Recipe for Lavender Shortbread?

A received an email from a friend who this week attended an event at which Lavender Shortbread was served. She was just a guest so has no access to recipes. I did Google and found a few but was hoping someone here might have one for either Lavender cookies or shortbread that they know is good.

Thank you.

Just use your favorite shortbread recipe and add a teaspoon or two of lavender buds. Be sure it's food grade or your own organic lavender.

Adjust to taste........it doesn't take much!!

Lavender Jelly is good too. I don't have my recipe handy, but I'm sure there's a bunch if you Google!

If you're a lavender lover, here are a couple more...

Lavender Honey Bunches (good, taste like macaroons) 3 cups quick oats 2 cups flaked coconut 1 cup unbleached flour 1 cup packed brown sugar 1 cup butter 1/2 cup honey 1 teaspoon dried lavender Preheat the oven to 350 degrees. Combine oats, coconut, and flour in a large mixing bowl. In a heavy sauce pan bring butter, honey, sugar and lavender to a boil. Pour over dry ingredients and mix well. Drop dough by the spoonful into muffin tins, making each one about 1\-2 inches high. Bake for 12\-15 minutes until lightly golden, being careful NOT to overbake. Cool in the tins for 15 minutes before removing. These cookies store well and are excellent for care packages. ~~~~~~~~~~~~~~~~~~~~. LAVENDER BLOSSOM MUFFINS 1 cup sugar 1 stick butter or margarine (1/4 cup) 2 eggs 1/2 cup milk 1/4 tsp. salt 1 tsp. baking powder 1 1/2 cup flour (sifted) 1/3 cup lavender blossoms (fresh are best but dried work well too) 1 Preheat oven to 350 degrees. 2 Cream butter with sugar, add eggs, milk, salt, baking powder and flour. Beat well. 3 Fold in lavender blossoms. 4 Grease muffin tin or use cupcake papers. 5 Fill cups 1/2 full. 6 Bake 1 2\-1 8 minutes depending on size. They are done when toothpick stuck in middle comes out clean. 7 While still hot, glaze with 1/2 cup powdered sugar mixed with juice of 1 lemon 8 Decorate with lavender blossoms. Let sit several hours before serving. Makes 12 small muffins, 8 regular.

Kate, I went to a local farmers market today and remembered this thread when I stopped at a booth with lavender.

I bought some culinary lavender and also picked up a recipe... I have not made these yet.

Lavender Shortbread

8 Tbsp unsalted butter
1/3 C sugar
1 1/4 C AP flour
1/2 tsp salt
1/4 tsp vanilla
1 to 2 tsp cooking lavender

Preheat oven to 275F

In a bowl of mixer, cream butter and sugar until light and fluffy, about 2 min. Add vanilla, salt and flour. Mix. Stir in lavender.

Scoop 1 Tbsp dough onto a cookie sheet. Dip a decorative cookie mold into sugar and press dough to a thickness of 3/8 inch. Bake 25-30 min until firm, but not brown.
Yields about 1 dz. cookies.

You can also roll the dough and cut with a cookie cutter and sprinkle with sugar.

I never realized that these are so similar to what I call "Butter Balls" and others call "Mexican Wedding Cakes" - really scrumptious! (Someone pointed out the similarity somewhere today on either the R/E or the C/F - anyway, this would be easier, you don't have to roll, and roll, and roll!)

Interesting. I keep thinking I'm going to make violet jelly from the wild violets that have taken over my yard. Just one of those things I never get around to.
