Cold potato recipes

Last week-end I was going to make potato salad, but I decided to start it in the evening with boiling the potatoes. I had small (perhaps baby) Yukon Golds, which I cut into rather small pieces and put into a pan with some water, salt, and a couple of huge sprigs of freshly dried thyme. I had been cutting the thyme and bringing it in, and it just dried itself on the counter. Anyway, I decided to use the dried thyme instead of fresh, just so that I could get it off the counter. I simmered the pot for 20 minutes, let it cool, and then put the pot in the fridge in the garage to chill overnight.

The next day I removed the sprigs of thyme but left whatever leaves had fallen off and drained the potatoes, saving the water for who know what reason. Anyway, I tasted the potatoes and decided that they did not need any more ingredients! The thyme gave them such a wonderful flavor that I decided to keep them just the way they were. I did, however, make an egg salad, since I had boiled (steamed) some eggs and peeled them. I stored them in the fridge peeled because they are difficult to peel if they have been refrigerated. The egg salad had finely minced celery and onion (using my mandoline), mustard, mayo, dill pickles finely chopped, cayenne, and black pepper. I thought about mixing it in with the potatoes, but I decided to keep them separate, and so now I can have just the potatoes or just the egg salad.

I don't buy potatoes that often, although I have started buying them more frequently lately, and I'm wondering if there are some other good cold recipes featuring potatoes. I have a recipe for Russian Fingerling Potato Salad that is almost as simple the as potato/thyme recipe.

How do you serve cold potatoes? I don't like cold French Fries, but I am not in the mood for hot potatoes with the warm weather we are having (low 80s). It's also nice to eat cold food outside on a warm evening.
