and the thermometer doesn't work well if the bulb can't get deep enough.

What works best for skimming the foam off the jam? I have trouble getting all the foam without taking away too much of the jam. Why does the foam need to be skimmed anyway and do I need to worry about getting every last bit?

Some of the recipes are very specific about the headroom to leave in the jar. I've seen 1/2", 1/4" and 1/8". Do I just need to make sure it comes between those numbers or is there some reason that one jam needs 1/2" and another needs 1/8?
