Exotic Seafood Anyone?

They say that when one door closes, somewhere a window opens...

And sure enough, a few months after my beloved local international supermarket closed, a fabulous new one opened up a few blocks away. It's mainly Oriental foods and has the most incredible seafood market -- so many wonderful-looking things I've never cooked and a few I've never even eaten!

SO - I'm looking for recipes for less-common seafood items:

- Octopus, squid and cuttlefish (all sizes)

- Clams (4-6 kinds), Mussels, Oysters, Conch, Cockels, Abalone (live), Scallops

- Skatewing, Shark fin

- All sorts of different fishes like Mackeral, Pike, Bass, Grouper, Porgy, Pompano, Shad, Yellowtail, Shark and many, many more.

- Lots of salted and dried fish as well.

- Plus sashimi-grade salmon, tuna, yellowtail, mackeral, octopus and shad roe.

We're reasonably adventurous eaters but I'm a little aprehensive to try something without any idea if it's good or not.
