Homemade Burger and Hot Dog Buns

I wanted to make burger and hot dog buns so I took my basic baguette recipe and adjusted it by adding an egg, butter, honey and buttermilk. I used the buttermilk because I had some to use up. Any milk will do.

I divided the dough in half and made 10 burger buns ( Between 95 and 100 g each) and 8 hot dog buns (120g each).

Moe's dinner - with homemade fries.

And breakfast this morning - Toasted Peameal Bacon and Tomato Sandwiches.

Hamburger or Hot Dog Buns
1000g flour
650 g liquid (I used half buttermilk and half water, but could be made with all milk. I just happened to have buttermilk that I wanted to use up.)
21 g salt
35 g honey
8 g yeast
1 egg
75 g butter

1 egg white mixed with a little water
Sesame or poppy seeds

Mix flour, yeast, honey and add liquid.
Let rest for 20 minutes. Add salt and let rest another 20 minutes. Add butter and egg and knead until dough forms a smooth ball.

Place in covered container and let rise until more than doubled.

Knock down. Cut dough into equal portions approx. 95g to 100 g each for burger buns and 120 g for hot dog buns.

Let buns rise until almost doubled. Brush with egg white mixed with a little water, sprinkle with sesame or poppy seeds and bake in a 425ÃÂ°F oven until golden brown.

Oh I didn't think of looking for a specific hamburg/hotdog bun recipe. I've just turned one of my bread loaves into hamburger buns.

Yours look fantastic! I don't have a scale, so mine were all different sizes :-)

Your hotdog/sausage buns are huge! Hotdog buns are on my to-do list.

I guess great minds think alike Jasdip. I just turned my favourite bread recipe into a bun recipe.

I like the variety in sizes. Perfect for burgers or sandwiches.

This is the meal plan I've followed for years and perhaps it and the others I've posted will help you out a bit to build one for yourself. I like it because I can switch days or leave them out completely if necessary. Many of the basic foods are prepared in advance and portioned in the freezer in serving sizes (2 people for us). That would include spaghetti sauce, freezer mashed potatoes, soup/stew/chili, taco meat, etc. You could easily rearrange the choices to work best for you. I don't like to work out a "perfect" menu, but I like the guidelines I've set out for myself. I know if I have a few simple ingredients on hand - shredded cheese, lettuce and other fresh veggies, and a well-stocked freezer, no meal is very far away. MONDAY: Big Meal Includes a large cut of meat that will also serve as leftovers, possibly sandwich meat, base for stir fry; and served with all the "normal" side dishes that go along with that type of meat. Usually there is enough leftover to freeze a portion to use later. Baked chicken or roast beef also get used to make soup. Occasionally when I don't have time to make the whole meal from scratch I'll use whatever has been waiting the freezer (leftover roast turkey or beef, etc.) TUESDAY: Leftovers It may take on a completely different look than what was served on Monday - your choice. If you don't like leftovers the next day, use them on Wednesday instead. WEDNESDAY: Stir-fry If you prepared vegetables on Monday or Tuesday that can be prepared in advance to include in this meal you'll save time by chopping enough on the previous days. Use a combination of fresh and frozen veggies. Almost any kind of meat can be used for stir-fry - both raw or pre-cooked. Serve with a side of rice and fresh fruit for dessert. I might take a large amount of meat (chicken or steak for instance) and cook it and portion it for the freezer and used later for more stir-fry meals, or used as the meat topping on a dinner salad, or used in a wrap on sandwich day. THURSDAY: International Usually something Italian or Mexican using spaghetti sauce and some kind of pasta or taco meat (which are already portioned in the freezer). Both meat bases can be used in a plethora of things. FRIDAY: Vegetarian A great way to save on our most expensive food item - meat. If you don't have time for a traditional breakfast, it could be a good time for pancakes or crepes. Something egg, cheese or bean based. SATURDAY: Soup and/or Sandwich We're always busy on Saturday, so instead of eating out, having the freezer stocked with homemade soup and fixings for sandwiches on hand (as well as wraps and other sandwich-type things) saves time and money. SUNDAY: Homemade Pizza or a Dinner Salad Homemade pizza is a good way to use up small amounts of leftover meat and clean the vegetable bin. When the weather is too hot for baking pizza, or the garden is in full swing, those same meat and vegetable ingredients make a great dinner salad. All meals include nature's "FAST FOOD" which are fresh vegetables of some kind and fresh or canned fruit for dessert. The freezer is stocked with homemade tortillas, homemade burger and hot dog buns, homemade dinner rolls, cornbread (all wrapped in foil in servings for one or two) ready to reheat. ------------------------------------------------------ Here's another eating plan I jotted down from a book I read years ago: -Meat on Sunday and Wednesday -Casseroles/Leftovers Monday and Thursday -Pasta - Tuesday -Fish, eggs, cheese - Friday -Soup and or Sandwich - Saturday -------------------------------------------- This one I read on-line: Monday - Pasta Tuesday - Soup, salad, and/or sandwiches Wednesday - Stir-fry Thursday - Crock-pot Friday - Pizza Saturday - Something new Sunday - Something easy -Grainlady

Thanks, Michael/Lyra! (grin) she's darned expensive and time consuming for an imaginary child, sheesh. Nope, L, no plastic containers of potato salad in the refrigerated section. I suppose I should be grateful, I did find a plastic container of that ground up bologna and pickle with mayonnaise "sandwich spread" once. The grocery store originally had a small bakery and deli, with rotisserie chickens, but apparently those items spoiled before they could be sold and became a big loss, so now I can get a cold pre-cooked chicken on the weekends, donuts only from Sara Lee and sliced lulnch meats and cheeses. They have a small "hot" section" at lunch time, usually chicken strips, corn dogs and pizza rolls. I can get canned Bush's baked beans, though, and ice cream. Two brands, either Country Fresh or Hudsonville. tricia, I never said I was a manager. I'm a Mom and a farmer and at work I'm "Angela, The Pitbull". My employees know their jobs well, so I don't delegate very much, they just do their jobs and I make sure they get paid. I spend most of my time doing legal research, drafting briefs and motions and trying to make sure the criminals get locked up, while simultaneously trying to wipe the images of their abused wives/battered children out of my brain, along with the memory of the autopsy photos and the drunk driving victims. I'm not good at delegating, I'm good at doing whatever needs to be done to help those who need it. That, and I'm good at cooking, so i do what I'm best at. At least I enjoy the cooking! Annie

We love classic Detroit Coney Island hot dogs (and chili fries). We now live in CT, and every time we're back in SE MI we make at least one stop for Coney dogs!! Pkguy posted this on a coney thread a while back. I made this up recently, and it's a little extra work, my husband said it was it was worth it! Here's PK's note from the orginal thread: Ok I haven't been doing much cooking lately but it is summer and I was talking to the next door neighbors about the long gone drive-in restaurant that used to be in this neighborhood (now a video and Little Caesars). Anyways, they used to have the greatest foot longs with a super coney sauce. I googled some recipes online, starting with one for the old A&W sauce and it was close but not quite the same. I had to make some adjustments and finally I got it pretty close. I ran one next door to the neighbor this evening and had him do a taste test and he was amazed, said it tasted just like the foot longs from the drive in used to taste. So here's the recipe .. BTW I cooked it in the pressure cooker about 10 mins under pressure and you HAVE TO steam the hot dog buns!!!!!! PkguyÂs Coney Sauce Brown a pound of hamburger then into the pc add 1 6oz can of Hunts tomato paste 3/4 cup water 1/4 cup white vinegar 1 TBSP sugar 1.5 TBPS frenchs yellow mustard 1 TBSP minced DRY Onion flakes,, no not real onion LOL 1 tsp salt 1 tsp ground black pepper 1 tsp chili powder 1 tsp (heaping) ground Cumin 1.5 tsp celery seed 1 tsp Worcestershire sauce Pressure cook about 10 minutes After cooking whizz it with a stick blender or in a regular blender to a smoother consistency then STIR IN 4 TBSP green relish Sauce is supposed to be hot when you put it on the dog. (to be classic, according to my DH, serve with chopped onino and mustard)

Nancyinnc, my grandmother used to grind big pieces of bologna, the ones cut from a roll, and grind it, then mix it with pickles and mayo for sandwich spread. The bread or crackers were run through after the bologna to "clean" the meat grinder! Cassandra, we used to have a hot dog chain here called "Weiner King". (grin) Yeah, really. I liked their "special", which had chili, cheese, onions, mustard, coleslaw, bun was buttered and grilled and the dog was 1/4 pound. We also had a "Dog and Suds", which was a root beer stand, and now Burger King sells hot dogs here too. A&W here is still a drive in where they bring the tray to your car and set it on the window, and they have the best chili dogs, although the place across the street which used to be a Dairy Queen and now is independent, gives them a run for their money. The Sam's Club here serves Nathan's Famous and Elery and I stopped in Ohio on a trip just to have a dog at Tony Packo's because he was a fan of "Klinger" on "MASH". We also have a lot of small independent hot dog places, from "Coney" dogs to Greek style chili dogs. Annie

I didn't think of adding milk and butter though, Ann. I just turned one loaf into buns, and the other into bread.

I need buns for the 4th weekend and may have to make the spicy english muffins tomorrow...oh so hate to buy buns and rolls when they are so easy to make.
The bread for rolls is his gig and he has been way to busy with work...

For hotdog lovers, i made a smoked port tip a few weeks ago that tasted so much like hotdogs...must have been the dry rub i came up with. DH loved it, : )

Good pun sleevendog.

We have been eating too many hot dogs (jalapeno, cheddar, smoked, etc). I roast them in the toaster oven. All I need now is to make the buns and we are in hot dog heaven.

Those look great, Ann! Wonderfully uniform and pretty!

Jasdip, it's a bit pricy but I can't think of enough good things to say about the Joseph Joseph Shell Scale. The only downside is that it doesn't do fractions of grams and only tenths of ounces. Still, for most baking it's just fine, and a real pleasure to use. The bowl/pourer/cover is fab, as is the vertical display. For bigger things, just remove the bowl. That doesn't mean I weighed my bun dough either (sourdough thread). :) I always do weigh my pizza dough, but it was after midnight, and weighing is totally optional after midnight, even if you have a scale. :)

Great looking buns, Ann! I've made the burger buns before and they do bring a lot of flavor to the table.

Cathy, could you tell us what temp and how long you roast your hot dogs in the TO? I like to fix a quick hot dog for lunch when I come home from work on my lunch break. Thanks!

I didn't make buns -- sounds like a good idea with a holiday weekend coming up though.

I also wanted to respond to the no scale comment. If you bake, cook, mail packages, etc. it's really worth getting one. I've added a link to what I believe is the newer version of mine. I worried about where I would put a scale, and this one just slides into the side of my cabinet, right next to my mixing bowls. Thought I'd mention that in case anyone has a kitchen that is space challenged.

You have me jonesing for hot dogs...I do burgers often in the summer but I don't think of hot dogs. This weekend for sure.

I usually make my own buns too. I use King Arthur's recipe as well as your Rosemary and Potato Rolls recipe and Nancy's Pretzel Roll recipe depends on my mood!

Aw, Ann. Those look so incredibly good. By the way, I have to tell you I would snag all of those fries! All. Of. Them! BTW, where do you buy your sesame seeds? Or if anyone else can recommend, I'd appreciate it. I just remember looking a time or two and thinking wow ... those are expensive.

Jasdip -- I love those buns. I can't tell the different sizes, but my kids would be able to pick the biggest one in seconds:)

Son and ventured into the world of buns a couple of weeks ago spur of the moment. We used a King Arthur recipe because it was dairy free -- very, very, very stiff dough. As I've shared, my daughter is the queen bread shaper (specifically, braids:), but poor planning on my part, she wasn't here. Recipe called for a kaiser stamp???????? Oh, for goodness sakes! Son's mandate was to figure out solution -- googled and found the familiar the granny knot. We could do that. No sesame -- had to make do with cornmeal!

What a picnic we all would have:)

Those are beautiful kaisers.

The knot is easy to do and makes for a more authentic looking kaiser than the stamp.

Cathy, the last time I made Kaisers I was out of Sesame and Poppy seeds so I used a combination of black pepper and salt.

I can buy sesame seeds in just about every grocery store. They are common here. In bulk or prepackaged. I keep them in the freezer so that they do not go rancid.

AnnT, those look just as delicious as always. I was going to make homemade buns and just ran right out of time. (sigh)

Cathy, those Kaiser rolls look perfect.

I get sesame seeds at the Mediterranean/Middle Eastern market in Grand Rapids, a large container is about $3.00 but like Ann T, I keep them in the freezer so they don't go rancid.

"Homemade hamburger and hot dog buns rules"

Annt...Jasdip.....cathy in pa...your buns (Ha) all look the greatest. This past week I have made 6 batches of hamburger buns, (Moonies Beautiful Buns from KA) just to get a few wrapped and in freezer. I would get a batch done and cooling and a kid would drop by and go home with that batch.

I make hot dog buns too, have a pan from KA which is okay...DH made me a cutter which I like real well, length is perfect.... width just alittle wide.....my free shaping is okay too, not uniform in looks but who cares as long as they are homemade.

Ann t ...I can just taste your Peameal sandwich, just might be what we have for lunch today....going to friends for 4th of July dinner...hoo rah I don't have to cook.

Love pictures of buns/breads on the rise.

Shirl, I hope you can find real peameal bacon in your area. I know that Canadian back bacon, sometimes rolled in cornmeal is easy to find in the US, but Peameal bacon isn't common.

Ann t.......Our Peameal Bacon and Canadian Bacon are our home cure. I got interested in curing and smoking the pork loins from a post last summer from annie 1992. Quite a lengthy thread it was. I really doubt that "our Peameal Bacon" is anything close to yours in Canada. We tried tho and are pleased. The canadian bacon and peameal verison reminded me of the pork my grandparents cured way back when I was a kid about a hundred years ago.

I have thought if I could find on the internet I would order, have never pursued that yet. Any suggestions?

I too droll over all the posted pics of all breads baked and unbaked.

They sure look good. Is that a Chicago style hot dog?

My son makes his own rolls, too. I've tried but they never come out as good as yours look.

I was late to the store yesterday so I had to settle for "regular" hot dog rolls. Fortunately good hot dogs can overcome even those rolls and these were great hot dogs.

How about these rolls. New England style, too - sliced on top.

Shirl, I can just imagine how much better homemade peameal bacon is.

Mom, how cute are those buns.

Moe's hot dog is just your typical hot dog. He likes his topped with hot dog relish, mustard, onions and pickle. He probably wouldn't care if the tomato was there or not. But since I only like tomato and onion and mix them together he also ends up with chopped tomato. I use European wieners which I prefer over regular wieners.

TeresaNC, 450 for 15-18 minutes or until they are a little charred.

Of late, there seems to be a lot of specialty wieners so I'm into hot dogs for a quick lunch or dinner. The homemade buns is my next venture.

We get our hot dogs from the milkman, now

South Mountain Creamery makes their own products and they are really good, and they are made from good stuff. No wood pulp in them.

I like the Beautiful Buns recipe from King Arthur, too. Searched for bun recipes and tried several. After using the Beautiful Buns recipe, I quit looking. Quick & easy...using the bread machine to mix & first rise. The guys love them--so, so much better than store bought.

Ann and Annie -- thanks for the additional info re: kaisers. Found the sesame seeds at a reasonable price in the bulk food section, but I will also remember the salt/pepper combo, Ann. That would be really good now that you mention it.

Off to check out the additional recipes shared.
