William Sonoma Ice Cream Machine

Looking for the instruction book to the William Sonoma ice cream maker, model #WS994 made in Italy. Will be happy to pay for the copying and mailing. Want to make the peach ice cream. Thanks a lot.

I've had wonderful luck finding instruction booklets by doing a search of ebay. Maybe that will help you as well? Also, contacting W-S directly (even though the model was made in Italy) may help.

If you can describe the buttons etc or even post a photo, I'm sure we can all put our heads together and give you some direction for making ice cream in this ice cream maker.

Just so you know you weren't being ignored, yesterday I spent some time trying to locate documentation online yesterday. No luck. Wanted to leave the post up top in case someone has it. Sooz probably gave the best advice.

While googling, I came across your other post here where you mentioned that the peach ice cream discussion is what's motivating you. So I just want to point out that the recent ice cream frenzy is for a recipe made with either a blender or food processor, no ice cream machine needed.

I just picked up one of these machines at a garage sale... I couldn't pass up the deal. there is no manual but it did have the box which has instructions on the outside: 1. Gelato, ice cream, frozen yogurt, sorbet, are ready in just 20 minutes 2. Press freezer button 3. Add ingredients. 4. Press start 5. Set timer (blending time - 20 minutes) 6. Automatically stops when ready 5. Stays chilled until ready to serve When I plugged mine in, a fan started up - when I pressed the snowflake key - it started to cool and when I pressed the whirly thing key - the blade went around after I advanced the timer. I think the timer needs to be on for everything to get going. I don't know but for $5.00 I am willing to try for my version of Cherry Garcia FroYo

My 2 favorite ice cream scoops are Tupperware and Oneida. They still work perfectly, but I never put good ice cream scoops in the dishwasher--they always get handwashed. For portion scoops, I lucked out one day and the discount store near me had professional quality Rubbermaid ones for .99 each. I picked up all three sizes they had-- Size 60 is a good size for cookies Size 24 is perfect for muffins and Size 6 is about right for a healthy serving of mashed potatoes They're really good quality and have held up beautifully for many, many years--and those DO go into the dishwasher.

I just wanted to update in case anyone is interested in this ice cream maker. I've made 3 types of frozen desserts...non custard vanilla ice cream, strawberry sherbet, and a custard based lemon ice cream. Each one of them turned out phenomenal due to the high quality recipes and ingredients. I'm not sure that if I made this with a freezer bowl type of ice cream maker if my end results would be much different but the convenience of having a let's make ice cream now ability is really nice. I think that having a compressor maintains an ideal temperature is nice as well. I feel that there is a need to use a very cold base even with the compressor as it reduces the churning time as well as lowers the temperature inside of the appliance. The paddle does get a little but iffy once the ice cream has substantially thickened to soft serve consistency. All 3 times I had to stop the machine prior to the automatic setting sounding for fear the paddle would break or the motor would burn out. However, once the machine starts to struggle, the ice cream has always been ready to go into the freezer. It's always a soft serve consistency, never soupy. After being in the freezer the ice cream is hard serve consistency. I enjoy ice cream both was so no issue there. On a a whim my DD asked me to add Skittles to the sherbet which I did out of curiosity (definitely not out of need) and the mixer nicely distributed the candy pieces. It's heavy but I can move it back and forth easily. It's quite large but can be stored. Based on what I've watched online, it seems to be a lot quieter than other ice cream makers. Is this machine necessary to make ice cream...most likely not it it's really nice to have.

You have a knife that you love. Give it a wooden cutting board big enough to be easy to work on, a steel or sharpener to keep its edge, and a nice block or magnetic strip to store it in/on. Then keep cooking and check your spreadsheet as you feel the need of something here or there. You have a minimalist heart, so I would avoid something big, expensive, and only intermittently useful like a food processor. I've cooked for forty years without one, happily. Likewise, a Vitamix is overkill unless you often make drinks or smoothies that require finely crushing ice cubes. But you'll take my immersion blender from my cold, dead fingers! If it has a whisk and chopping attachment, it can: whip egg whites, make whipped cream, make hummus, nut butters, pesto, chopped liver, and puree soups. SO much easier to get out, use, clean, and store than a stand blender! Things I use a lot from W-S that have lasted well and been well worth the $: the set of three mesh footed colanders with handles, waffle-weave white towels for drying (15 years and still going!), an OXO digital scale (not discounted anywhere, so might as well get it from W-S), and a 3-qt All-Clad saucepan with the handled steamer insert (which turns out to be perfect for making couscous the traditional way as well as steaming veg). A big silicon spoonula is about my favorite utensil -- much more heat resistant than rubber spatulas, cuts way down on cleaning needed for bowls and pots, cuts way down on waste when transferring from one vessel to another. Big-ticket items that are super versatile: Dutch oven, wide shallow two-handled braiser (which can be used, lidless, to roast and bake, in addition to one-pot prep of things like short ribs and braised chicken w/veg). This is a nice braiser: http://www.williams-sonoma.com/products/all-clad-tri-ply-stainless-steel-braiser-with-rack/ that will be easier to handle than an enameled cast iron one, but those have the advantage of being attractive enough to use for serving. I spent some time also looking online to no avail. When I saw that you had responses on this thread I was hoping someone had an answer for you. What about the GW appliance forum? Maybe you could post your question there also.

As I remember, that machine is an automatic machine which has a built-in compressor. There is no need for putting a bucket in the freezer for many hours.

If that's the case, there is not much need for an instruction book. Get a recipe, fill the machine, set the timer and you can enjoy ice cream in less than an hour.

The site below doesn't have your ice cream maker listed but there is a Link on the page that implies that they will help you find it... Or maybe one of the manuals ( PDF format ) they have listed ( complete with pictures ) is similar enough to be of some help...

HAve the manual. Cant attach a pdf. Write back if u are still interested. Key technique is use of salt water brine in the fixed bowl --- speeds process and saves the motor a little bit
