One of the best things I've ever done was to see a Registered Dietitian (found in the yellow pages, or through a diabetes treatment center) and get an eating plan designed just for me. In my case, I am prone to hypoglycemia (low blood sugar) if I don't eat often enough, or if I eat too many high-glycemic carbs. I also have diabetes in both sides of my family. At the time I saw her (5-6 years ago), I was about 30 lbs. overweight as well, not sleeping well, sluggish, and at high risk of diabetes in the future. She gave me a 1600 cal/day eating plan consisting of 3 meals + 3 snacks. It incorporates the diabetic exchange eating plan and exchange lists but tailored for hypoglycemia. Following this way of eating (I don't like to call it a "diet", since "diets" are typically a temporary way of eating with the single goal of losing weight) teaches proper portion sizes, meal planning, and a good balance of all the nutrients. What's more, anyone can do it; it's not just for diabetics or those like me prone to hypoglycemia, but for anyone who wants to learn to eat healthier to control their weight, whether to lose, gain, or maintain. Therefore, it can be followed for the rest of one's life. It incorporates wholesome, healthy foods including nuts, potatoes, grains, rice, and other foods that people think they need to avoid like the plague just to lose weight. But again, it's not a silly, crazy, fad diet. It's just the way we should eat. Eventually, it becomes second-nature, and it is now "just what I do" without giving it too much thought. It is also important to eat often enough that the body doesn't get too hungry, at least 3 hours apart, and to make healthy food choices, nutrient-dense foods packed with vitamins and minerals. In addition, I've made regular exercise a part of my life. I ALWAYS take stairs (unless I'm with someone who won't), and we ride bikes and walk most days of the week. I've lost 45 lbs., and I feel stronger and better than I have in years. I have more energy than I did 15 years ago, and I'm over 50. My hormones don't bother me anymore. I sleep very well (prior to this I woke up every night and didn't get back to sleep). I'm no longer overweight so I just continue the same way of eating, but adding some foods to maintain my weight, or adjust based on increase/decrease in exercise. Again, it's not a diet... it's a way of life. I do it one day at a time... I make healthy choices today, and pass up temptations (like fries) by saying "maybe next time". Next time, I do it again. I do eat those foods but only on rare occasions. And, I don't view them as "fattening" or evil foods... just not healthy ones, and I make a healthier choice instead. It's all about health and nutrition, not weight or clothing size. The weight will come off and the clothes will fit better over time, but the individual daily choices should be made with the goal of better health. And another good thing about regular exercise, especially vigorous exercise such as cycling, is that it requires high-glycemic carbs for energy. That's when I eat those goodies, just before, during, and after a ride. Otherwise I limit them to just occasionally, and just one. Like gibby3000, after years of eating this way this is now my preferred way of eating. I automatically reach for healthy choices, not junk. I eat what I should, then stop. It's not a diet -- it's just the way I eat now.

I think you could add some lovely breads or rolls. Personally, the spinach/gruyere soup sounds a bit heavy - but not having tasted it, I don't know. I would probably be inclined to do a fresh spring pea soup (perhaps served cold) instead. Are you serving all this at one time, or in courses? I am thinking that you could use some other beverage, as you have a lot of fruit things going on, and something non-fruity might be nice. It sounds like a lovely luncheon for the ladies of the family!

When I still worked I used to take bentos all the time since there were no readily available food sources near my office. Leaking was not a problem with the ones I had. Www.justbento.com has lots of good ideas, not all of which are Japanese. Maki at Just Bentos also talks about storing a "stash" of bento fillers in the freezer. Other than that, dinner leftovers were my staple. I would also pack bread, filling, and lettuce separately to combine on the spot into a nice, non-soggy sandwich. Also, if you look around a little you can find small packages of real cheese (processed cheese is just industrial (i.e. "cheap") cheese melted with salt -- nothing yucky or chemical added to it despite the name) from France where cheese is more highly respected. A handful of crackers and some fruit will round out a meal. Pink Lady apples resist browning when cut and will be perfect in appearance at lunch time if tossed into a solution of a pinch of Fruit Fresh (vitamin C) and water as you cut them. If nuts were not an issue, then almond or peanut butter would be great accompaniments instead of cheese.

THough time consuming, these are always a fun addition to a tea party..... DECORATED SUGAR CUBES 1 egg white 1/ 8 tsp cream of tartar 1/ 4 tsp. almond extract 1 and 3/ 4 cups confectioners sugar food coloring Combine egg white, cream of tartar and extract. Blend sugar into mixture. Beat until icing hold stiff peaks. Divide and tint with coloring. Cover until used. Makes 1 cup. TO MAKE FLOWERS OR FRUIT ON SUGAR CUBES: With decorating tubes: Squeeze icing through small tips Without tubes: Double heavy waxed paper; roll into cone. Cut tip for small opening; squeeze icing through opening ********************************************************** Petit Fours Now to bake the cake, no special cake pans are required; a 9 inch round or square pan will work just fine. When the cake has completely cooled, cut it in half horizontally. A serrated knife works well for this; gently saw your way through. Brush the liqueur over the cut sides, and then fill with a thin layer of jelly. Heat the jelly until warm; this will make it easier to spread. A creamy filling sprinkled with chopped nuts is also good. Try: Almond Filling Chocolate Meringue Frosting French Buttercream Lemon Jelly Filling Chocolate Fudge Buttercream Frosting Mint Buttercream with Dark Chocolate Glaze The simplest decorating technique for petits fours is to glaze the top of the whole cake, and then cut it into shapes. A white chocolate glaze or fondant frosting works well for this purpose. Both will dry to a smooth surface. Score the top into squares or diamonds, and decorate. Cut the cake only when ready to serve; since the sides are left uncovered, the little cakes can dry and become stale in a very short time. To cut, dip a serrated knife in hot water and then dry it. A hot knife will cut through the glaze more smoothly. Cookie cutters with simple shapes, such as rosettes or rounds, as well as petit four cutters can also be used to cut the cake. These should be used on the unglazed cake. Each cake is then decorated individually. It is important to completely cover the exposed surfaces with glaze or fondant to prevent drying. Quick Pour Fondant Icing Quick Pour Chocolate Fondant There are innumerable ways to decorate a petit four. One way is to simply pipe designs with melted chocolate or tinted decorator frosting. But don't limit yourself. Candied citrus zest, crystallized edible flowers and leaves, and fresh berries are all excellent decorations. You can also use miniature cookie cutters to shape marzipan or rolled fondant. Add these finishing touches before the glaze or fondant sets. Decorator Frosting Best White Icing Ever To get you started on your petits fours adventure, try some of these combinations of cakes, fillings, glazes, and decorations. Before you know it you'll be the host with the most. White cake, strawberry jam, poured fondant, and tinted marzipan animal cutouts for a children's tea.  Genoise, amaretto liqueur, almond filling and a sprinkling of chopped almonds, white chocolate glaze, finished with almond slices and piped melted chocolate for an elegant ladies and gentlemen's luncheon.  Pound cake, maraschino liqueur, cream filling, poured fondant, and small pastille candies for decoration to serve at the bridal or baby shower. There's a combination for every taste and occasion. Turn into a bowl. Coarsely chop pecans. Add pecans and pimentos with juice to the mayonnaise mixture. Add grated cheese. Stir well to combine. Store in refrigerator at least 1 hour before serving. Ruthanna, you might like some of these ideas from the Chapter titled - "The Tea Larder": Tea Trimmings A bit of milk, some sugar - one lump or two - these are the traditional partners for a cup of tea. But it's fun to experiment with a few variations on them. A nice, easy sweet-tasting tea sandwich I've had is made using a can of brown bread (with or without raisins) sliced about 1/4 inch thick. Spread a slice generously with softened cream cheese and topped with another slice of brown bread. Cut into quarters and stack on a pretty plate.
