I've been making gumbo for years and years, and I always make my roux with vegetable oil and flour. A friend of mine who is a good cook, told me I should try butter instead of the oil. How will that effect the taste? I love my gumbo and firmly believe in the credo, "if it ain't broke, don't fix it". Then again, would butter take it over the top?
I have tried both. I prefer the butter and flour. Richer tasting to me. When we make a darker roux that nutty brown butter flavor can't be beat. NancyLouise
Butter will improve the taste imo, but it is a lot easier to burn a roux when you use butter. To offset the low smoke point of butter's I generally use half oil.
I agree that it's easier to scorch a butter-based roux than a oil-based roux. I generally use butter roux for sauces like Bechamel but use oil for gumbo roux.
A while back I roasted some ducks and had a whole lot of duck fat left over. It made the best gumbo roux I have ever made. Sinfully rich.
I keep a jar for bacon fat because it makes such a fantastic roux. It doesn't burn as easily as butter, so it's easier to make a nice, dark roux, and adds a rich flavor. Just remember not to add salt to the gravy/sauce/gumbo before adding the roux because the bacon fat adds a salty flavor.
For chicken based dishes, I use schmaltz for the same reasons.
