Lydia's Baked Eggs & Cheese Casserole A "Best of" Inn Cuisine, recipe adapted from the Starbuck Inn Bed & Breakfast of Kent, Connecticut •5 large eggs •1/2 cup milk •1 teaspoon granulated sugar •8 ounces (2 cups) Monterey Jack or Muenster cheese •2 ounces cream cheese, cubed •8 ounces small curd, low-fat cottage cheese •2 tablespoons unsalted butter, cut into small cubes •1/4 cup all-purpose flour •1/2 teaspoon baking powder •pinch of fresh chives •salt and fresh-ground black pepper to taste •optional - 1 small can of diced green chiles, a dash of crushed red pepper, or a handful of your favorite roasted veggies Thoroughly spray a 1.5-quart casserole dish with non-stick cooking spray. Preheat oven to 325 degrees F. In a large mixing bowl, whisk together eggs, milk and sugar. Add the 3 cheeses and the butter, whisking well. Add the flour, baking powder, chives, salt, pepper and optional ingredients (if desired) and whisk or stir gently to combine. Pour mixture in the greased 1.5-quart casserole dish and place in a 325 degree F oven for approximately 45 minutes (begin checking at about 40 minutes and cook until center is set and knife inserted in center comes out clean). Its a little church cook book, with member recipes and I bet 30 years old! Here is the recipe Quick Caramel Rolls 2 loaves frozen bread dough (thaw well, if it rises a little bit it will be ok) Topping: 1/2 cup white sugar 1/2 cup brown sugar (packed) 3/4 cup plus 3 tablespoons thick cream soft butter brown sugar cinnamon Let dough thaw. Roll out one loaf at a time and spread with butter, sprinkle with brown sugar and cinnamon. Roll up like a jelly roll, cut, and put in greased pan. Let rise until rolls touch each other. Cover rolls with topping. Bake at 350 degree for approx 15-20 minutes. **I just pour the caramel in the bottom of the pan and put rolls on top and let rise, bake, then invert on to another pan**

Slow-Cooker Molten Chocolate Lava Cake (This Chick Cooks Blog) serves about 6 people 1 cup all-purpose flour 2 teaspoons baking powder 6 tablespoons butter 2 ounces semisweet chocolate (or 1/3 cup chocolate chips) 1 cup sugar (2/3 cup & 1/3 cup, added separately) 3 tablespoons plus 1/3 cup Dutch-processed cocoa 1 tablespoon vanilla extract 1/4 teaspoon salt 1/3 cup milk 1 egg yolk 1/3 cup brown sugar 11/2 cups hot water Coat the inside of a 2.5 to 5 quart crock with cooking spray. Mix the flour and baking powder in a medium bowl and set aside. In a large bowl, melt the chocolate and butter in the microwave. Mix well. Stir in the 2/3 cup of sugar, 3 tablespoons of cocoa, vanilla extract, salt, milk, and egg yolk. Add the flour mixture and stir until well combined. Spread the batter in the slow cooker. Now mix the remaining sugar, cocoa, and hot water until the sugar is dissolved. I just stuck the sugar and water in the microwave for a minute or two and then added the cocoa. I used the same bowl from earlier. Less dishes :) Pour the water mixture over your batter in the crock pot. Cook on high for 1-2 hours. You will know when the cake is done because it will be pulling away from the edges and it will look mostly set (cooked). It will still be floating on its chocolate sauce. When you check the cake try not to let the moisture from the lid drip on it. Once the cake is done turn off the crock, remove the lid, and let it sit for 25 minutes before serving. Serve it up with some whipped cream or ice cream. It is excellent with fresh berries on top too.

It's really a quiche, but my picky eater wouldn't eat quiche, but she loved pie :-) Hamburger Pie 1 (9 inch) pie shell, unbaked 1/2 lb. ground beef 1 can cream of mushroom soup 1/2 c. milk 2 eggs, lightly beaten 1/4 c. onions, diced 1/3 tsp. salt Dash of pepper Dash of red pepper sauce 1 (4 oz.) can mushroom pieces, drained 3/4 c. Swiss cheese, shredded Prick bottom and sides of the ie shell with a fork. Bake at 450 degrees for 12 minutes. Remove from oven and reduce heat to 350. Brown ground beef and onion. Remove from pan with a slotted spoon; set aside. Mix soup, milk, eggs , spices and pepper sauce. Add meat, mushrooms and cheese. Pour into shell and bake 60 minutes or until knife comes out clean. Gazania, my grandmother used to pick all kinds of tender young weeds in the spring--queen anne's lace, mustard, dandelion and I forget what all. She'd wash them in her big sink 3 or 4 times and cook them like you would mustard greens or turnip greens. Sure were good.
