Storing homemade ice cream

My husband and son love ice cream. I don't like the store bought stuff so I make it at home. Yesterday, I used my goat milk kefir to make vanilla chocolate chip ice cream and they loved it. The flavor and texture were just perfect. The problem was, there were only three of us and only two ice cream lovers. I put the leftover ice cream in an air tight plastic container but today, the ice cream became flaky. The taste was still very good, just the texture looked strange. I dipped the ice cream scoop in hot water and it helped a bit. The same thing happened when I used regular milk and heavy cream, not just kefir. I wonder if there's a better way to store homemade ice cream so it will stay ice cream like after a couple days of refrigeration.
