New Recipe Review - August 2010

Did anyone start August yet? If so, sorry but I couldn't find it.

I've been getting some decent mileage out of July's Southern Living. I don't know if I just never paid much attention to this magazine or if this one just happens to have some great food. Anyway, last night I made some burgers which were excellent. I highly recommend them, if a sweet touch sounds appealing to you. My only change was that I was out of red wine vinegar so I used balsamic. Was fine.

Fig-Glazed Burgers with Red Onion Jam

Red Onion Jam

4 cups thinly sliced red onions (about 2 medium)

1 tsp olive oil

1/4 cup sugar

1/4 cup red wine vinegar

3/4 tsp chopped fresh thyme

Saute onions in a large nonstick skillet over med-hi heat 10 minutes. Reduce to low; stir in sugar, vinegar and thyme. Cover and cook 10 minutes or until onion is very tender. Keep warm.

Cheeseburgers

1.5 lb ground round

2 Tbsp chopped fresh oregano

1 tsp salt

1/4 tsp garlic powder

3 Tbsp fig preserves

4 slices Muenster

4 toasted buns

Preheat grill to med-hi (350-400). Gently combine meat , oregano, salt and garlic powder. Shape into 4 patties.

Grill patties, grill closed, five minutes each side. Top with preserves and cheese; grill two more minutes until done and cheese melted. Serve on buns with red onion jam.
