Recipe of the day Feb 3 - Cinnamon Crumble coffee Cake!

Cinnamon-Crumble Coffee Cake

Â 1 stick unsalted butter, softened

Â 1 cup sugar

Â 2 eggs

Â 2 cups all-purpose flour

Â 1 tsp baking powder

Â 1 tsp baking soda

Â 1 tsp vanilla

Â 1 cup sour cream

Â 1/2 cup chocolate chips

Topping

Â 2/3 cup light brown sugar

Â 1 tsp cinnamon

Â 1 cup chopped walnuts (pecans would be good here, too)

Preheat oven to 350. Grease pan.

To make cake: cream butter and sugar. Lightly beat eggs, vanilla, and sour cream, then add to butter mixture. Whisk together dry ingredients, then add to wet ingredients, mixing just until combined. Fold in chocolate chips.

To make topping: whisk together the 3 ingredients; set aside.

Pour half of batter into bundt pan, smoothing with a spatula so that it covers the bottom of the pan.

Distribute half of the topping mixture over the batter.

Spoon the remaining batter into the pan, carefully smoothing with a spatula so that it covers the topping.

Sprinkle remaining topping over the batter, then bake for 45 minutes.

Let cool for 15 minutes, then carefully reverse onto a plate. Place another plate on top (which is actually the bottom of the cake), and reverse again, so that cake is, finally, facing up on a plate.

My favorite!!

Blueberry Buckle coffee cake
3/4 cup white sugar
1/4 cup shortening
1 egg
1/2 cup milk
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 cups fresh blueberries
1/2 cup white sugar
1/3 cup all-purpose flour
1/2 teaspoon ground cinnamon
1/4 cup butter, softened

DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C). Grease one 8x8 inch pan.
Cream together 3/4 cup sugar, shortening, and egg.
In a separate bowl mix together 2 cups flour, baking powder, and salt. Stir into sugar mixture, alternating with milk. Stir in blueberries. Pour into greased 8x8 inch pan.
To make topping: Combine 1/2 cup sugar, 1/3 cup flour, cinnamon, and butter. Sprinkle over cake batter.
Bake at 375 degree F (190 degrees C) for 25-30 minutes.

I have it printed out and made Marlen's Coffeecake many times! Its wonderful. BUT I don't think I have it on the computer!

I posted a Rhubarb Bread recipe that is delicious. Cannot remember where I got it from... :o) Rhubarb Bread Ingredients: 1 cup milk 1 tablespoon lemon juice 1 teaspoon vanilla extract 1 1/2 cups brown sugar 1/4 cup granulated sugar (my change to the original recipe) 2/3 cup vegetable oil 1 egg 2 1/2 cups all-purpose flour 1 teaspoon salt 1 teaspoon baking soda 1 1/2 cups chopped rhubarb 1/2 cup chopped walnuts 1/4 cup brown sugar 1/2 teaspoon ground cinnamon 1 tablespoon butter, melted Directions: 1. Preheat oven to 325 degrees F (165 degrees C). Lightly grease two 9x5 inch loaf pans. In a small bowl, stir together milk, lemon juice and vanilla; let stand for 10 minutes. 2. In a large bowl, mix together 1 1/2 cups brown sugar, oil and egg. Combine the flour, salt and baking soda, stir into sugar mixture alternately with the milk mixture just until combined. Fold in rhubarb and nuts. Pour batter into prepared loaf pans. 3. In a small bowl, combine 1/4 cup brown sugar, cinnamon and butter. Sprinkle this mixture over the unbaked loaves. 4. Here is another might like, I sure do. These freeze well, in fact I store them in the freezer right after baking and then pull one out and nuke it when I want one. Oat Bran Morning Muffins (Very good and very good for you.) 2 1/2 cups oat bran 1/2 cup packed light brown sugar 1/3 cup canola oil (or extra-light olive oil) 2 cups buttermilk 1 cup dried blueberries or cranberries 2 medium apples (Gala); peel & chopped small 2 large eggs; beaten 1 1/2 cups white whole-wheat flour 1 1/2 teaspoons baking powder 1 teaspoon baking soda 2 teaspoons ground cinnamon 1/2 teaspoon freshly ground nutmeg 1/2 teaspoon salt Preheat oven to 375Â° and position rack in the center of the oven. Grease or place muffin liners in 18 standard size muffins cups. In a large bowl, combine the oat bran and the brown sugar; stir in the oil and buttermilk until evenly moistened. Add the dried fruit and chopped apples. Let stand at room temperature for 20 minutes. After the 20 minutes, add the eggs. Combine the remaining ingredients and add to the buttermilk mixture using a large spatula or spoon just until evenly moistened, using no more than 15 to 20 strokes. Spoon the batter into the prepared muffin cups level with the tops. Bake for 20 to 25 minutes until tops are dry and springy (tooth pick test comes out clean)...don't over bake! Let them rest in the pan for 5 minutes before removing to rack to cool. Store in an air tight container. HiDesert, I made this again for Christmas and it again tasted delicious and looked fabulous! Oh, I I baked it (by accident as I pulled out the wrong pan) in a 10 inch springform and it was just perfect. It was a not as high, but, larger in diameter. It looked great and everyone just loved it. I think I'm going to make another one to give to my neighbor as a Happy New Year sweet treat gift! I wish you and your family a Happy & Healthy New Year!

Here it is:

Marlen's Coffeecake
1 box white cake mix with NO pudding in the mix*
1 box instant vanilla pudding (small)
8 oz sour cream
1/2 cup vegetable oil
4 eggs
Mix all ingredients together at once. Beat AT LEAST 5 minutes-DON'T UNDERBEAT! Batter will be a bit stiff.
Topping:
1 cup granulated sugar
1 cup chopped walnuts
1 1/2 heaping teaspoons ground cinnamon
1 1/2 heaping teaspoons cocoa
Preheat oven to 350 degrees. Butter and flour 10 inch Bundt pan. Put half of the batter in pan and sprinkle with half the topping. Add the rest of the batter. Sprinkle the rest of the topping. CUt through well with knife so that topping is mixed with the batter. Bake one hour at 350 degrees.
Cool 10 minutes before turning out.
Note from Marlen: I like to make a little extra topping and sprinkle some of it on the pan before adding the batter.
*If using cake mix with vanilla pudding in the mix, omit the second ingredient.
