Please help me redo my Yukon former hunting lodge.

I am not good at visualizing and need lots of help.

Since I'm going to be posting lots, I thought I'd just ask one or two questions at a time.

I've included pictures of my living room and dining room so you get an idea of my house style.

The layout in my tiny 10'4" by 10'11" works pretty well. It's efficient, if nothing else. The kitchen was designed for 6'3" cook so the cabinets are taller than usual. We're taking them all out bit probably putting in a similar layout. We do not have a supplier of granite where I live. I can't afford it anyway. We'll be using laminate counter.

My first two questions: Taking the floor into account, what colour of laminate would you use? Backspalsh ideas?

I'm thinking my cabinets will be darker brown (Early American by Minwax). Would you add a glass door somewhere to break up the wood? I don't really like the rustic/country look and would prefer to downplay it. I was thinking rustic/zen (is there such a thing?)
