Starting kitchen reno

These are pictures of my kitchen right now. They just pulled out my huge 10 ft island that was way too big. We are getting new doors for the cabinets and new drawers made by a cabinet maker. A new 6 ft island is being built in cherry.

We are taking out the floor tomorrow. The rest of the counter, which is granite in Violetta, is coming out. At the time the counters were put in we did not realize there were mistakes and that they did a shoddy job (funny that the company is now out of business).
Our cabinets are pickled maple (so 90's!). Our perimeter cabinets are going to be painted a cream color.

We are hoping to use some of the left over granite for a fireplace front and a bathroom counter top.

We will be getting a new back splash and new sink as well.
I have no idea what I am doing for counter top yet nor the back splash or flooring! I had to call in an interior designer because after looking at Home Depot and Lowes I am so overwhelmed with all the choices I will need help with direction. We meet with her on Thursday night.
I have no idea what colors I want in my counters, back splash or flooring. I'm doing good aren't I?

Any advice on best counters for heat would be great. I want a different counter for my island (that is what I am thinking right now anyway). My husband says he doesn't think he wants granite again and we are thinking possibly Silestone. I do do not like plain or solid colors nor do I want extreme or busy patterns or something I will tire of 5 years down the road. So difficult! I have been thinking I'd like to paint the walls a light gray or light gray blue. My husband thinks that gray would look like a very cold and drab color. I do not agree! What is everyone's thoughts on this?

Where you see the microwave used to be my wall oven and wall microwave. The pantry will now be going in there and where you see the pantry is where the double wall ovens will go. We bought new stainless steel appliances and I have a cook top going back in the island (where one was before).
Hope I did this picture thing correctly. I am not a technophobe.

I'm sure it was an unsealed sample, straight from the slab yard. I would agree that a sealed sample would hold up better, but I'm bad with upkeep, and I'm sure I wouldn't be re-sealing the counter every year, either out of a busy schedule, or just not wanting to deal with the task. So eventually it would act more like the unsealed sample. This is obviously me, maybe others would be more meticulous about the annual maintenance. I have a 1 year old running around, and I don't see myself finding that much free time that I wouldn't rather be relaxing than working to re-seal the counter even if it is just 1 weekend out of the 52 available. Maintenance aside, I think it's a great color selection. If you plan to keep up with the annual maintenance I'm sure it would be rather stain resistant.

I am not good at drawing on the computer, so I will try to explain my idea. I would put the banquette along the other side of the outer wall - where the pantry is. With a built-in bench under the window and chairs on the other side of a rectangular table. I would use the entire right side of the room with cabinetry in a U shape - no peninsula. Perhaps a small island if there is room. You could do the full height pantry where you currently have the sink and DW drawn. Or desk there with pantry beside it. Possibly put the fridge beside the pantry, so all of your full-height stuff is on the same wall. You could put the sink between the pair of windows and the range centered along the right wall. That would leave room for floating shelves flanking the range. There would likely still be room for a small island - not with seating, however, in the center of the "u". It may be useful for prep. If you are thinking of having kids, then pay close attention to the swing of the refrigerator and what is blocked when it is opened. My kids peruse the goods often thus blocking the only entrance in and out of our kitchen. Also stick with table or counter height seating, bar height doesn't work well for kids until they are almost adult sized... like 10 or 11. Best wishes! I look forward to seeing your plans.

Thanks for all the comments. I went back today and looked at the floors in natural light. They look MUCH darker than before and VERY close to our inspiration room. So we are quite relieved. I think once the poly goes down it'll be great. Here's today's pics The 3-D mock up is just that, a rough mock up. The pendants we already bought: restoration hardware benson pendants x 3 (7" diameter) We already decided to forgoe track lighting and add recessed lighting for a better ambiance. The hardware will be brushed nickle T pulls, but we haven't picked it out yet. We are saving about $20K by having cabinet refacing and new doors and drawer faces via a product named Avanti ( kinda like Thermafoil but indistinguishable from wood Shaker doors). The island is a lot bigger and now all counter height with a custom pantry cabinet next to it. Also a range vent hood will be added.

I can't believe where we were with this just one year ago. In case anyone is interested in a followup, the Coretec floor is holding up just fine. I have a large and rambunctious dog who often slides all the way across the floor and I don't see any scratches. The cabinets are Sophie's old favorite(ha ha ha) Fabuwood. They have been absolutely great. They're deep, the crown molding looks great, nothing binds or sticks and the finish is very washable. So there you have it. Yes, you can have an entire kitchen, including taking down a wall and a peninsula, moving a door and a refrigerator, done for $20,000. In a week! Is it a Houzz worthy $100,00 kitchen? No. That would be ridiculous in my modest over 55 neighborhood. But if you have a modest budget, don't be discouraged into believing you can't remodel your kitchen for less than $50,000. You can. Here's the proof.

Last but not least, soffit above the island is coming out as well and will be hanging (I am thinking) pendant lighting. MY island used to be two dimensional with the back higher where one could sit and eat (except there was not enough room really to put stools in front of the cabinets so we never did). We felt the island was too long and too wide. We have cut it down to 6 -7 ft long and just one height.
