Orange-Chili Pork Stir-Fry (from the Best of Bridge newest cookbook, called Bravo!)

3/4 cup orange juice

2 tbsp hoisin sauce

2 tbsp dry sherry

1 tbsp cornstarch

1/2 tsp Asian chili paste (not to be confused with the sweet Asian chili sauce)

1 tbsp vegetable oil

1 lb pork tenderloin, cut into thin slices

1 onion, chopped

3 cups broccoli florets and chopped peeled stems (1 bunch)

3 carrots, thinly sliced

2 tbsp chicken broth

2 cloves garlic, minced

1 tbsp chopped gingerroot

2 green onions, chopped

In a small bowl, whisk together orange juice, hoisin sauce, sherry, cornstarch and chili paste, set aside.

In a large skillet, heat oil over medium-high heat. Stir-fry pork until browned and just a hint of pink remains inside. Using a slotted spoon, remove to a plate and keep warm. Add onion to oil in skillet and stir-fry for about 5 minutes or until slightly softened,. Add broccoli, carrots and chicken broth, cover and steam for about 4 minutes or until vegetables are tender-crisp.

Make a well in the center and add garlic and ginger, stir-fry for 15 seconds or until fragrant. Return pork and any accumulated juices, and orange juice mixture, and bring to a boil. Reduce heat and simmer, stirring for 35-40 seconds or until sauce is thickened and heated through. Sprinkle with green onions.
