Calling Bill Vincent (& other tile experts) again!

Bill, The tile setter's assistant installed our backsplash of 6 x 12 honed crema marfil and the tiles were unevenly set and not flat against the wall. The tile setter & GC removed the worst tiles and we've reordered more. However, the remaining tiles still have gaps between the tiles and wall where there is no thinset. Instead of troweling the thinset on the wall, he applied thinset to the back of each tile. The thinset was not applied to the entire back surface of each tile. I took photos but the gaps are difficult to capture on my camera. Plus, I am having a heck of a time posting photos of the backsplash, but I'll try to post a link. My question is: should all of the tiles be removed and replaced or is there sufficient thinset to hold the tiles. Thank you very much for your advice!
