Non-aerosol cream whippers - which to choose?

Ok, so I ran across a recipe for Blue-cheese whipped cream and now I NEED to have a non-aerosol whipper to play with.

Anyone have an opinion on these in terms of which might be the best to try (iSi, Liss, etc)? Stainless or aluminum??

Easy to clean??

I've been at work all day and just now looked at this thread, and I'm simply overwhelmed by the response and the gorgeous pictures. Thank you all for your kind generosity and willingness to help. Jackie, your roses are incredibly gorgeous, every one of them. In one picture I can see part of your garden in the background and that tells me everything. I see green, lush and beautiful. When I look outside I see a parched landscape where even the toughest vegetation is struggling to stay alive. When I tell you that Caldwell Pink did not do at all well here that will give you an idea of what I'm facing. White Pet still looks okay but has not bloomed since spring. My two Le Vesuve and Mutabilis are doing okay but are watered every day, like the rest of my garden. Mutabilis gets shade from the early afternoon and Le Vesuve from late afternoon which helps quite a bit. Susan, Ivor's Rose is available from Chamblee's under the name Flamenco and I really like it, but I'm afraid it will be bright red in my alkaline soil rather than the beautiful purplish red on HMF, which has happened to me with several other roses. I had two Mrs. Dudley Cross which did well before the drought but folded up after that, with endless mildew to boot. I love that rose and am really sad that I had to give it up. The flowers were so beautiful when at their best. Judith, I already have two plants of Mrs. B.R. Cant and it has been very healthy for me, although the flowers have crisped lately. Still, I consider it a very good rose for my garden. After due consideration, I've decided to choose Monsieur Tillier based on everyone's input about this rose. Kim's was the deciding vote because he understands intimately what my situation is, living in a similarly awful one himself. A water main burst today near my town and another one in San Diego, which is causing flooding and gigantic water loss when every drop of water is desperately needed here. The politicians who have allowed the infrastructure to collapse to this extent, where there is no money for vital repairs, all for their shortsighted and selfish political ends, without giving a darn about the people they are supposed to serve, have much to answer for. @mango_kush yes we have problems with fruit flies here also, but they don't attack the Ruby Supreme guava. They do attack other guava varieties with a strong guava smell. I have even picked rotten guavas off the ground and inspected them for maggots and found none just sugar ants. The soursop has been that height for over 3 years now. When it reaches the height of the house the cold weather kills that wood. All I ever do is trim any dead wood when it goes dormant. This soursop is a Filipino variety. I planted it about 2 feet from the house on purpose so that it could survive the cold weather since its extremely sensitive to cold temperatures. @pulglvr1 you can try contacting the company that makes the product using the link below. When I first saw the product I knew that it was perfect for protecting plants and this past winter definitely proved that to me. Be aware that just covering your plants using this product alone may not enough. You must also provide a sustainable heat source such as a light bulb of sufficient wattage. I did lay this bubble blanket along the ground to the window sill on the west side of the house to protect sugar apple and pineapple plants. From the picture you can see that all the plants below the bubble wrap survived without any damage even though I did not use a heat source. The bubble blanket was able to trap the heat from the ground and the cinder blocks to keep the plants alive. If you look closely you can see that 3 of the pineapple plants have fruited. In front of the wood fence at the far end of the house are the rolls of the bubble wrap ready for duty this coming winter. Here is a link that might be useful: Astro Cooler

Bellsmom, Ice cream freezers are a pretty mature technology, and Cuisinart isn't likely to turn belly up during your warranty period, so why not? :) I like that the 100 has the different paddles, though I don't know how big a difference it makes. I donated counter space that wasn't all that useful anyway to mine, but I wish it did a magic appear/disappear act. :) Yours should be fine in the pantry if you have a solid counter and a plug. It's sure to vibrate a lot and needs some clear space for the circulation of warm air (i.e., not right up against your foodstuffs because they want cool pantry, and a freezer will warm it up). Those are the biggest problems with putting it in the pantry. Do you have a laundry room where you could put it? Maybe keep a cloth over it when not in use to keep away lint, etc. Or even a protected porch? The lack of water shouldn't be a big issue because of the removable bowl. You can take all the main parts to the sink for cleaning (maybe keep a little dishpan with the machine to dump them in, and just bring a sponge or rag and a small bowl (or the dishpan) of water to the machine for wiping it down. Kids love making frozen treats, and it's also a great way to teach them about what's in what they're eating. Be really honest with yourself, however. Do you really want to be carrying the ingredients back and forth? And the clean-up? Would you rather have it on the kitchen counter? Would giving up freezer space be no issue because you'd be using the space you usually fill with bought ice cream for the bowl of a non-freezer model? Will you use it more if it's just ready to go? Will you use it less if you have to unearth the bowl from a pile of stuff in the freezer? I know the arias are beautiful, but imagine yourself doing the conducting. Read through the instructions online and imagine yourself doing the work. See which model you'd really rather have to fit into your real life and way of doing things, and your particular cooking setup. You're already well informed. That's the next good step to making a choice.

I have the 5200 and it is just fine. I'd like to have the 750 but just couldn't justify the extra and also because I had just seen the 5200 demo'd at Costco that is the one I went with. I also have the second dry container and I do use it. I often use it to grind up a rock hard piece of parmesan cheese for spaghetti or dice up an onion for a recipe. I once put a leftover hunk of roast that was pretty hard from being in the refrigerator and whirred it so it was like pulled beef bbq. Not sure I'd do that again though it did work it was a mess, lol. I must have been desperate for something to make for dinner. I leave it in my laundry room that is just off my kitchen. I can leave it out and clean it in there since it has a sink. If I put it away I'd never use it and I don't want it on my kitchen counter. I do make smoothies in it but it has been so cold lately I can't stand the idea of a cold smoothy right now. What I have discovered is that buying frozen fresh fruit in the big bags at Costco is better for me as I would start to waste fresh fruit and that pains me so much to throw anything away. I do buy fresh bunches of bananas and when they start to go bad because I can't use them fast enough I peel them and throw them in the freezer in a freezer zip lock and this has worked out great. I'm a little disappointed at how much I have to keep tamping to get it to mix. Sometimes it cavitates and that is frustrating. It will do better if it is very liquid instead of very thick and frozen. It will eventually get it done but it can be a lengthy process. What I have found is it's best to turn it on high quickly because if you keep it on low it seems not to do as well and will only mix the bottom even with tamping it down.

Didn't Mustangs just buy a whipper? I don't know if it was aerosol or not, but she was having great fun with the grandkids with it.

Well, she did (and I did too.) I bought the Isi Cream Whipper, in plain black. Yes, they are easy to clean and fun to use. Just be sure to buy a box (or two) of chargers while you're ordering, and you'll be all set for the holidays.

May I have your recipe for the Blue Cheese whipped cream?

I thought the chargers make the cream whippers non-aerosol.

Thanks guys. I think "the one" is the iSi stainless Gourmet since it does both hot and cold, but I am restraining my trigger finger until I hear more. I found some good info on the web but it doesn't beat the info that I get here.

Claire, here's the recipe:

Blue Cheese Whipped Cream

Stir 1/2 cup crumbled blue cheese, 1 cup heavy cream, 1/4 cup whole milk, and 1/2 teaspoon fine salt in a saucepan over low heat until all the cheese melts.

Strain through a sieve; cool to room temperature.
Fill an aerosol cream whipper with the cheese mixture; charge twice, then chill for at least 2 hours. Shake vigorously before serving.

Food Network magazine showed this with made-over Buffalo chicken wings. My initial thought is to use it on grilled beef tenderloin.

Let me know how it works out if you get to it before me!

Yes, the 'non-aerosol' moniker is misleading. Here's what they have to say about that:

A Note About Aerosol Cans: Aerosols used to have a bad name; the propellant used to force the aerosol out of the can, a CFC (chlorofluorocarbon), was found to deplete the ozone layer. Aerosol cans now use a hydrocarbon gas, nitrogen or air (depending on the contents). There is still the environmental issues of a non-reusable cans vs. a reusable cream whipper, but there are no more ozone-related is

Sue, Thank You too for the Blue Cheese whipping cream recipe. I'm not used to the idea of a savory cheese whip, so I need to think about this and roll it around in my head for a while first!

Claire: R-V-C are the initials of the town I live!

I have done blue cheese/cream sauces and toppings for steak, so this is right up my alley.

I am looking to play with some different sauces, foams, etc. and expand my horizons a bit.

Sue, I have the iSi red stainless steel cream whipper. I bought it to use when taking meals to the field during harvest, but I use it all the time.

Yes, I can use a beater and a bowl, but I can make it in my cream whipper, stick it in my ice chest and if I have some left over I can store it in the fridge and use it within a few days, it is still good and not separated.

My niece requested the iSi whipper for a wedding gift because it is supposed to be one of the best non-aerosol cream whippers.

I don't have any personal experience with this item. She loves to bake/make desserts and did some research before selecting that particular one.

But I don't bake or even like desserts so I am not speaking from personal experience.

Thanks everyone. I went ahead and got the iSi Gourmet. My friend's son is an amazing chef and I think we'll have some fun with it next time he's in town.

Time to pull out some of my new cookbooks and see what they have to say about foam....

Don't know anything about whippers, but my neighbour serves blue cheese melted into cream over coquilles St Jacques and it's delicious!
