We love pineapple on pizza....the only way we get it other than all veggie ones. I'm going to try this...sounds interesting. Have you made it yet?

No, not yet but I'm going to. To be honest, I've never even had an enchilada of any kind before, so I'm looking forward to it.

Does anybody have any other enchilada recipes to share?

I love enchiladas and only made them a few times, but I hated the time it took to roll them and prepare them. Now I just make them like lasagna in layers. A layer of tortillas to start, Enchilada sauce and ground turkey mixture, shredded cheese, olives, green onions and cilantro. End with cheese and olives on top. I do a few layers in that order and bake it! It works and tastes so good!

I've made these quit a few times.
And use regular maple syrup if you like!

1 (21 ounce) can apple fruit filling and topping ***DS prefers the cherry pie filling
6 (8 inch) flour tortillas
1 teaspoon cinnamon
1/3 cup butter or margarine
1/2 cup sugar
1/2 cup brown sugar
1/2 cup water
Directions
1Spoon fruit filling evenly down centers of tortillas.
2Sprinkle with cinnamon.
3Roll up, and place, seam side down, in a lightly greased baking dish.
4Bring butter and next 3 ingredients to a boil.
5Reduce heat, and simmer, stirring constantly, 3 minutes.
6Pour over enchiladas: let stand 30 minutes.
7Bake at 350 for 20 minutes.

I serve them topped with grated cheese and cool whip!

Picante Biscuit Bake

Ingredients:
2 tubes (12 ounces each) refrigerated buttermilk biscuits
1 jar (16 ounces) picante sauce or salsa
1 medium green pepper, chopped
1 medium onion, chopped
1 can (2-1/4 ounces) sliced ripe olives, drained
2 cups (8 ounces) shredded Monterey Jack cheese
Directions:
Quarter the biscuits; place in a greased 13-in. x 9-in. baking dish. Top with picante sauce, green pepper, onion and olives.
Bake, uncovered, at 350° for 20 minutes. Sprinkle with cheese. Bake 10 minutes longer or until the cheese is melted. Yield: 6 servings.

Glenda, those enchiladas would be good with a dollop of sour cream too, it seems to me. Thanks for the recipe.

It just sounds so gross but the truth is I am curious enough to try making them...

What is enchilada sauce? Is it like a spaghetti sauce or a pesto? I've never had them.

You can buy enchilada sauce in a can on the aisle where hispanic food is sold. I've made cheese and beef enchiladas and eat them at Mexican restaurants often. Not sure I'd like pineapple ones, but I do love pineapple....so maybe.

I have had these and they are wonderful I had the cherry ones....I bet I would love the pineapple....Stacy

I sent the Cherry Enchilada recipe to DD and the boys. She made it last night. SHe left off the cool whip and just sprinkled a little shredded cheddar on top and love them!
