Great Marinade for Chicken Fajitas and...

I had never found a marinade I liked for chicken fajitas, until now. We really like this one alot, and it so versatile, I even used it for marinating my chicken for fettucine alfredo. I know it is hard to imagine it being good for fajitas AND fettucine alfredo, but we enjoyed it on both. Actually it was a recipe we found in a health food book for a marinade for shrimp fajitas. So, I wanted to share, since it is rare I have anything worthy to post.

Baja Orange Marinade

1/4 c. fresh lime juice

1/4 c. fresh orange juice (we used frozen)

1 T. olive oil

4 minced garlic cloves

1 t. ground chipotle pepper (we used 1 pepper from canned chipotle in adobo sauce, chopped fine)

2 T. minced fresh cilantro

Mix and marinate for at least 1 hour.

Would this marinade work for carne asada too?
I know that someone here or on GB posted a recipe for carne asada and darned if I can find it this morning. I think that I read it on Sat or Sunday.

Here is a Korean marinade that I use. Not as much oil as Nancy's, but because there is sugar, watch that it doesn't burn (ask me how I know....) Barbecues & Grilling - Bulgogi Marinade By Derrick Riches, About.com This is the traditional marinade recipe for Korean Bulgogi1, which is a marinated steak cut into strips and served up on lettuce leaves or rice. This is also a great marinade for most cuts of beef. Prep Time: 20 minutes Ingredients: 1/2 cup soy sauce 1/3 cup sugar 3 tablespoons sake (or rice wine or sherry) 2 tablespoons sesame oil 8 cloves garlic, minced 4 scallions (green onions), minced 2 tablespoons toasted sesame seeds 1/2 teaspoon black pepper Preparation: Combine all ingredients in a bowl and mix until the sugar has dissolved. Slightly heating the marinade may help it mix better. Note: To toast sesame seeds place them in a hot saute pan and gently toss until they start to brown. This takes just a few seconds. Pour off into a bowl. This marinade is used to make Bulgogi or Korean Sesame Beef. It can be served with a spicy dipping sauce. For chicken and salmon, Sunset magazine's Lime Chipotle sauce. A favorite here on the forum, and you can can it! This is also good just as a chip and dip side dish, but beware it goes fast. Lime-Chipotle Sauce 1/2 cup chopped fresh cilantro 1/2 cup lime juice 1/2 cup honey 2 tablespoons minced canned chipotle chilies in adobado sauce 3 tablespoons brown mustard 1 1/2 tablespoons minced garlic 1 teaspoon ground cumin 1/2 teaspoon ground allspice Season with salt and pepper. Serve sauce with grilled meats, poultry, and fish. Makes 1 1/2 cups. NOTE: IÂm afraid of the heat so I use 1 Tbsp of the chilies. I freeze the rest of the can in a ziplock and and chop off frozen pieces as needed for other recipes. I also double this recipe and can it in a BWB in Â½ pint jars for 15 minutes.

I'll admit to making my own salad dressing, because I don't actually like most of the bottled ones (exception being Trader Joe's champagne pear vinaigrette, which I keep for grab and goes), but I buy a lot of jarred sauces, condiments and the like. I don't have the space to store whole canning runs of different flavors of things, nor the desire to do them. I will whip up something from scratch if I have a specific flavor in mind, but just for goop for roasting it's not really worth my bother. I get much more variety, plus ease of use, buying high quality bottles. But part of that is having a great variety of very high quality, chemical free, sauces available to me. Many of our members live where such riches aren't available, or their food budgets don't allow. My guilty pleasure is Trader Joe's enchilada sauce. I make perfectly good enchilada sauce, but TJ's tastes right, is the right amount for one tray of enchiladas (though it's a standard bottle--just a good match with my dish), and is so amazingly convenient. I always have tortillas and some kind of cheese, and with the bottled sauce, random, mismatched leftovers can become a quick, delicious dinner. Please don't be put off into thinking you have to make your own, just because you can. If you want to, do it! But if you're going camping, factory sealed bottles are much easier to pack. Just be careful with changes of altitude. If you're going over mountains, you might want to loosen the tops (losing that sealed advantage), so the pressure change doesn't do something bad.

This one has the marinade and the recipe for the shrimp. Spicy Buffalo Grilled Shrimp Can be made into kabobs also 3Tbs Hooters wing sauce (hot) 1Tbs Vinegar white 1Tbs Frenchs mustard 1tsp jar type minced Garlic 1 sprig finely chopped fresh parsley 1Tbs wishbone carb options olive oil vinaigrette dressing A sprinkle of lemon pepper (to taste) 1lb fresh peeled and deviened shrimp (nice big ones) 1carton fresh mushrooms cleaned *Optional ingredients if making kabobs Chunks of zucchini, onion, yellow squash, small whole tomatoes (cherry) Or veggies of your choice. Mix the first 7 ingredients in a big zip lock bag. Mix it up well. Add the shrimp and coat well in the bag. Put in fridge for 1/2 hour. Then add mushrooms and other veggies to the bag and mix up well. Put in fridge for additional 15 mins or so. If doing kabobs skewer ingredients out of the bag If grilling only shrimp and mushrooms put in grilling basket or some type of grilling pan. Put on grill and baste occasionally with remaining marinade. Cook until shrimp are pink and done and veggies are tender. About 20-25 minutes depending on size of shrimp. If doing kabobs turn during cooking. Basket cooking stir or shake during cooking. This can be done in a large wok style no stick pan on the stovetop also if grilling is not an option. Just saute and cook till shrimp are done and veggies are tender. Or put the kabobs on a broiler pan in the oven set at 350 turning during cooking till done. Serve over a plate of fresh baby spinach leaves with a sprinkle of blue cheese crumbles. (If desired) Serves about 4 or 2 real hungry Cajuns!

Too late for you now, but I do a kabob using beef tenderloin. You could use the same seasoning for the sirloin tips. I'm not a fan of teriyaki or soy sauce marinades either. Home Cookin Chapter: Recipes From Thibeault's Table Beef Tenderloin - Kabobs ======================== This is a recipe I have been using for over 30 years. From a Detroit Newspaper 1980. 2 pounds beef tenderloin, cut into Cubes (from 1 inch to 2 inches) 2 - 3 cloves of garlic minced 1 large shallot, chopped 2 tablespoons fresh thyme Chopped/ and/or Rosemary 2 tablespoons fresh parsley Chopped 1 cup red wine 1/2 cup olive oil Salt Black Pepper - Coarsely Ground 2 Green Peppers cut into squares 2 large white onions- cut into 1/4's (option: Large Cherry Tomatoes) . Cut beef tenderloin in to nice size cubes. Mix together all of the other ingredients and marinate the beef for about 4 to 6 hours. Par Boil onions and green peppers for less than one minute. Drain and cool in icewater. REmove meat from Marinade and thread onto metal or wooden skewers, placing a piece of green pepper and onion inbetween each piece of meat. Grill on high heat. Turn a few times. Tenderloin should be served rare to medium rare so these do not take long to cook, depending on your grill.

Okay, I found it on Garden Buddies, it's from Jain/Blue Moon

Here ya go...
carne asada- take 2 lemons or limes and orange or tangerine, s&p, olive oil, cilantro, chili powder or tabasco and marinate meat for 4 hours. grill one minute on each side and then serve with flour tortilla, cheese, onions guac, beans etc, super delish and easy!

I'm not sure if I'm doing it tonight or tomorrow--I also have some veal rib chops from Costco that are calling to me.

Brenda - this does sound really good. I've never found a mariade I like for fajitas either. I've got ground chipotle powder from Penzey's too. I think I'll put this on the menu for later this week.

I've been using a similar marinade for fajitas for a long time. Usually I make enough to marinade the peppers and onions too. It works surprisingly well on beef and shrimp also. Only difference is I add a bit of cummin.

And here I thought I made it up, lol.

Ellen, Jain's recipe is so very similar, except for the garlic and S&P, I am sure it would be great on your veal chops.

Augie, I'll try marinating the peppers and onions in it next time, too.

Pat, let me know how it works with the ground chipotle powder. I think I can get that at Central Market in their bulk spices.

Goya makes a Mojo Criollo that is very similar to that recipe. An Argentine friend at work gave me a bottle of it because I had been sharing my lunches with her. It doesn't have the chili, however, but that is easy to add.

Brenda, tonight's carne asada was delish! The skirt steak marinated over night, and the flavor and quick grill were excellent. I'll definitely make this again, at DH's request maybe I'll use chicken this time!

I tried the marinade on chicken for fajitas today.

DH didn't like it, DD loved it, and I didn't mind it. I prefer my fajitas a little bit spicier. I used an extra 1/2 tsp of chipotle powder. Actually it's Chipotle Mango. It was really spicy when I tasted it with my finger, but it wasn't spicy enough when it was all cooked.

I think the reason DH didn't like it is because he doesn't like chicken with lemon... or lime.. and you really taste the lime.

I think cumin would be good if it was added. It would give it a nice smoky flavour.
